I don't understand the qualities of leather so I am wondering what this is like. Is it nice? Soft to the touch? I did google it and wasn't able to find out very much.

Full grain leather has not been buffed or fixed of blemishes. It can be of either good or bad quality, soft or tough, depending on how it was cured.
That's about all I know.

It is the most expensive. It is very durable. I think softness will depend on the animal. Given that it is durable and not sanded I think it may not be as soft as other grades of leather that have been worked more.

All of the above and most importantly, full grain leather is stronger and thicker, will last longer. The manufacturers sometimes "split" or "peel" a hide into two pieces to make it go further- imagine an onion with only two layers. Does that make sense?
So full grain leather is the whole, thick hide, unsplit.
