It's going to be super hot, again. That means I'm super not going to use the stove. I'll make stew in the instant pot. Dh picked fresh zucchini and summer squash from the garden and I must use it.
I need to try some new recipes this week, but not until this heatwave subsides.

Tonight I am having the leftovers of last night's curry. I would normally be going to my SnB group, but my knee is bothering me, and my tummy is not liking the anti-inflammatory drugs I am taking to help with that, so I am going to have a quiet night in and go to bed early.

I feel like a broken record with our recent Sunday meals but once again it's grilled steak (tips for dd and me and filet for dh) along with foil packets of green beans and potatoes. I'm also tossing together broccoli slaw as it was on sale this morning and I love it with the bottled Marie's coleslaw dressing. I add craisins and walnuts to the mix and call it done.

scrapmaven what kind of stew do you make using the squashes? Also I'm a bit jealous of your heat. It was 52 when I got up this morning. I'm sitting outside in the sun with a hoodie, long jeans, socks and sneakers on! I hoped for one more visit to the beach this summer 😕 sueg I hope your knee and your tummy feel better. I've been meaning to ask if anyone has heard from Trixie Bender or The Birdhouse Lady? I messaged Trixie a few weeks ago and she did respond but I had hoped she'd be back. And I'm worried about Kaitlin.

This evening we are having a family dinner at the in-laws. It's a multi-birthday dinner for MIL, BIL, and me. We have 3 birthdays in August, so we do one big celebration. My MIL is a very good cook, so I know dinner will be great. Pretty sure a fresh peach pie will be served. It's a favorite for me and my BIL.
I've been cleaning out the fridge and getting fruit/veggies cut up this morning. I know I'm tutoring the next 2 week nights, so DH will be fending. He can do it!

We're having short ribs a la Costco. Just boil or microwave the bag, cut open and plop on the plates! It's going to be over 100 for the next decade week at least. UGH!

I'm envious of those of you with warm weather. It is unseasonably cool here and has been for the last several days. I love the hot weather. 73 degrees does not say "summer" to me! Dh and I are transitioning to being empty nesters again (lol, ds will be home on Thursday for the labor day weekend). Tonight we are going with premade Italian sausage, onions, and peppers along with potatoes O'Brien. I will probably just heat it up in one pan.

As I mentioned yesterday, we'll be having leftover Greek food... pastitsio, moussaka, green beans, potatoes, and rice. Maybe there'll be room for a little dish of ice cream afterwards.

If DH changes out the propane tank I will grill Italian sausages and the usual vegetables. We are also facing another heat wave this week and I'm planning to feed my crew a lot of salads and sandwiches.

I think I will make strip loin steaks and fresh corn. We will have salad, tomatoes and broccoli/green beans as we have both. Sunday is a steak day for us. I am looking forward to it!

He is having salmon tonight and I am having steak. Ds I don't know about yet as he wasn't sure if he'd be home or not. Probably not though.

We have hit over 70 both days Yesterday hit 78 and today is 74 already. Trust me, that is a heatwave for us here lol. Makes me not want to cook. Like at all, but we've gotta eat. I have ground beef out and was planning tacos, but that's family dinner tomorrow so I have to figure something else out. I'm off to check out Pinterest to give me an idea!

I love roasted chicken/veggies so I have that a lot. I use bone in chicken pieces and whatever veggies I either a) have on hand or b) caught my eye at the market. I found a great rub to use at Trader Joes ( they do sell it on amazon, at a much higher price) www.traderjoes.com/digin/post/bbq-seasoning-with-coffee-garlicrubbed that on the chicken, and tossed some roasted potatoes, sweet potatoes and a carrot and onion with a little olive oil and some of the rub.
