corned beef here - I make it with brown sugar and Guiness and then make gravy from the drippings - yum! red potatoes (with garlic and parsley) carrots dessert? I'm not sure yet Could you share your corned beef recipe? That sounds good it's super easy - rub a cup of brown sugar over the corned beef (all sides), slowly pour a bottle of Guinness over the top. Cook in a slow oven (300F) for 2.5 hours. I take a cup of the liquid after cooking, pour into a small saucepan, and whisk in a bit of flour while heating over med. heat on the stove until it thickens for the gravy

We will be enjoying our See’s Irish “potatoes”.....can’t wait!! I googled those.....they look SO yummy! Oh they are....the trouble is they sell out fast so you have to buy ahead so I have had them for a couple of weeks and resisting them is so hard!

my dh's grandfather was iIrish.. but as he was protestant and he and his brothers left Ireland to get away from the troubles..as I told my kids.. I don't think any of the family would have celebrated a catholic holiday. We sort of celebrated St David's day on March 1 and we also skip Chinese new year.. no money envelopes here.

I'm making the Guinness Chocolate Cupcakes A friend at work has brought her famous Guinness Chocolate Cake to work today. I don't drink alcohol so I don't like the cake, but everyone else in the office loves it. As for plans.... Every year DSO goes out on the piss with friends for St Paddy's day. This year is no different. He asked me to come along, but as a non drinker, the idea of spending the day surrounded by hundreds or thousands of drunk people is my worst nightmare. Especially because it's going to be a lovely 32 C (90 F) and I don't want to waste what is likely to be one of the last summery days with a bunch of pissheads. Aaaaargh, what to do, what to do?

Colcannon 4 russet potatoes (2 to 2 1/2 pounds), peeled and cut into large chunks Salt 5-6 Tbsp unsalted butter (with more butter for serving) 3 lightly packed cups of chopped kale, cabbage, chard, or other leafy green 3 green onions (including the green onion greens), minced (about 1/2 cup) 1 cup milk or cream METHOD 1 Boil the potatoes: Put the potatoes in a medium pot and cover with cold water by at least an inch. Add 2 tablespoons of salt, and bring to a boil. Boil until the potatoes are fork tender (15 to 20 minutes). Drain in a colander. 2 Cook the greens and the green onions with butter: Return the pot to the stove and set over medium-high heat. Melt the butter in the pot and once it's hot, add the greens. Cook the greens for 3-4 minutes, or until they are wilted and have given off some of their water. Add the green onions and cook 1 minute more. 3 Mash the potatoes with milk or cream, add greens: Pour in the milk or cream, mix well, and add the potatoes. Reduce the heat to medium. Use a fork or potato masher and mash the potatoes, mixing them up with the greens. Add salt to taste and serve hot, with a knob of butter in the center.

IRISH SODA BREAD.........
3 Cups Flour 1/4 Cup Sugar 1 Tsp Baking Powder 1 Beaten Egg 1 Tsp of Baking Soda mixed into 1 1/2 Cups of Buttermilk 1 Cup Raisins
* Preheat oven to 350. * Mix all ingredients (EXCEPT RAISINS) together, in the order above. * Now mix-in raisins. * Now plop it into a round cake pan; don’t spread-out - just leave it however it lands in pan. * With a sharp knife, start to cut a “+” (plus sign) in top, just enough that the dough starts to look like 4 pieces. * Sprinkle the top with a light dusting of flour. * Bake 40 minutes @350. * Let cool 15 minutes before transferring to wire rack to finish cooling.
I LOVE it with butter; some eat it plain. You can toast it too, awesome !

We have our menu set with corned beef, potatoes, asparagus, and soda bread. I'm struggling with a dessert though, my DD17 will be having some and I don't want any alcohol in it that hasn't been cooked out. I looked at a Irish Cream cake but the whipped cream frosting has Irish cream missed in.

The only thing I normally do is wear green but that's my favorite color anyway.
This year my favorite yarn shop is having 17% off solid green yarn and there is some I want if it is still there tomorrow. So my plans are to shop!

I ended up using a dried berry mix that I found at the grocery store (I have a little one that doesn't like raisins). It had cherries, raspberries, blueberries, and strawberries in it....so yummy! I want to try it with currants next!
