We had a lovely dinner out last night - really delicious food and a wonderful bottle of wine.
Lunch today was beef goulash with loads of veggies, served over pasta. Dinner tonight will be something simple, like cheese on toast. I decided against heading out to knitting group tonight as it is really cold and raining heavily - we even had hail about an hour ago - and I am not yet ready to deal with that sort of weather.

My roast pork dinner last night turned out great! Dh and I will be enjoying it again today. Thank heaven dd decided to take dgd and go visit her Dad so dh have a quiet home today. I feel selfish saying this (and I’ve only ever verbalized it to dh) but I waited 54 years to have my own home and I’d really like to be able to enjoy it. Dd has until July 2019 to live with us and then she’s on her own. I’m going to make sure she’s saving a huge percentage of her paychecks when she starts receiving them this week!

I'm thinking maybe flank steak tonight. It is supposed to be colder middle of the week so I think I'll go get everything to make gumbo.

DD and I was at the stable today. Trail riding in beautiful winter weather is so much better that in pouring rain We spent a lot of time grooming, feeding, mucking out....all the horsey things you have to do.....and we didn't come home in time for me to cook dinner (oh, isn't that sad?). So eat out we did!

Yes. The tribe honors the Louisiana roots of our dear cadoodlebug . We wish to rob you of your treasured gumbo recipe as there are 2,368,725 gumbo recipes on that Pinterest site that is referenced in the meme. Mighty arrows of gratitude, should you decide to share it. If not, you can drown in the deliciousness, for all we care. Tribal scribe needs a chill pill, clearly. We are having spinach and meatball soup. It was tasty last night, although quite full of greenness. It helps to have cheese toast on the side. Thanks for the thread. Tribal honors for the meme because so many tribal members use Pinterest. And that chalk paint idea for kitchen cabinets just does.not.work when you try to sell a house...just sayin', folks.

We've been in the Phoenix area all weekend greeting our Canadian snowbird friend as they start arriving for winter.
Yesterday was a big Greek feast with souvlaki, Greek potatoes and Greek salad. I gave a little cooking class and taught everyone how to make spanakopita. We are meeting other friends for a late lunch before heading home so that will be dinner. I doubt we will make more than a Starbucks stop once we hit the road.

I could not wait to get back out on my own again. I went home at 36 with two kids in 1998. My parents were wonderful and I did everything I could to make them not regret their decision to allow us there. I know my daughter would rather be on her own. Some days I just think she’s too comfortable. Also, we’re very different people with very different parenting styles. I do my best to keep my mouth closed.

I find Pinterest completely overwhelming. I don't know what's good and what's bad and I would much rather have a tried and true recipe than trying to figure out if a recipe sounds good on my own. I want to avoid the failure. Lol.

I promise to post the recipe soon. Actually DH likes my shrimp gumbo more but since I can't eat shrimp any longer, I don't make it.

When I lived in Chicago there was a restaurant we went to that was all Louisiana style food. I seriously loved going there. I have never been to Louisiana, but I'm sure I would love the local cuisine. There is a new restaurant that opened recently by my house that is primarily sandwiches and soups. I've been waiting for a night when I am all alone and no one's planning on me for dinner to go over and try it.

Ok, now I am thinking of Jed Clampett because of "WOO DOGGIES". hehe. Tonight, I want to make a new sesame chicken and broccoli recipe, but we have many leftovers. I'll see what dh feels like eating. I'm still tired after Friday's errandpalooza, but glad that I'm able to help my mil settle into her new driving-free lifestyle. I just wish I could get her out of baking retirement. Have a relaxing and fun day.

Well, since "they" (okay, and "I") did eat me out of house and home, I have just now taken the pound of ground beef that I put in the freezer yesterday, OUT of the freezer again. I had completely forgotten the existence of my beloved chili rice recipe, or else I would have made it yesterday. Fortunately my sister reminded me when I said I couldn't think of anything to make with a pound of ground beef. cadoodlebug, did you ever eat at the Gingerbread House in Oakland before it closed down? It was amazing Louisiana cooking. I miss it so much.

There is leftover pizza in the fridge so I could have that. I don't much feel like cooking for one. I do need to make something, though.
I also need to pack as I am going to Oregon tomorrow. That, also, isn't getting done very quickly. I think I need to make a to do list maybe. I don't want to think about it just yet. I will in a few minutes. I will set a timer and then get to doing my stuff to get ready.

We had hot baked pork butt sandwiches on Hawaiian mini sub rolls with mashed potatoes, corn, and gravy..for lunch...dang it turned out good. The kids had baked beans and wieners......Everybody was happy......but there isn't much meat left for supper.....I think I will need to clean the stove top (I boiled the gravy over when I re-warmed it before the meal) and fry up some chicken gizzards. That sounds good for supper......
Happy Sunday Everybody!

Well I went to the store and got bagged salad as it's just me for dinner tonight. As I was entering the store RIGHT THERE AT THE FRONT was a display of DARK ALMOND ROCA. I love Almond Roca and I am not a candy eater. I was going to get the lighter chocolate one until I read the sign that said dark. I am sitting here contemplating life while eating this box of Almond Roca. I am not sure that life gets better than this. It is so good!

Not cooking because it’s my 50th birthday today. We are going to restaurant choice #4 since it’s sunday and the first 3 choices are locally owned and closed today & tomorrow.
I usually get the black bean burger here so we’ll see. Then back home for cake. I can honestly say I adore all cake except German chocolate because I don’t like the slimy topping. I love coconut though.

Kangaroo.
It's just DD and I for dinner tonight. We were going to have Vietnamese rice paper rolls. But MIL just rang to ask us over for dinner. She is having a BBQ. I wasn't going to accept but she said "I've got kangaroo!" She cooks the BEST kangaroo, and I have it so infrequently that I had to say yes.

Awesome ... we have the best beef in the world here in Alberta but I've never had the opportunity to have kangaroo ...
