I'm cooking for a very stressed friend. She is currently on a very restrictive diet: no salt, no oil, all vegan.
I'm making a pot of soup with leeks, cauliflower and kale. Wondering what spices or seasonings to add. I have a few Penzey's blends here but not used to using them... but open to hearing about all flavorings you think would complement this trio.

I just planted some lemon thyme in a pot last week. Do you think that would be good, perhaps with some lemon zest and lemon juice?

I would add black pepper, rosemary and thyme. Is kosher salt out of the question?

I love rosemary in just about anything, so I'd consider adding it to the soup. When in doubt in the past, I have taken a small amount of the soup and added certain spices to it, tasting it and deciding at that point if it would ruin the pot if I added it. You might want to give that a try. I also like the idea of garlic, although not too much. And your lemon suggestions sound really good too. I would make a small cup with all of this in it and taste it to see if you like the combination first.

I would do garlic and then let the leek do most of the flavoring. I think a splash of lemon at the end would be lovely too. I like herbs in soup, but I adore leek and like it to be center stage when I use it.

I agree with perumbula to let the leeks be the prominent flavor. Maybe add just a bit of your lemon thyme on top as a bright herb-y garnish instead of cooking it out? I'd also add either a splash of lemon or red wine vinegar at the end to wake up the flavors and balance it out since you can't use salt.

Thank you everyone! I love and appreciate all of your suggestions. Thanks for taking the time! While lots of the ideas sounded good to me, I didn't have access to all of the herbs mentioned. Here's what I did. After cooking the basics of the soup I did exactly what Lexica suggested - started playing with different ingredients in a small bowl. I had used some Penzey's French Thyme in the initial cooking. Ended up adding a bit of lemon juice and some Penzey's Sunny Paris seasoning (has thyme, purple shallot, dill, basil and a few other ingredients) along with black pepper. It tastes OK. My friend is used to eating salt-free and she'll prob. like it. I want to add cream and lots of salt!!

I'd put a healthy sprinkle of red/cayenne pepper in there to give it a little heat - if you can't lift the taste with salt, lift it with peppery yumminess!!!
