I'm guessing it'll be a leftover night for dh. He is the only one home tonight. I'm going to have to get used to cooking for 1 or 2. That's going to be weird and my picky eater is at home. It's an adjustment. I'll probably halve a lot of recipes.

I'm volunteering at the animal rescue place this afternoon ... kitties I'll hit the store following that but I got pretty much everything I needed for chicken enchiladas yesterday ... so that is the plan tonight with my version of Spanish rice ... Picky#1's boyfriend ate dinner here last night (French toast and bacon) ... I mentioned that I had not cooked the enchiladas because I didn't think they liked Mexican food ... he says "I like Mexican food!" If he comes over tonight at least he will eat with dh and me I'll have to figure something else out for the dd's

Tonight I had the leftover stroganoff from last night. It was even better second time around!
I have just finished filling out my question form for the Anaesthetist at the hospital, all in German. Thank you google translate! I have my appointment with them in the morning, then everything should be set for my surgery in 2 weeks. Now it is just the personal stuff - what clothes, toiletries, meds etc do I need to take. I will need different things for the hospital and the rehab clinic, so I might pack 2 bags, and have DH switch them out as needed.

I think it will be chicken something. Sounds a bit mysterious. I want chicken, broccoli, rice and soy sauce. Almost a stir fry, but not really. I don't think daughter will go for it. Maybe I can make her mac and cheese to go with her chicken and broccoli.

I have a whole chicken that needs to be cooked today. I wont be home at dinner time so I think I am going to cook it in the crockpot. I just need to pop over to Pinterest and find a recipe. Kaitlyn has started cardiac rehab and they suggested that we do "Meatless Monday". So last night I made some kind of burrito bowl thing stuffed in zucchini boats. Every bit of it was eaten! Even my oldest son who stopped by last night ate one! Of course my husband said, "This is really good but would be better with chicken!" We are here to support her in any way that we can.

Dh is grilling the packet of green beans I prepped on Sunday along with mushrooms, peppers (red, yellow and orange) and onions. He’s cooking sweet Italian sausages as well but probably not on the grill as they’d be messy!!

Our street and the surrounding streets are being *slurry-sealed* today so we have to park down the hill and carry everything up. Went to Wal-Mart and started walking up the hill and this sweet woman on a golf cart swung by and asked if we wanted a lift to our house. Did we ever! She works for the HOA and is trying to make it easier on everyone. Poor DH was carrying bags with 6 bottles of juice. We're having spaghetti tonight. So excited to have This is Us back on tonight!

We, along with my parents, are headed to the county fair tonight. I love looking at the 4H displays and animals and walking thru the arts and crafts sections. Of course, we also take a walk thru the rides area. Watching carnies is also good people watching. I'm not a fan of fair food, so I'll make some sandwiches before we go. Love the county fair! It tells me autumn is just around the corner. sueg, I'm glad you have a plan now. Wishing you the best. miominmio, take care of yourself.

It is Tuesday which means mexican food. Tonight is ground turkey burritos with refried beans, cheese, black olives, lettuce, green onion, and salsa. Dd will have most of the fixings as a salad.
Little dude is home again with the cold going around. Should be able to go back to school tomorrow. Kmfc as he has his adaptive pe field trip to the local bowling alley and PTA Reflections awards ceremony in the evening.
Last year he went to 5th District (all county) and came in 2nd. If you win first there, you go to State.

I’m looking at what y’all are making to help me decide What about honey garlic meatballs by 6 sisters stuff? Only bake for 15 min and then they cook in the sauce. We enjoy them on plain noodles, in buns/biscuits, and just alone with sides.

I had a few friends over for lunch today. I made pumpkin spice waffles, with roasted stone fruit (plums, peaches & apricots) that were also "dressed" with an ice-wine reduction. I had whipped cream (the REAL stuff), along with maple syrup (the REAL stuff) and then for dessert, I made the Sebringville Schnitz Apple pie, only with out the pastry so more like an apple crisp, served with extra old cheddar cheese. The ice-wine was from Pillittteri Estates Winery, a former client of mine. I served this with a Dry Riesling from Pillitteri. www.pillitteri.com/There is a small group of us, 6, and prefer to have luncheons rather than dinners. We rotate homes and use a lot of recipes from the LCBO magazine, Food & Drink. They have a recipe for a Rosemary Parsnip Cake with Lemon Cream Cheese Frosting. I will be making this one tomorrow. Tonight is a fend for me night, probably re-heated waffles and of course, a glass of Riesling.

I love making my mom's version. She calls it one of her depression era recipes - referring to that time in the 70's when they were broke as hell and she had to feed everyone off of whatever she had in the pantry. My brother, sister and I all still make and love her version of this. ETA: I called it 'yellow spaghetti' growing up and my 20 and 18 year olds still call it that now.

Ok if this were me, I'd be having a scramble dog with a side of cotton candy, a candy apple and part of DD's funnel cake. With a big ol' coke. MMMMMmmm love fair food! We never go anymore (ours is just not safe anymore, the last time we went there was a shooting and 2 fights) but one day during the week that it is here they open early for people to come eat lunch and I like to go just to get my fair fix on. The tomatoes are in the oven now. I have fresh basil so that should make them really good. The house smells like balsamic vinegar and it smells really good! I will put feta on top once they are almost done. DS won't be home until well after 5:30 so I will put the chicken on then.
I bought a pound cake today. It was very fresh and well it's not surviving well. I cut two pieces of it to freeze to take away on the plane with me. The rest I am not sure.

I woke up so early this morning and then haven't been fully awake all day long. I need to shake this feeling. Dinner was excellent. There were tons of leftover foil roasted vegetables in the fridge as well so we had them in addition to the broccoli and tomatoes. OMG the food was so good! Holy cow some nights I surprise myself with how I can cook! (other nights not so much...LOL)

I had to head out of town today and had a lovely "super clamato" for a late lunch. It comes in a cup but needs to be at least partly eaten with a fork and is an amazing combination of shrimp, clam, avocado, cucumber, tajin, chile, cilantro, melon, onions and lime in clamato juice. Your luncheon sounds amazing quiltz!

sueg, how long do you have to stay in the hospital and in rehab? Do you have a tablet? It's a good friend when you're stuck in a hospital. I will be in hospital most likely for a week, then 3 weeks at the rehab clinic. I have an old iPad, but my current laptop is very thin and light, so I am considering taking it to rehab at least. I don't know what the wifi situation is at the hospital but know I will have some access at the clinic. I am also loading my phone with podcasts and my kindle with books and I have a couple of knitting projects planned as well.

Last night of the conference so it was a group dinner. They served filets with smashed potatoes and asparagus. It was medium rare so I ate the perimeter only.
That luncheon sounds amazing.
