Next week, 3 of the 4 nights we have either soccer practice or open house at the school which means very little time to get dinner around. I'm thinking I'll give my crockpot a try again. I don't cook a ton with it because I don't always care for the way it cooks. So please share your favorite crockpot recipe! Thank you ladies!!

I just made that Mississippi Roast (google it or find the recipe on Pinterest). It was really yummy, and my DH liked it also. It was pretty salty since it uses a pack of ranch dressing and a pack of aus jus so you might want to adjust that a bit. It also calls for a stick of butter which I cut in half. I served it over mashed potatoes. Not very diet friendly, but ya gotta do what ya gotta do sometimes.

I don't like the way things cook in my crockpot, chicken especially, it seems chewy. But I keep looking for recipes that I can try so I can expand my crockpot meals.
Right now I feel like I am stuck in a "chili, pot roast, crockpot stuffing for occasions" mode.
And my husband is not a fan of pulled pork.

I have a little better luck with frozen chicken breasts, but it's really easy to overcook them. Thighs are a lot more forgiving. I have two recipes for taco chicken. Both are good. Leftovers make great chicken nachos. Crockpot taco chicken #16 boneless skinless chicken thighs 2 cans Rotel tomatoes 1 package taco seasoning mix Cook on low 7-9 hours. Serve with corn tortillas, shredded cheese, or whatever you like with your tacos. Crockpot taco chicken #2Big package of frozen boneless skinless chicken breasts (not thawed) 1 package taco seasoning mix 1 can tomato sauce (soup can size) Cook on high for 5 hours. Stir with cooking. Serve with flour or corn tortillas.

I also don't have a lot of luck with the crock pot, I use it now and then on the weekends, but I'm gone longer than 9 hours during the week and have zero prep time on those mornings anyway. We find most things come out blah, or everthing tastes the same. My guys won't eat chili or pulled pork. Usually I will make a soup or meatballs and use the crockpot to keep them warm during a party or something. One recipe I do make, isn't even a crock pot recipe, and it's quite a bit of prep, but everyone will eat it! I up the carrots because my guys will eat those in this soup. www.foodnetwork.com/recipes/aida-mollenkamp/beef-stew-in-biscuit-bowls-recipe.htmlAfter all the prep and it comes to a boil in the dutch oven, I transfer this to the crock pot and let it cook on low 4-6 hours until the meat is very very tender. Then I pull out a little liquid and mix with corn starch and pour back in to thicken it a little. and I just throw biscuits in the oven separately, not on top. I would recommend adjusting the cayenne, because a little goes a long way and if you have folks that don't like spicy, even the 3/4 tsp is too much. You probably don't need it at all, or maybe just a pinch, but don't skimp on the regular S&P with the flour. It's great on football Sundays!

I use my crockpot a lot once school is back in session. I have this site pinned on Pinterest and have tried quite a few of the recipes. My whole family loves the loaded potato soup. I use her trick of using a bag of frozen cube-style hash browns instead of taking the time to chop up the potatoes myself. Super simple! One can of golden mushroom soup, one can of french onion soup and one pound of stew beef. Cook on low all day and serve over egg noodles or mashed potatoes. Hardly any prep time at all and my whole family likes it. I double the recipe for our family of 5. I love having a meal all ready to eat when I get home from work. Makes my evening less stressful!

My family loves Burning Feather's Italian Beef. We eat it on torta rolls from Costco with cheese on top. 1 envelope dry onion soup mix 1 tsp. oregano 1 tsp. red pepper flakes 1 tsp. basil 1 tsp. dried parsley 1 large garlic clove, smashed 3/4 cup water 3-lb. rump or chuck roast Combine spices and water and pour over roast in crockpot. Cook on high all day or until meat is tender. Shred meat and let simmer for another 10-15 minutes, then serve on soft Italian rolls. ETA I cook it on low all day, not on high. Also when you shred the beef, pick out any visible pieces of fat or gristle. You can cut down or leave out the crushed red pepper if your kids won't like it. I also like this beef stew recipe and this pot roast from Martha Stewart.
I guess I mostly use the crockpot for big chunks of BEEF.

A definite must try - as weird as the ingredients sound - you will not be disappointed! Cafe Rio is a restaurant chain and we now have a few of them in Arizona realmomkitchen.com/8356/cafe-rio-chicken/We use this chicken for soft tacos or burritos. Its delicious and will smell delicious cooking!

Marking my spot. I'm always on the hunt for recipes. I usually cook pot roast.
3lb roast trim the fat
1 can diced tomatoes. You can use the flavored ones as well.
1 packet of onion soup mix
Cook for about 7 1/2 hours on low
I also cook beef ribs
Place ribs in crockpot and pour your fav BBQ sauce on top. Cook on low for about 6 1/2 hours. I like to cook just when the meet starts to pull away. I don't like it cooked too much. The meat falls off the bone.

Burning Feather's Italian Beef is also a favorite in my family. Another slow cooker recipe I love is Ham Bone Soup, which I make every January with the bone from the New Year's Day ham. Here's the recipe:
Crock Pot Ham Bone soup
1 ham bone with some meat 1 onion, diced 1 can peeled and diced tomatoes with juice 1 can kidney beans, drained and rinsed 3 potatoes, cubed 1 green bell pepper, seeded and cubed 3 cups chicken stock 3 cups chicken broth
Any other vegetables you'd like, frozen green beans, cut up celery and carrots, finely chopped kale - the sky is the limit.
Combine in Crock Pot, set it on Low and let it simmer for 8 hours or so. Remove bones and shred the ham; serve with whatever you like salad and bread-wise. Delicious!
