I'm sure plenty of you have thought of this before, but it was a light bulb moment for me last night, and thought I'd share for anyone else who hasn't already though of it.
When our kids say something that we don't want to forget, just jot it down on a PL card and date it. Then slip it in a page protector designated just for cute things they say.
I know my kids say cute things all the time, but I don't always want to make a whole layout for each sentence, ya know? This way, cute thing remembered, and less "work" for me.

I really wish I had done something. Anything. My kids were hilarious (still are) and I was positive that I would always remember what they said. They're 18 and 13 now and unfortunately, I don't remember very much.

We tried something like that when our kids were younger. The problem was, when we went to look at all the notes, most of them didn't make sense without the whole context or without that inside joke that had long since been forgotten. Or they weren't funny without the vocal inflections or the facial expressions. Some of the stories were keepers, but we ended up throwing most of them away because they just didn't mean anything anymore.

I keep little notebooks all over my house and car for writing cute stuff down.
Someday I'll make a page just about the weird stuff my kids say.
A favorite is "I'm as hot as a burning hot dog".

I write them down on recipe cards every six months or so, along with phonetic spellings of all of the words she mispronounces and what she really means. I throw the cards in her box of birthday scrapping stuff so if I have extra photos I'd like to scrap at some point those quotes can be paired with any random leftover photos.

I use the notepad on my phone, FB posts and texts to grandparents to document what my DD has said over the years. A couple of times a year, I sit down and update an ongoing Word document so I have everything in the same place. I love reading back through the list! I giggle every time. It really doesn't take long to jot down the story. I do it in carpool line or standing in the checkout line, etc.
I always advise new parents to do something like this with their kids, because I know I treasure mine so much.
