Hey everyone! Everyone in my house had dinner plans elsewhere last night so I was own my own ... I just grazed ... it was awesome Of course, I have to cook tonight I'm probably making spaghetti in red sauce ... easy peasy I have probably posted this meme before but it is a fav and goes with my dog theme this weekend What is on your menu tonight?

Love the meme!! We’re having individual meatloaves with green beans cooked with bacon and a stuffed pumpkin using lucyg ‘s recipe she’s linked before. I can’t wait to eat! I made more pumpkin breads this morning because dh has been eating them non stop since I made them yesterday. I also roasted the seeds from the pumpkin.

We are finally experiencing a really nice cool down. I had to wear a light jacket when I walked this morning. So happy! I think DH will be having some beef stew. I'm making it in the IP right now. The steam value never shut, so I unplugged it, took the lid off and cleaned the lid really well. I noticed the ring wasn't set right. I reset the time and I'm trying again, but this time I never heard it steam up again. This happened once before and it was operator error last time. I'll check it after 25 mins. and if the stew isn't done, I'll put it in a Dutch oven on the stove top. So much for saving time. I'm not sure what I'll eat this evening. There is always fruit and cereal. ETA: despite issues with the IP, the stew was a winner. Whew!

I've been invited out for dinner, for the third night in a row. This is unusual, believe me. If I don't go out tonight (which I'd like to avoid but not sure I can get away with it) I'll make chicken soup. I made stock yesterday from my Costco chicken carcass. KelleeM, let me know how you like the stuffed pumpkin. It's such a favorite here (among the adults, anyway). I originally got the recipe from a pea, from CareyAyn, I think.

Tonight is gluten free chicken and dumplings using the chicken stock I made yesterday. I use King Arthur GF Baking Mix for the dumplings. I like to add carrots and peas with the chicken.

I do it in the Ninja pot on stovetop settings ... an hour at high temp, then maybe a couple more hours at low temp. Sometimes longer, depending on my mood. I used to do it in the regular crockpot on low for 24 hours. My STBX BIL (aka Sheldon Cooper) only cooks his for an hour or less, and insists I'm doing it wrong. His comes out all golden and pretty, but it doesn't have the deeper flavor you get from long simmering. There's a reason why he's STBX. Actually, lots of reasons.

We are having grilled pork chops, broccoli, salad, and applesauce. I bought stuff for a lemon pound cake that gets grilled (after it cools and you slice it) and then served with grilled peaches and some cream. We'll see. Dh and I are going for our first fall bike ride so I am not sure we'll get back in time to make the cake.

I read all the old threads I missed while I was traveling without internet and as the scribe of the tribe, I'd like to bow to all who posted their dinner plans and the small, but significant daily stories of their lives. Tribal honors, truly, to all. We could write a book, ladies...it would sell!

Our first Mewtwo raid! Everyone in our group were able to catch it, and afterwards we had sandwiches and chocolate cake to celebrate. Two of the ladies had spent the morning making food for the rest of us, and of course, from now on we will expect to be fed every time there is a raid DS was visiting a friend, DD had a sleep over with one of her friends, so we didn't have to feed them today. Yay for no cooking! (I made cupcakes, though. Have to bring 40 to DD's drama group tomorrow).

lucyg...the pumpkin was very rich and I put in too much garlic. Of course dh didn’t eat any. Dd and I liked I but I would have to modify the filling if I did it again.

DSO and I found ourselves sans children yippee! So we went out for dinner to a local restaurant. A girlfriend had taken me there for lunch for my birthday during the week and it was really nice. I had: Arancini of roast pumpkin, honey and fetta with salsa verde aioli (there were actually 5 arancini on the plate, I gobbled one before I took the photo)Chicken breast in bacon, pumpkin & fetta filling, garlic skordalia, greens & marsala cream. ( You can see DSO’s main in the background - Pork trio: slow braised pulled pork, bratwurst, pork belly, braised red cabbage and chipotle)Can you see the theme? Yes, I love pumpkin and Persian fetta! AussieMeg that meal looks amazing More moving today. The real movers come tomorrow for the furniture. Then it's just all my miscellaneous stuff. Clearly I'm a pack rat. There will be many trips to goodwill in the very near future. I ran to the grocery for ready made chicken tenders and put them on salad. I offered to get something for the crockpot tomorrow but dh said we will need to get out of the house.

You know what, I use half and half instead of full cream. I wonder if that makes a major difference. It's a very flexible recipe, so make whatever changes work for you.

They'll be going to trial soon. I think I'll just keep my mouth shut till the divorce is final. Then I'll give you all an earful. This is my out-of-state sister's DH, btw, not my sweet BIL down the street or my late DH's brother whom I'm also pretty crazy about. I have a lot of BILs.
