It looks like we are about to adopt two four year old kitties from a local rescue. I haven’t had a cat in 20 years. These will be inside kitties (too many coyotes and mountain lions in our area). Any recommendations for kitty litter/boxes, food/food dishes, scratching posts, and other assorted cat paraphernalia?

You must visit chewy.com They have EVERYTHING you need and their service is beyond top notch. Their prices are great and if you spend $49, you get free shipping and it is FAST. (which between litter, food, and a few treats and toys...$49 is easy to spend)

A Litter Genie! My kitties are 1.5 years old and their first year I didn't know about a Litter Genie. Like a Diaper Genie - lift the lid and fill it. So much easier than scooping litter clumps into a bag. The refills are much cheaper on Amazon than in stores. Litter GenieI also recommend cat trees that are only real wood and carpet. My two kitties run laps chasing each other up and down the cat trees. The ones that have thick cardboard tubes covered in light-weight fabric don't last at all. We have this one from Petco and also a similar, but taller one, from Costco. Cat TreeI have one kitty that likes to play in the water bowl so I bought a dog feeder that works perfectly and he can't dump the water. Feeder

Kitties! I adopted two at once (they're sisters) and I think it's been good for them have a buddy.
For litter boxes, I like the Catit brand large covered boxes. I buy them from Amazon but I've seen them in pet stores as well. I also recommend a litter mat for underneath - I think the brand I have is Pawkin?
I've tried a bunch of different litters and my favorite by far is Dr. Elsey's Precious Cat Ultra. It's a clay litter but is almost dust free, and it clumps really well so you can go longer between complete litter changes. The only down side is that it's heavy! It comes in 18 and 40 lb bags - I usually buy the 40 lb because i have multiple litter boxes, plus it's a better value.
For a scratching post I highly recommend the SmartCat Ultimate Scratching Post. It's about $40 on Amazon and worth every penny. I bought mine 5 years ago and both cats scratch on it daily and it's still going strong. My cats also like the corrugated cardboard scratchers - those get destroyed pretty quickly so I look for them on sale.
For dishes, I don't really have a preference other than I don't like to use metal or plastic. My cats eat their dry food from small Syracuse China bowls that my aunt gave me at least a decade ago and I buy Corelle saucers from the thrift store to use as wet food dishes. I was concerned that my cats weren't drinking enough water so I invested in a ceramic pet fountain a couple of years ago and they really seem to like it.
Food is always a challenge. Both my cats are picky, and while they'll eat the same dry food they prefer different kinds of wet food. Also, they'll happily eat something for months and then decide they don't like it! I'd love for them to eat an exclusively wet food diet but I tried and it just didn't work out, so they get wet food in the morning and evening and have a small amount of dry available during the day. Right now they're eating Lucy Pet dry food, but in the past have eaten and liked Wellness and Natural Balance. For wet food, I rotate between various flavors of various brands. Luckily I have a great local pet store with a huge selection of foods to try. My main "rule" for their food is that it be grain-free.
Good luck with your new feline family members and please post pictures!
Edited to add that I second Idahomom's recommendation for the Litter Genie. It's awesome.

We were having issues with our cats peeing outside of the litter boxes. Our vet suggested Cat Attract litter and we haven't had a problem since (other than having to hide the bag because they will scratch it open to get at the litter).

Another vote for a nice scratching post. Make sure it’s tall enough for the cats to stretch up full length to scratch. Mine don’t care for the sisal wrapping....they like carpeting. But I know many cats like sisal. A lot of scratchers have some of everything. Mine love to bask n the afternoon sun while laying on the shelves of the post. Mine also like the corrugated scratchers someone else mentioned.
Congrats on the new cats!

Congratulations!! Right now we have 5 cats in our home. DD29 has 3 of her own in her bedroom (1 large litterbox that she changes often, 1 tall scratching post/cat tree, toys and their dishes). She converted her walk-in closet to their litter room.
DH and I have 2 cats that are like siblings. They're a year apart and I swear that they think they're brother and sister. The female does poop outside her litterbox sometimes, sometimes she sprays when she gets UTI's.... She's lots of fun (not!!!). Her brother is our amusing little angel! They all have different personalities. Our 2 also have the same litterbox as DD's. It's the Tidycat Breeze system. There's no clumping pee-balls to throw away. There's no smell! There's a tray on the bottom where there is a pee-pad. You change that 1-2x/week depending on how much they drink and pee. The poop kind of floats on top of these pellets and you simply scoop them out and flush them. It's the easiest thing ever! No more lugging HEAVY litter into our home. No more inhaling that litter puff of smoke. I can't speak highly enough about this system! You can change out the pellets (a big bag is $15) every 2 months and clean the box, but it's so simple. We usually add more pellets if they poop a lot and then clean it when it looks dirty (you'll see that the pellets look dirty).
My cats have their own little toy box with toys. I got a $6 laser light that's automatic at Kohl's. Love it! And mine have a smaller kitty condo in our main space that they play in.
Good luck!! Let us know how it works out and what their personalities are like in a few weeks!

Kitties are all so different. Our cats absolutely refused to use litter boxes with lids on them. they would go right outside the box. I have one cat, who is on the large side, that will not use a tall litter pan (which is what we had), so we had to get a large flat tote for him to use. The one doesn't like litter that forms clumps so we get the clay kind. Man are they picky, but I love them! We bought this cute little house for them, that one can lay in and the other can lay on top. They are constantly battling who gets to lay on top. I guess I will have to get another one...LOL. Lots of toys. Our guys love the little stuffed mice. We have about 4 different ones and I find them all over the place.

Dunno other than the obvious food/litter box thing. Maybe mine are dumb as rocks, but I watched them play with one of those cotton make up pads (you know, those round things that you take your make up off with?) for at least an hour today. And if there is ever a box that comes in the house? It's theirs for days. And paper bags. Honestly, any kind of bag-reusable grocery bags, suitcases, purses, whatever. And any kind of thing that rolls across the floor. I got a bunch of those wool dryer balls for Christmas. OMG. You would think that I bought them just for the cats. If they can hook a claw in one they will play for hours. Toys are not exactly sophisticated around the anxious house.

Congratulations on your new additions! The rescue group should be able to give you some great info about the particular likes/dislikes of your new kitties. But think about potential problems and prevent them in advance. For example, if you don't want the cats to jump up on top of tall furniture, maybe a nice tall cat tree. Worried about scratching issues? Preventative care is a good supply of scratching alternatives. And remember that they will be coming into a totally new and strange environment and be patient with them. They may want to hide and explore on their own, or they may want cuddles and affection right away. Let them set the pace.

I finally got smart and bought kitty a sisal doormat of her own since she loved to scratch the ones at the doors. Hers says “hello” on it. See what I did there? She LOVES it — scratches, lays, rolls on it. She also has a few little store-bought catnip meeces, but more than anything she loves a wadded up paper ball. Unlike every other cat I’ve ever had, she cares not one whit about boxes or paper bags. I have some of those wool dryer balls, and since they did nothing whatsoever to control static, I think I might throw them at kitty. Thanks, anxiousmom!

I highly recommend Slide cat litter. If you end up with one who likes to pee in the corner of the litter box, you'll be forever scraping cat pee cement out of the box. But the Slide litter works as advertised - doesn't stick to the sides of the box.

Our two semi-domesticated feral cats want nothing to do with boxes or paper bags.
However, the black one has fallen in love with a cloth bag I used to transport yarn and knitting supplies. She has been in love with it for a week, snuggles in it for a bed and rolls around inside the bag.
We had a super ball--tossed it on the floor and both love to chase and bat it. Unfortunately it, and other balls, roll under our furniture and might be under it for awhile before I get a yard stick and scrape it out.

Congratulations on the new kitties!!
Definitely check out chew.com. We have purchased two cat trees from them that are fantastic and were very low priced.
We've also been using the Breeze litter system and love it! That along with the litter genie controls all odor.

Awesome, thanks so much for all the recommendations. Off to look up a ton of things and make some purchases. :-)
The kitties are Cosmo and Wanda. I’ll try and share some pictures tomorrow when I am on my laptop. They are bonded, but not siblings...so we just had to bring them both home. We have our laundry room setup as their “sanctuary” room right now. Cosmo is braver and comes out to explore. Wanda does a bit but would rather hide behind the washer.

Congrats on the new kitties! The Tidy Cat Breeze is amazing. The pellets last a really long time. I have one cat who uses it. But my other cat is petrified of everything and he hates the noise the pellets make so he uses traditional litter, even though I bought Tidy cat for him since he hates to bury his stuff.

My cats' favorite toys are springs (come in a pack of 10 I think). But they LOVE the extra plush pipe cleaners. I coil them around my finger so they're like a spring. Also toilet paper rolls and tiny mice. Every morning they bring any of these small toys up to my bed. Presents. I buy these cubes at Walmart. You can even attach several together and they last for months. Also cat tunnels. Cube Tunnel

Chiming in for the Tidy Cats Breeze. It solved pretty much all frustrations I had with the litter box (tracking, smells, pain to clean). Amazon Basics now sells pads that fit it too at about half the price of the Tidy Cats one.
My cat likes to be brushed, which helps keep his shedding on furniture to a manageable level. I have a wire brush by Safari I really like - the face plate of it pops up and pushes the fur out so it's easy to clean.
