Has anybody tried an ice cream bar? Will the ice cream melt? It is indoors but I doubt they have any coolers at the venue. Do you think huge ice buckets with rock salt in it might do the trick? I was looking at renting a soft serve machine instead but they don't have those in my area so I would have to pay a lot for delivery and set up ... I am trying to avoid that. Any suggestions? Thanks in advance.

In the circumstances you describe, I wouldn't do it. I would be worried about a soupy mess to clean up!

We have done it for work parties. Keeping the ice cream on ice in a cooler until ready for use, then putting it in a bowl of ice on the table. This is for about 50 people. Grandparents's Day at school just set the large plastic containers of ice cream on the tables and they were fine for 30-45 minutes.

My brother and sister-in-law had one for their wedding, they used clear plastic under bed totes, and filled it with ice and rock salt. They also had someone designated to be at the ice cream bar while it was out, and that person made sure that the ice cream was always in ice in the cooler, and also switched around the containers when they were getting empty. It worked really well for them, they had it out for about 3 hours.

Dry ice also keeps ice cream cold. Have you thought about cups of ice cream? They are in the freezer section and they are individual cups of ice cream and include a little wooden spoon. You could do those and toppings too.

Thank you very much! I was thinking of getting those little cups of ice cream but my husband is not fond of the idea ... lol! It will be for 125 people and the venue is ours for only 3 hours. It will be a surprise for my daugther so the ice cream will be out only for the last hour.

We have done ice cream bars at work (lots of people) - we get those BIG buckets of ice cream (like at Walmart and Sam's Club) and they are frozen really hard - we just them out about 5 minutes before we start (to soften up a little) - since they are frozen so hard, they generally don't melt fast - usually it is all gone before it starts getting too melty - we don't use extra ice or anything

We do one every year for out theatre kick off. It will be fine for an hour. We use gallon pails, a good cooler to keep the ice cream frozen, then pull it out about 15 minutes before serving. It will be melty by the end, but we just toss it. I don't want the ice cream to come home with me!
We stick to vanilla, chocolate, and strawberry. Vanilla is by far the most popular. We have a huge variety of toppings from fruit to chocolate to sprinkles. We buy the cans of whipped cream at Costco and they go FAST--buy plenty if people are serving themselves. Look at the servings per can and divide by 3 or 4--people (at least teens) go nuts with it.
