Today is a very busy Monday with back to back appointments. Luckily, the first one is acupuncture. That will give me energy for the day and the week. I am looking forward to feeling those good effects. Due to the very busy day I'm going with yet, another fend night. I won't have energy to cook and didn't have anything in my freezer.
What's on your menu?
Have a happy day and a calm, easy week.

I have had a busier than expected day today. I remembered as I went to bed last night that one of our little ones will be leaving us tomorrow to move on to a 'real' kindergarten. When the children leave our group, we give them a certificate and a small album of photos we have taken during their time with us. This meant I first had to go shopping on the way home from my German class to buy photo paper and an album (I was smart, and bought 4 so I will have them ready next time!), then choose and print the photos. And of course, today was the day my printer decided not to play nice with the wifi, so it took longer than it should have. While all that was happening, I also had time to prep the craft activity for tomorrow, so all is good.
Dinner tonight here will be butter chicken with rice. I will probably add some vegetables to the curry - I have spinach, aubergine and zuchinni I could use.

It's raining and chilly here today ... a perfect time to catch up on some much needed paperwork. That'll keep me busy so dinner will be leftovers... carry out shrimp, black-eyed peas, and cole slaw for me and last night's steak for DH. He'll probably do tater tots or a veggie with his steak. I think we have some lemon trifle for dessert.

Dh doesn't consider it an Asian meal unless there are egg rolls, but I used up my stash of egg rolls from the freezer. So, I decided to go with egg roll in a bowl. Serving egg rolls with egg roll in a bowl would be redundant.

The remains of pot roast and veggies, and then we will be done with it!!
It is snowing again. It is reported that we just broke the season snowfall record with 103.6 inches.

We are trying again to have spring - in a recent 10 day stretch, we had 73 degrees, 14 degrees, rain, hail, snow and an earthquake. Today, we have sunshine and 70 degrees, so we are grilling hot dogs because they feel like summer! I'll probably make some fries, courtesy of Ore Ida and I will check the broccoli that I spotted in my fridge this morning and if it's still good, I'll steam that in the IP.

Tonight I am going to whip out my instant pot and make a new recipe called Cuban Ropa Vieja. Don't ask me to pronounce it!!
I was looking for a new and interesting recipe that was Whole 30 compliant and that is what I chose. I am going to roast some asparagus and make rice for the hubs. I will let you know how it tastes tomorrow.
Busy times are headed to the birdhouselady household. I am helping decorate for prom. It's tradition for the senior moms to do it. I have been busy this weekend making centerpieces and getting stuff ready to make the actual day easier to decorate. I am working with a really neat lady, she cracks me up but she is hard to follow sometimes. She will be talking about one thing and then she switches subjects so fast I have no idea what she is talking about....SQUIRREL!!!
This week we also have dog grooming, car detail (my car is filthy after this winter and my sister is coming soon), dentist appointments, and all the prom stuff. Not to mention work and all the day to day home stuff!
Remind me of this in the fall when I will be an empty nester!

sueg, do the kids move up to Kindergarten on a rolling basis? Not at the beginning of the school year? I could make DS really happy and serve spaghetti & meatballs for dinner using the Ikea meatballs I picked up yesterday. Personally I prefer Ikea meatballs with potatoes or egg noodles, but he LOVES them with spaghetti & a tomato sauce. DH bought a ginormous bag of russet potatoes when I was away a couple of weeks ago. I love Yukon, gold & fingerling potatoes but wouldn't let myself buy any last week and I hate russets so have a hard time getting excited about cooking them. The bag is sitting in the garage, staring at me every time I walk through and I feel like I should use them. Ugh, too many decision today.

It's a gorgeous day in my neck of the woods. Temp shows 67.. that may not seem very warm to some of you, but that is summer weather for us Even better is there's barely a breeze so it actually feels that warm out. Bummer that we don't have a baseball game tonight! Perfect weather for it. The boys requested spinach pancakes (from weelicious) aka hulk pancakes. I'm A-ok with that. Will also make scrambled eggs to go with them.

sueg , do the kids move up to Kindergarten on a rolling basis? Not at the beginning of the school year It depends! A lot of the children I work with are children of expats, and are going into English or bilingual private kindergartens. These will accept children when they have a vacancy, which can happen at any time, due to transfers with work. The children who are going into German kindergartens tend to go at the start of a school year. We also have children move from us into a Krippe (creche, daycare), who will move whenever they are offered a place. Munich is like many cities these days - far more children than available daycare places.

Another smoothie for me: strawberry, spinach, banana. DH will have some chicken tenders and a veggie (corn? broccoli?)
It's rained here for two days but I believe I see some sun peeking out. I need to get out for a walk. I'm very "blah" today and a brisk walk usually does wonders for my mental and physical mood.

Well I was just coming to share that I am on day five of painting. Still haven't made the hello fresh dinners. But I ordered a fun New light fixture today and I found someone to cut a phrase out of my favorite Dead song for me to hang in the soffet above my sink. I was very happy about that but apparently it is a statement on my class level...so...I probably won't be sharing photos. Suddenly hot dogs are sounding like a good way to celebrate this ridiculously sunny day in Michigan. I want potato salad too! Yum! Thanks for the inspiration littlemama. Here's my tacky light fixture...

jeremysgirl - that fixture is FUN!! Love it. And now you have to share the phrase here, screw what others think!! Something just rubbed me the wrong way today. I called DH and vented a bit. I had to consider my own attitude. I was ready to chalk it up to all the peas must live in 4000 square feet houses, all painted in 15 shades of Sherwin Williams gray, and ready for Chip and Joanna to stop by...lol. DH screwed my head back on straight. So sorry for the attitude. My favorite Dead song is Ripple. I keep my radio in the kitchen and always have music playing in there. So I wanted it to say "let there be songs to fill the air." I checked myself. HGTV isn't coming to do a story about my house. I don't need to feel bad about a space that makes me happy.

I’m having a salad.
I’m exhausted. They sprung a surprise trainee on me today at work and because it was a surprise I wasn’t prepared at all. I would have liked to have something ready. Also because it was a surprise the poor trainee has to travel very very far tomorrow whereas if I had been told I could have done something more central. But appointments are made now so they can’t be changed.
It’s going to be a heck of a week and it was supposed to be an easy week. Oye.
Wish me luck that tomorrow I become a better trainer because today I was bad.

jeremysgirl , I salute you and your attitude from my 1940s brick ranch with a kitchen that hasn't been remodeled since 2000. Keep on being a square peg! Haha...this made me laugh. My mom had an incredible kitchen remodel done. Walls knocked down, custom cabinets, professional everything. Looks like a magazine. She had to have spent at least $30,000. The cabinets are dark wood. The countertops are dark and then she painted it gray! I smiled and said it looks stunning! I'll bet you can't wait to cook in there. Inside I'm thinking the idea of that kitchen in my house makes me feel so depressed... Mom came over on Saturday night. The first question out of her mouth was...what on Earth made you choose orange?!?!? Haha... I'm a square peg even among my family. Lol! tuesdaysgone, when you're ready to paint your kitchen, I'm here to help you decide between purple and lime green!
