Seems like we just had dinner last night. Oh well. Guess we still have to plan for dinner tonight. I have a super busy afternoon and tonight ods is working. DH is a solo eater. It'll be a tossup between tacos and leftovers. I'll have to see what dh wants for dinner.

Dinner here tonight will be grilled chicken breasts with asparagus risotto. It is still freezing cold here, but it should begin to warm up from Thursday. I have tomorrow off, so I can stay in all day where it is warm.

I meant to take fish out of the freezer this morning and I forgot. DS hasn't texted me anything. I am thinking he was up all night working on a paper. So he's probably still asleep so I couldn't get him to take the fish out of the freezer.
That leaves me with chicken. I thought my fajitas were good last night. I might make them again. I made them last night with enchilada sauce. My mission to empty my pantry and has shown me that I have like 99 cans of enchilada sauce, so I used that instead of fajita seasoning and I thought it was good.

We are having a dark & stormy day here and I'm hoping it clears before dark so I can see how much snow has fallen in the mountains. They are predicting 6-8" of snow on the local peak where I'm heading with girlfriends for a retreat this weekend.
Chicken Tortilla soup is for dinner, maybe with a salad and avocados on the side. The Costco Bulgogi last night was a disappointment for my Korean beef loving family. Not very flavorful and the meat was really gristly.

Since I'm leaving Thursday for four days, I'm trying to empty out the fridge. Probably scrambled eggs with veggies and cheese tonight. There's also good French bread for toast ... maybe I'll get ambitious and make garlic bread instead.
Tomorrow will probably be the leftover pulled pork and then I'm done.

It is so cold! And it won't get "warmer" (insert hysterical laughter) until Saturday. And yes, still windy. Oh, and I managed to fall on the ice again, so now my shoulder hurts like crazy again.
Dinner? Veggie burgers. DD and my niece loved them, DH and DS will probably not, but they know better than to complain. And I think I need chocolate....

Soup. One of those lovely soups I made Saturday. Yum I also have to pack up my bone broth and freeze it. I have 2qts chicken & 1 qt beef broth. I gave what I had in my freezer to DS so made more.
I donāt know how Iām going to pamper myself yet this week Iām working on that.

For our dining pleasure this evening we will be enjoying chicken sauted in olive oil along with a vegetable and a fruit.......another boring Tuesday meal.....it's already been a long week and I do not want to make anymore decisions about food selection or food preparation......

Walking carefully (more like "shuffle like a penguin") obviously isn't enough *sigh*. My balance isn't as good as it should be (old age is going to be fun), but I'm not going to use crutches. Not this side of sixty, at least.

It's one of those days when I can't think of anything different or exciting, so we'll be having breakfast for dinner... scrambled eggs, bacon, home fries, and English muffins. I should have waited and made my lunch to go with dinner... made cheesy grits in the instant pot. Boy, were they good!

Delta Dawn ....I'm happy to hear that today is better! miominmio .....That ice is being so mean to you! I've heard of people putting big, thick socks over their shoes/boots for walking on ice (they grip the ice to give you some traction) maybe that would help you? I'm not sure yet what we're having; it depends on whether I go to the store or not.

I'm feeling too lazy to run to the store OR cook today, but I want enchiladas or arroz con pollo...maybe our sweet doggies will cook for us!

I'm ready for this month to be over. It's been a very expensive $$$ month for us. DH's 2 ER visits, several doctor's visits, a new part for the dryer, and then today my phone expired. I had to buy a new one and because the old one is D-E-A-D, I didn't get any credit for it to apply to the new phone. You know those idiots who don't back up info on their phone often enough and lose almost everything?! Yep, that's me. Live and learn. I know the cute 21 year old boy who was helping me thought I was a foolish old woman.
DH bought himself a steak and since he likes the way he prepares steak, he's on his own. I'm making myself a WW friendly taco.
Off to try and set up my new phone.

Hi lots of problems got solved today. When I mean lots I mean stuff that needed to get done and it was such a relief. I took BFF with me (she is great) and I told her "What would I ever do without you?" Her answer was "YOU? What would I do without YOU???" and she gave me a hug. I am very lucky to have her. So very lucky.
I got phone calls today from family friends making sure I was ok. That was nice. I wasn't ok yesterday but today I am.
One task I was going to do after talking to my dad's friend (and he's a FCA/CPA) told me for the amount of work the task is going to be, forget about it. It's not worth the bother. I needed to hear that. I can just give the organization the information I have and forget about the rest. Life will be ok. It's too much work what they are asking for. Ok that was good and freeing. (This was something that a CPA needed to tell me and I am good with this decision). Better than I thought it was going to be.
I sent a parcel up to BFF in AK today and I was happy to do that because I am trying to DOWNSIZE and I got rid of a LOT of these hat things that she wanted. I was thrilled to send them to her because she needs them for the cold up there. I am thrilled there is room in my wardrobe now. I think I even have a free shelf. There is also a lot more free space in my head, too! It is not getting filled up with more clutter for any reason!
Tonight I am being Ukrainian and having perogies, spinach or asparagus and maybe salad. I haven't decided if meat figures into this equation or not. Probably not.

My program today was interesting ... I was given the opportunity to seriously look at myself and see how passive I am ... I fit almost all the characteristics ... now my goal is to be more assertive ... it will be interesting to see if I can do it Another simple dinner tonight because I'm so tired ... Rotisserie chicken, potato salad and a tossed salad with homemade dressing

DD cooked fish (rockling with a lovely Asian dressing, rice and bok choy. It was nice and healthy. I was surprised that even DS ate it (although he had hot chips instead of bok choy).
