I tried a new recipe on Monday - I did leave out the sun-dried tomatoes since I already know that no one here likes them. blog.myfitnesspal.com/mediterranean-chicken-meatballs/I liked the recipe, DH said it was okay. DD17 managed to choke down two meatballs and DD11 nibbled on one and declared it inedible...about par for the course here. Probably not something that'll end up in regular rotation but I'll make it again occasionally. I served with pita pockets and a cucumber-yophurt salad - neither of which my daughters bothered with trying - and applesauce (which was apparently what they had for dinner)

one thing I've been doing that seems to be working for me is that when people share links to a recipe that looks good to me, I bookmark it and when I make my menu, I look through the bookmarks and pick one or two to try that week. If we like it, I then save the recipe to a Word doc in my cookbook folder and print out a copy for my binder, and then delete the bookmark. If we didn't like it enough to have again, I just delete the bookmark.

DD's birthday is tomorrow and she requested rice crispy treats for her birthday cake. I decided to try Smitten Kitchen's Browned Butter version of RCT's. They turned out so gooey and delicious. I have always microwaved the marshmallows but after following this recipe for stove top melting of the marshmallows, I will never microwave again. I made Garlic Tomato Basil Chicken last night ... it was really good ... dh and I gobbled it up ... it is very garlicky though so be prepared for that

If you talked about this idea in a different thread, I must have missed it- but this is a great idea! I'm on my own at home for the next couple weeks (my boyfriend just started doing over-the-road truck driving), and I need to do actual 'cooking' rather than just eating frozen dinners or frozen pizza, like I have been doing. I have a few ideas from the slow cooker thread, and hopefully I can do some meal prep and cooking over the weekend. (those Mediterranean chicken meatballs sound good, but I can never get ground chicken / turkey to not be too dry.)

I am going to make a quinoa dish this weekend. I'll post about it after we eat it. Not big fans of quinoa, and I usually eat it in soup where it is disguised. Also using yellow bell peppers in the dish, something that is also new for us around here.

I do prefer chicken to turkey myself.

They all do have differing levels of sweetness, which change the flavor profile of the dish. (what I do sometimes with different colored peppers and with onions is buy them when they're a good price, chop them up, and freeze them chopped. Unless I need them raw, like in a salad, I'm usually sauteing them to use in a recipe anyway, so it doesn't matter that they were frozen.)

Happy Cooking and hopefully, Happy Eating! Meatless? We have a stuffed pepper (green) recipe that uses quinoa. It is amazing! It has cheese on it. Dh is WFPB, so he omits in on part of the dish. I'm vegetarian for now, so the mozzarella is good to go. The quinoa mixture is my favorite...who needs the green peppers. LOL!

This sounds delicious! I am quite partial to cauliflower, though. It's nice to hear someone else say they eat the whole head of cauliflower. I always feel guilty because it seems overly indulgent. Yet, it is the only thing I am eating.

I'm the only one who likes cauliflower at my house - I'm hoping that roasting it will encourage others to eat some also...but I'll quite likely end up with most of it myself.

This is not really a recipe, but I had this dish at a restaurant and tried to re-create it at home.
This is the description from the restaurant ARTICHOKE FARFALLE Sauteed in extra virgin olive oil with garlic, sun-dried tomatoes, chopped parsley and crushed red pepper topped with romano cheese
This is how I made it at home from ingredients I had on hand. It came out pretty good actually. Cook farfalle according to directions. Heat EV Olive Oil and some butter in a skillet. Sautee a can of quartered artichokes (in water, not oil), minced garlic, roasted red peppers, red pepper flakes and a handful of pine nuts until heated through and the artichokes are starting to turn color. Toss pasta with artichoke mixture, add grated Parmesan Cheese and finely chopped parsley.
I added the Pine Nuts because when I had it at the restaurant I thought it needed a "crunch". You can adjust the heat (taste not temp) with the amount of red pepper flakes you add. And I didn't have sun-dried tomatoes or Romano, but had a jar of roasted red peppers and Parm.
It was our no meat night but I think it would be good if you wanted add some cooked chicken.

What a great idea for a thread. I'm always up for a new recipe to try. I'll contribute THIS RECIPE for pork tenderloin with a seasoned rub. I made it the other night and it was really delicious. For sides, I roasted butternut squash and made balsamic brussels sprouts. I like the way the browned butter honey garlic chicken recipe that perumbula shared sounds. I'll definitely be trying that one.

Probably would have made good leftovers but since the meat already was left over I tossed the rest. Used yellow onion because I forgot to buy red. Used a little less pepper flakes (about 1/2t instead of 3/4) Used canned corn/beans Verdict: dh: use less tomatoes and more bbq sauce next time ds16: liked it, ok to repeat ds7: the noodles with only butter were delicious, didn't even like the smell of the dish  me: relatively easy, good way to use up leftovers, a touch spicy (I did use Baby Ray's Sweet & Spicy BBQ sauce) I'll make it again sometime but not a "gotta have it" recipe.

Here is what I made earlier this week: Slow Cooker Beef Stroganoff
Someone had posted it in the dinner thread and I borrowed it.  Really good. I've always had trouble getting the meat in beef stroganoff tender enough, but doing it in the crockpot really did the trick. Now I did make a bunch of minor changes but I'm sure the recipe is fantastic with or without the changes. I used London broil (top round? I think) instead of whatever meat it called for, because that was what I had. And because I have a Ninja cooker rather than a standard crockpot, I browned the meat and veggies in the Ninja, then took them out and mixed/cooked the sauce in the Ninja, then added them back in. I added the mushrooms (already browned) toward the end of the cooking time, as suggested. Will definitely make again.

I made these last weekend and both are great. Slow Cooker Corned Beef - I used apple cider instead of apple juice because that's what I had. So good and tender and juicy. I added cabbage and new potatoes too. Great dinner and great leftover corned beef for sandwiches. Will be my new way to make it from now on. Who knew apple cider could make such a nice difference. Mexican Chocolate Snickerdoodles - these turned out quite nice. Only made about 2 dozen small cookies. The heat slowly creeps up on you. Underbaked them a bit. I dunked the last one in coffee this morning.

Wonderful! Thanks for getting the thread started freecharlie! I am in desperate need of new dinner recipes. Gonna try a couple linked in this thread. I will return with a verdict after making them. For now I will share one of our dinner favorites that doesn't take long to make. I usually skip the pan frying portion called for in the recipe. What I do is use some canola oil in the baking pan that helps to crisp up the skin as it bakes in the oven. Also, the mustard isn't an overpowering flavor for those that hate mustard. A light coating and it adds the right amount of zest. Panko Crusted Salmon
