Hi All! I am a terrible meal planner. I’m going away on a girls weekend and we’ve decided to bring food/snacks with us vs. shopping when we get there. What are some of your favorite snacks and apps to take on road trips/weekends away? Recipes are a plus! 😁
ETA: everyone coming in the trip is a practicing Catholic (except me, I’m the heathen) so meatless snacks are needed!

Assuming you are bringing a large cooler (full of adult beverages), I would bring containers full of cheese (already cut up), salami, pickles, grapes and nuts for a cheese platter. I would pre-make ham/pickle roll ups (spread whipped cream cheese on deli ham, add a pickle, roll up and slice). Lunch meat and mayo with Hawaiian buns for sandwiches, potato chips and dip. I've been known to pre-make a pan of enchiladas or lasagna and bake it when you get there. Or we've also done real easy meals like tacos or sloppy joes.

Forgot to add that everyone else that’s coming is participating in Lent, so no meat for the actual road trip.

My favorite snack these days is nuts & dried fruit. Costco has a great Nuts & Berries mix. Chocolate covered pretzels are always popular - Trader Joe's has dark & milk chocolate versions.
For appetizers, I'd put together a charcuterie board with a variety of cheeses, meats, crackers, bread, pickles, mustard, maybe a fig or cherry jam, apples & pears.
My two most popular appetizers are prosciutto wrapped asparagus (bake at 450 for 5 minutes) and almond stuffed, bacon wrapped dates (cut bacon slices into thirds, stuff an almond into the date and wrap with bacon - bake at 450 for 15-20 - drizzle with Balsamic glaze). The dates can be stuffed with a bit of goat cheese along with the almonds.

Will you have access to an oven to bake/heat things up, or do you need cold snacks?
I love hummus (maybe a couple varieties) with pita chips, baby carrots, celery and sliced cucumbers.
Spinach dip with garlic bread crisps (the little bread slices in the bags at the grocery store) or even veggies to dip them in.
Antipasto bites/skewers: cheese tortellini, black or green olives (can pick up a mix of nice marinated at the olive bar at your grocery store), a cube or ball of cheese. Can add cherry tomatoes and drizzle with balsamic.
Herb cream cheese (Boursin or Allouette) spread on crackers or the above mentioned bread.
Nut/trail mix for sure.
Chips and dip. Chips and salsa.
Layered bean dip and chips. Layered Feta Dip: hummus/tzatziki/kalamata olives/diced tomatoes/roasted red peppers/Feta with pita chips. I would think you would need to pack the ingredients and put together when ready to eat so that it doesn't get too watery.
Green olive dip is nice and salty with a couple different crackers.
OR.... a sweet dip (brownie or cookie dough maybe) with graham crackers or vanilla wafers or even oreo thins!
Easter candy of some sort, if it's soon. I'd take a Easter basket with a variety for everyone to share, or make mini baskets for everyone.
ETA: I'd also pack a variety of Kind bars and cheese sticks, bag of halos, bananas and apples. Have a great trip!

I like veggies and dips along with assorted cheeses and crackers for snacks. Also nuts.

We only need snacks/apps for the drive there. We’re planning on making dinner in 1 night (taco bar) and breakfast 1 morning (egg casserole). We have access to an oven/full kitchen as we are staying in a house.

No meat on Friday's during Lent for most Catholics is not optional. Some choose to not follow it but most Catholics like me don't eat meat on Fridays.

4hrs isn't too long. I'd just make sure you have water/drinks and healthy snacks like fruit and veggies. Nuts for protein or salty snack is good too. Popcorn is another light snack. We wouldn't stop during a 4hr drive but your bladders may vary.

That's how I took it I thought it was for car snacks too... You can pack all your normal stuff just make sure to have some frozen things in a big ice chest. We do a 9hr drive and pretty much bring everything with us. If I make a casserole ahead of time I just make sure to freeze it for travel. Same with any meat. Be aware milk takes a long time to thaw.

Softened cream cheese with just about anything poured over it is yummy, too.… Salsa, raspberry jam, or something like a bottled raspberry chipotle sauce… Serve with crackers. Yum!

I plan to make summer rolls for my weekend retreat with my friends at the end of the month. I use lettuce, cucumber, carrots, shrimp and fresh basil. If your group doesn't like shrimp, you may omit that and use more veggies. I don't care for peppers, but you could add red peppers as well. They are time consuming to make, but so delicious! Especially with peanut dipping sauce!

When we take a road trip I take homemade Hummus and cut veggies, cut cheese, cut fruit, chips and crackers. I make muffins and granola bars. I’ll often make a lentil couscous salad that can be divided and bring pita. What about taking bagels, cream cheese and smoked salmon. You can roll in tortillas or pre make bagel sandwiches.
