I am doing sweet potatoes as an appetizer for Thanksgiving. This recipe: Deliciousness here! is our favorite ever. But, instead of sweet potatoes with a side of sweet potatoes I was going to add squash to the actual dinner. I usually just roast them with some garlic, salt and pepper. But, looking at Pinterest - the site that increases my anxiety about being an inadequate host and cook...- tells me there are a thousand ways to serve squash a bit fancier. So... peas know all - do you have a favorite squash recipe? I make a yummy soup but we aren't doing a 5 course meal so that is out.

I don't try to fuss with an already perfect method of olive oil, salt, pepper, and high heat, especially since it's in season and delicious all on its own!

I roast chunks of squash with olive oil,salt,pepper and cinnamon.

I'm making a squash creme brulee either today or tomorrow. I was suppose to make it last week so the kids could approve it for T-day but didn't get to it. So it probably won't make it onto Thursday's menu since we'll have just had it. DH & I had it out a restaurant in October, and it was delicious. Squash bisque is another favorite, but that's a soup.

This is my favorite...I could just eat a whole bowl alone it's so good.
Spice Roasted Butternut Squash Ingredients
2 1⁄4 pound(s)uncooked butternut squash, fresh, peeled, cut into 1-inch chunks
1 medium uncooked red onion(s), halved and thinly sliced
1Tbspolive oil
1tsp garam masala
1⁄2tsp kosher salt
1⁄8tsp black pepper, freshly ground, or to taste
3Tbsp cilantro, fresh, chopped
Instructions Preheat oven to 400ºF. Coat a large nonstick baking sheet with cooking spray. Place squash and onion on prepared baking sheet; drizzle with oil and toss to coat. Sprinkle with garam masala, salt and pepper; toss to coat. Roast, tossing about halfway through cooking, until squash and onions are tender and slightly browned, about 25 minutes. Transfer vegetables to a serving platter or bowl and sprinkle with cilantro; toss to coat. Yields about 3/4 cup per serving.

I roast them just like you do - but add some Italian seasoning to make it savory. Or, if you can find it, Jane's Crazy Mixed Up Garlic Salt.

I brush slices of butternut squash with a little butter then sprinkle on a mix of breadcrumbs, garlic and Parmesan cheese-just a little sprinkle.

My aunt had a recipe that I wish I had, it was so delicious!
All I can remember about it was that she said it had sliced cheese and bread in it. It was definitely whipped prior to baking it like a casserole. Seemed like an odd combo, but it was really yummy!
