We are going to New Mexico for a week and staying in a 200 year old Adobe house. We plan on eating out some, but want to eat in some, as well. There is a fully equipped kitchen (although probably not a lot of fancy stuff like a slow cooker or instant pot). We are driving up in my brother’s SUV with 3 adults and 2 dogs (and meeting 2 more adults who are flying in)—so we don’t have a lot of room to bring food or my SIL’s beloved instant pot. We plan on grocery shopping when we get there. my SIL is an amazing cook (I am NOT). We need several dinner ideas for 5 adults, but with some complications: It’s going to be cold—so warm, cozy foods. And fairly easy—we won’t be in the kitchen all day. We will not have our cupboards full of spices and seasonings—and don’t want to buy a lot. I’m thinking seasoning packets will be a good idea. My SIL and older brother are both (mostly) gluten free. Which has always been very manageable, until... My younger brother (who is currently on chemo for kidney cancer) has to severely limit his potassium intake—which means no beans, no potatoes.  (Seriously—they will take him off his chemo if he can’t get his potassium under control). So many many of our staples (like chili and black bean soup) are out. Who’s got some good ideas to throw at me?

Bone in chicken breasts.
Butte pasties. A lot of recipes for these online. You can make pork ones with turnips and rutabagas instead of potatoes. I like pork, apple and parsnips. You can make these ahead and freeze them.

Chicken stew. Instead of topping it with biscuits, serve them on the side. Swedish meatballs with rice instead of boiled small potatoes Tortilla soup (you can probably buy it ready made there, and serve the tortillas to those who want.)

So you should be able to make chili with no beans (meat, tomatoes and seasoning unless tomatoes are out) Or you could do a chicken based chili with no beans. Could you make a lasagna and freeze to take with you? Or stop at a Sam’s/Costco and pick one up?
Chili without beans
Tacos
Pork or chicken BBQ
We make a fast and easy meal using an Ekrich sausage. Cut it into coins, heat up in pan, add evaporated(or regular) milk, Italian seasoning. Cook till it’s thickened a bit. Add some Parmesan cheese. Add to spaghetti. You can serve broccoli as a side or add to sausage/spaghetti. Longest part is cooking the spaghetti.
Have breakfast for dinner...bacon, eggs/omelet; add some ham or turkey or veggies. You can make hash browns or skillet potatoes for those that want them.
Tortellini with a bag of salad.

It is possible to make chili without beans and stew without potatoes. The world of stew will not fall apart if you omit potatoes! Seriously. Add a tablespoon of corn starch to thicken the broth and you won't miss the potatoes.

I'd plan on a couple of sheet pan dinners. Roast vegetables and a protein and serve with rice or cauliflower rice. Carrots, green beans, onions, beets, butternut squash alongside chicken, pork or fish are so simple and tasty. Season with oil, lemon juice, lemon pepper, garlic, salt and oregano or rosemary.

We go to a lake house 2-3 times a year for a long weekend. I always figure the menu and pre-measure my spices and pack them in the snack size ziplocks. I also alway pack a little extra garlic powder and a couple blends just in case I need them. Takes up no room.
You could call/text/message them to see if there is a crockpot. If not, I'd pack one somehow. Seriously.
Trisha Yearwoods crockpot pork loin is delicious. Add carrots and serve with rice.
White chicken chili is great - it does have white beans in it, but you could make without.
Taco bar is good option --- by plenty of foil throw away pans for everything.
OR.... speaking of throw away pans makes me think of the funeral sandwiches or any mix of sliders: ham and cheese; roast beef and cheese, turkey & cheese, etc. Make up the seasonings at home. Make ahead up to overnight and bake. Easy and so good.
Also --- ravioli bake is great. Sauce, ravioli, cheese, repeat. Toss in throw away pan for easy clean up. Filling and warm and takes no time. By a salad kit (gasp!) and premade garlic bread.
Chili with no beans is fine...... Heat some beans with some of the chili sauce in a separate pan and let people add if they want it. Seriously - I do not eat ground meat in my chili, so meat is always cooked separately in sauce and added. Would that upset the person that can't have it?
Burning Feather's Italian Beef (crockpot) would be a great option as well.
Big, frozen lasagna, salad and garlic bread.
Kielbasa and sauerkraut with peppers and onions. Meat could be browned with the peppers and onions, tossed in throw away pan with sauerkraut, covered in oven.
Swedish Meatballs and egg noodles.
A big pot of broccoli cheese soup, salad and crusty bread and butter.
I'm telling you, I'd have to find room for IP or crockpot if you don't want a lot of time in kitchen.

I'd ride w/my IP on my lap if I were you. It will really help w/your dinners. Also, your brother's oncology practice probably has a dietician that they can refer him to. It might help to have that one appointment where you'll get lots of great meal ideas for your brother and the others who are gluten free.

I think some have missed the no gluten and potassium requirements ruling out breads, pasta, tortillas and potatoes as good options.

Shredded pork tacos (instant pot or crock pot) with 100% corn tortillas (you should be able to find a good tortilleria in Santa Fe) Texas style chili with no beans, served with gluten free corn bread from a mix and a bagged salad Brisket or pot roast, mashed cauliflower (buy it pre-made/frozen) and a steamed veggie Roast chicken, rice and veggies Sausage and veggie roast on a sheet pan in the oven. Chicken salad sandwiches, on bread of choice (gluten free or not). Or for that matter, grilled cheese sandwiches with a quick tomato soup. Or chicken/tuna salad on a bed of lettuce. Kebabs with rice.

I think I'd ask the brother what he eats or should be eating and go from there. My SIL and I are meal planning together. If we asked my brother, he would say beans and potatoes and all the other things he cannot have. It’s been a tough adjustment for him...

There is plenty of gluten-free pasta these days. In fact, almost anything can be had gluten-free these days - I just had to make a gluten-free Thanksgiving dinner, and was amazed at how varied the products are.

Most of his favorite things are on the naughty list and things he hates are on the good list. Even tomatoes are on the naughty list. I think we’ve got some good options. We’re going to try to squeeze the instant pot in, but not much else. We just don’t have the room.

Can brother have stir fries with rice/veg/chicken? You can get a lot of variety with those, and spice them up with sauces from the store.
Chicken veg soup
Beanless chili would be a huge NO for me, I'd rather have no meat. But you could have two pots.
Tacos with corn shells
Chicken enchiladas modified a bit to be made with corn tortillas, stuffed with seasoned rice and chicken, topped with ...I like Trader Joe's enchilada sauce a lot
TJ's has actually a lot of options that might help if you can get there, as far as sauces and rice/quinoa blends.
I like their frozen falafel and hummus, I think falafel is gluten free? Paired with fruit, this can be a really filling lunch
Omelettes and oatmeal with fruit
Although I have no idea of the potassium content of those things...

Beans in chili? Fighting words around here! So you can definitely leave them out, as others have said.
NM is known for fantastic Corn tortillas. Can they eat corn? I'm sure you can find them gluten free there!
Are you buying graceries there? It should be simple to find a grocery, even a Whole Foods type with bulk spices. You can pick up some very small quantities, or maybe do it at home.
I understand the planning might feel daunting, but if you pause you'll see it's not too hard to accommodate these needs. I am sorry to hear about your brother and hope his is a helpful respite for you all!

Yes but many of the GF pastas ( or at least the good ones ) are made with either beans or potatoes I’m real familiar with the GF side of it but the other is foreign to me but she did say beans so that was a clue as to how hard it would be as so much GF ‘substitutes’ are bean based or at least chick pea based So the 2 issues are slightly contrary
