In honor of 4/20 should we have a munchie meal w/brownies?  Though I am anti-drug. Sorry universe. I think I'll opt for enchiladas or chicken nuggets. I'm watching the news and they're focused on this day. Time to turn off the news. What's on your menu? Have a delightful day and a fun weekend.

Dinner tonight was preplanned. I am going to use the leftovers of the chicken from last night for a chicken and asparagus risotto. Asparagus season is in full swing here, with the absolutely delicious white asparagus available for a short time only - about 6-8 weeks. Our supermarket even tells us what farm our asparagus comes from - it is serious business here! I am using green asparagus for tonight though, as I prefer the flavour for risottos. White is best seved with schnitzel or salmon, boiled new potatoes, and hollandaise sauce. Simple, but oh, so yummy.
I had a quiet day today - woke up early so went out for my walk early too. Then I went to ma nail salon to have my manicure done. I am also looking to a quiet weekend - DH is still in the US, so I can do as I please for 2 days! I'll try and get another walk in tomorrow morning, and there will need to be shopping done as well, but apart from that, my time is my own.

I knew I wanted to go with an easy meal tonight, so I was thinking tacos. But after grocery shopping, I felt guilty not using any of the produce I just bought, so I'm making a chicken sheet pan dinner. I'll figure out the seasoning after I get everything on the pan. Like The Birdhouse Lady 's dh, my dh doesn't really like sheet pan dinners. But, some many nights, I don't like making dinner, so I'm calling it even.

I’m cooking tonight 😊 We’re having thick cut bone in pork chops that I’ll sear in the cast iron frying pan before putting in the oven. They’re brining in the fridge right now. Roasted tiny potatoes and butternut squash are the sides. There’s applesauce for anyone who wants it!

Tonight is the carb fest that my DH does on Friday nights (mac and cheese this week). I'm not sure what I want. I better figure something else out or that's what I'll be stuck with.

Happy Friday indeed! DH will have a cheese quesadilla and last night's leftover rice. Starting tonight, I'm going to do smoothies in the evening. I'm very good about eating well during the day, but I have a bad habit of grazing at night. I even got a book, Zero Belly Smoothies. It makes crazy claims like, lose 16 pounds in 14 days, uhh, no. I mostly bought in for the all delicious looking recipes. It will be evening meal replacement for me. I hope we all can have a good and restful weekend.

After a haircut appointment this afternoon, I was wondering what to fix for dinner. When we got home, my son called and asked us over for a ham dinner...how's that for a solution to the issue? I am definitely loving this part of moving down to SC... lots of time with my kiddos and grands!

Well team I just finished up painting my ceiling and all the trim in my kitchen. In my house all my ceilings and trim are painted the same shade of white. So I bought another gallon of white. My sis and my friend both talked me out of painting white walls in my kitchen. And they were totally right. I cleaned my whole kitchen before I started but I was amazed at how when I put a fresh coat of white on the trim just how not white it actually was!!! Yikes!
I'm thinking I might just skip dinner and take some peach Bellini to my friends house. I'm exhausted...

It was a good day at group today because I got to leave early ... the last module was "Fun and Fitness" and playing volleyball is just not my idea of a good time ... I don't do sports - ever. That leaves me with time to cook a decent dinner tonight but the only other person home is dd#2 ... I could make tacos or we could fend for ourselves ... decisions, decisions

I was out of town yesterday and avoided making dinner. I talked to DD when I was about 90 minutes from home and suggested a few things she could make so thought I'd come home to tortellini or soup and instead she made gyros and Greek salad. Today was a weird parking day. I was meeting a girlfriend for lunch and can usually park in the city lot right beside the restaurant. I ended up about 6 blocks away. She texted me "looking for parking" when she was a couple minutes late and ended up finding a spot about 7 blocks the other way. Our waiter knew she was looking for parking and told her she should have gone home and Ubered as it would have been faster. I finished my lunch crab & avocado BLT for dinner and made the rest of the gang regular old BLTs. A raw vegetable plate rounded out dinner. My favorite grocery store has a great weekly meat special Thurs/Fri that I usually shop early on Thurs. Because I was out of town yesterday I missed it and decided to stop on my way home this afternoon. Not only was the parking lot day before Thanksgiving insane, I had to follow another customer to their car to snag a grocery cart. The fridge is well stocked with proteins for the next week so no more sandwiches for dinner for us.
