Hey plant friendly Peas!
Sorry for not starting a post the last 2 weeks. I caught a nasty lower respiratory tract infection just about 2 weeks ago that has knocked me flat. Horrible horrible cough, wheezing. I finally went to the urgent care and have pretty bad bronchitis. Steroids, antibiotics, and an inhaler, ugh. Everyone in the family has similar symptoms, but I'm the only one not getting better and had it the worse. Now I've pulled some muscles in my chest (between my ribs) and just in pain. Need to cough to get the crap out, but in pain at the same time. Needless to say, my eating hasn't been great the past 2 weeks as I just didn't have much excitement to be in the kitchen. Hoping the meds kick in quickly so I can get back to it.
What's everyone been cooking? Anything interesting to share?

I have a good update. I went WFPB cold turkey in May. I’m now completely off the anti inflammatory I’ve been taking for more than 8 years for my arthritis, and I’ve lowered my dose of Zantac for GERD by half. I feel SO much better! I’ve tried to go off the anti inflammatory twice before and couldnt because of joint pain.
For the most part, it’s very easy for me to eat this way because I feel so great. If I could just give up my little bit of daily dark chocolate, I’d probably reduce the GERD to zero, but it’s my one vice, LOL.
Dazeepetals, sorry you’ve been so sick. Wish I could send you a little vegetable soup!

The majority of the meals for the band are meat-based and rarely have vegan options. We did a chili cook off a while ago and I offered to make a vegan chili because I knew at least three band members are vegetarian/vegan and at least one doesn't eat pork or beef. I took a cactus chili recipe and left out the beef and added carrots and yellow peppers. It was a hit. I made it again yesterday to give others an option besides the BBQ pulled pork and chicken that was served. I ran out. One of the vegetarians gave me a hug when she saw it. When only 4-6 members don't eat meat out of 130 kids, they get overlooked sometimes.

A co-worker and I have been eating lunch together several times recently. She watched me unpack my glass containers and assemble my lunch. The first day she asked if I was on a diet. No, this is just the food I like to eat. The second day, she asked questions about what I had made and can she have the recipe? The third day, she asked for websites and cookbook recommendations. She said her kids will probably not get on board with this: I told her to not announce it's veg but just serve and see what the reaction is. Gave her a dozen basic ideas for meals and she kept saying she hadn't thought of that. It turns out her kids loved the black bean chili and nobody noticed there was no meat. Victory! Also, lesserknownpea had posted pics of herself and her daughter after changing over to WFPB and the difference was amazing! Congratulations, ladies!

No, this is just the food I like to eat. I love this sentence. I tell people this all the time - they ask about my lunches, ask if I'm on a diet, I say, nope this is the food that makes me feel good/I like my food/for me food is love and I love me. Then, they blink, look at their own substandard food (chips, nitrate meat slice, white pasty bread) and get a whole new view of it. Like, really look at it for what it is. Fake food. I'm putting my menu together this week and am also making a chili. Seems to be the weather for it!

Oh that’s cactus chili sounds amainzg! So nice of you to make it for the few band members.
I’m not doing too well and need to get back on it. Two parties this weekend threw me off. Plus Halloween candy, ugh!! I need to find out if there are any vegan chocolate candies out there.
Going to try and take it one day at a time and meal prep. It’s so much easier when I already have rice and tofu and beans ready to go.
Anyone have a new recipe they tried out and liked?

We stayed at a hotel this weekend, in a tiny village (barely) deep into a Norwegian fjord. We were a bit sceptical as to wether we would find something to eat or not on the menu. So, we gave them some notice and they promised that the chefs would make vegan food for us. The food was AMAZING!
A pasta dish with sauteed vegetables and herbed oil the first day. And roasted zucchini and aubergine with caramilized onions and gnocci the second. We had chocolate ice cream with a hint of chili, and a almond pudding for dessert.

Dazeepetals, I'm so very sorry you've been feeling so ill. Anytime you need me to take over posting the thread just send my a PM, okay. I'm happy to share duties with you. I've had bronchitis before and it is awful, but to have a pulled muscle on top of it so that it hurts every time you cough must be agony. There is a hot drink my German grandmother used to make me when I was sick. You take one lemon and squeeze the juice out into a mug. Then add boiling hot water and some honey (even though that's not vegan it's okay I think once in awhile when you are sick). It's so soothing and really makes your throat and chest feel better. I hope you feel better very soon. Sending you healing thoughts and big hugs.
I haven't been cooking much either since I'm still getting so many migraines. I want to get back to cooking, I buy the ingredients but then day after day I either have a migraine or I'm recovering from one which means I'm just wiped out physically the next day. A lot of it has to do with the weather changes we've been having. Yesterday it poured rain but luckily neither I or my sister had a migraine since we had tickets to a concert in Washington, DC-a 45 minute drive in normal weather. Even with the rain we made it right before Einaudi took the stage (we had 5th row seats!). It was a great concert. Today I woke up with a very bad migraine, but I took my meds and it's gone now. Guess it's time to see my doctor again.
I am so thrilled to read about all of you Peas who are adapting and loving this new lifestyle of eating!!! I guess I can be called a "fanatic" but it's all with good intentions. I want to share this with others because it works, it's cheap, it can change your medical conditions in so many positive, healthy ways, and it is the healthiest way to lose weight and keep it off. Not to mention the food is incredibly delicious. I look back at a SAD meal and the first thing I notice is how bland in color everything is. Many times it's all beige. Beige hamburger bun, beige fries. Then I can look at a whole foods plant based meal and the colors of the rainbow jump out at me.
Did I ever mention that my asthma completely disappeared once I was on the WFPB diet for awhile? I have allergies and I was diagnosed with asthma by my allergist a few years ago. They do a test on a machine where you blow into a tube and try to blow out the candles on a cake. I was tested again and it was completely different. I blew all of the candles out!
Recipes-Yeah, chili sounds great! It's the perfect time of year for it. It got so cold last night! I think I'll get the ingredients for chili this week and at least try to make that. That would be so delicious.

I need to find out if there are any vegan chocolate candies out there. I suggest the UnReal dark chocolate candies if you can find them (easy locator on website). Yum! They have peanut butter cups too, like Halloween snack sized packs and all. The dark chocolate lines are vegan (see FAQ on website) UnRealOr, Justin's dark chocolate PB cups Justin'sThe black bean chili sounds so awesome about now--is there a recipe on here for that?
