I don't usually buy a Costco rotisserie chicken unless I know that it will be eaten in one meal. I do make take the bones and make a chicken broth. What do you do with a half of a chicken leftovers? Chicken added to pasta alfredo? Hot chicken sandwiches? lucyg and others, please help.

I roasted a chicken last week and made chicken enchiladas with the leftovers. Sometimes, I make a curry chicken salad with almonds. I also use it in grain salads. If you are making chicken broth, you can add in the leftover chicken at the end and have chicken noodle soup.

Most of the time that I buy these, it's to use in a recipe. I use it for soup/chicken chili, spaghetti squash bowls, mexican enchilada bakes, chicken salad, chicken pot pie, freeze for future use, paninis, on homemade/naan pizzas, on salads and DH likes to take the drumsticks/wings for lunch.

I usually make chicken enchiladas, but I intend to try Pioneer Woman's Chicken Spaghetti next time (recommended from many on here).

Damn! Now I'm starving and wasn't planning on chicken tonight. I want a Costco chicken - sob, sob -
(We've had to forego all commercially prepared rotisserie chickens because of DH's kidney problems and I love roti chicken. SOB)
I've been making Chicken Enchilada Soup at least once a week since I found the recipe. Your chicken would be perfect in it. Just remember to double the amount of cumin in whatever recipe you follow. It makes such a difference.

How many people are you serving that chicken too? One chicken in this house is only enough for my husband and son. With me getting just a bit.

I add it to acan of chicken soup and cook with other vegetables. It’s easy chicken a la king.

Well, here I am but I don't think I'm really needed.  I slice it for sandwiches, cut it up to throw in the chicken soup, make chicken salad with it, dice it up tiny to toss into quesadillas or to beef up commercial products that need a little protein (DGS like noodle soups so I add chicken and veggies to assuage my conscience). Depending on how much is left, it's also good for casseroles, such as all the ones listed above.  I just cut it up and toss it in a ziplock bag in the freezer for future use. ETA forgot to say, I also dice it up tiny to use in fried rice. The 8yo loves fried rice.

I dice it up and freeze it in one and 2 cup portions. Then at some point in the future when I want to make enchiladas or something else, I simply take it out of the freezer. It takes very little time to defrost

In the fall or winter, chicken pot pie. In the summer, Asian chicken salad with ramen noodles. Both from The Dinner Doctor cookbook. There are a ton of leftover rotisserie chicken recipes in that book.

I cook up a couple boxes of mac and cheese (kids love that kind) along with some broccoli. Once the pasta and broccoli are done I toss those with the chicken and it makes for a quick and inexpensive meal that everyone loves.

I cut up and freeze the leftovers in about 1 cup portions. I keep them on hand to throw on a salad mix for lunch.
I also cut it up and add it to a box of Rice-A-Roni. DH loves that.

I use it for that lovely recipe by Jerry Seinfeld's wife to make chicken noodle soup - it's one of her recipes with veggies hidden in it. I like to use fun pasta shapes so the kids find it cool to eat. I've been doing that since my kids were little. And then the carcass makes more chicken stock in the instant pot - which I use as the base for the soup next time.
