AKathy's "What's For Dinner?" 06/03

Our lunch today was Thai beef salad. DH marinated the beef overnight, then cooked it on the grill, before slicing it and serving it on the salad, which also had Asian noodles and loads of herbs in it.

I am about to head out to my SnB meet-up, which means cake!

Tomorrow I have my appointment at the hospital to arrange my breast surgery and follow up treatment. I am making a list of things to ask, as I know I will forget something.

I don’t know. I have to wait to see if DS is eating with ex or not. If he does I’ll just have leftovers. If he comes home then I’ll make a frittata.

I don't know what is for dinner tonight yet. We have some steaks and some salmon. We have chicken. Also DH has been indicating he wants Mac and cheese. It is his favorite thing I make. And he requested chicken fried rice for sometime this week.

jeremysgirl, how are you doing today? You are a great mom. Your dd will learn to appreciate you and realize that she is very lucky to have you. BTW-your photo yestereday was lovely.

Delta Dawn, your dad is in my prayers. Surgery should fix things for him.

sueg, once you have a plan my understanding is that it gets less daunting. I'm praying that you'll need minimal treatment. Soon, this will be past history and you'll be thriving.

Sil and ds are coming back from grandma's house today. They'll have takeout from a really good burger joint here and then sil will fly home.

Thank you for asking scrapmaven. I just so appreciated everybody's kind words yesterday. I just couldn't contain my emotions yesterday. I am usually pretty level but it was just like this incredible overwhelming surge of emotions. There had been three days of really difficult interactions with DD. And she had dinner with my mom on Thursday and of course my mom fed the drama. I had to bite my tongue because I really wanted to tell her off. But I know it wouldn't be worth it.

By the end of the ceremony I was alright. And then we went to dinner and had a nice time. DD and I have been exchanging pics this morning and she got some good ones. I don't even know how I'm going to scrapbook them. There's just so many. I am feeling like maybe I should just make a whole book of graduation pics.

I sent this mug to my "stepdad" this morning. He and my mom have been together for 18 years. He got a huge laugh out of it. We have a family joke that my brother was mom's favorite and my sister is dad's favorite but I am step dad's favorite!

I made soup this morning since the heat went away and it’s only going to be in the 60s for a few days. I’ll have soup tonight and for lunches this week. I have steak tips marinating that I’ll grill for dh and dd. Dh can handle the sides 😊.

Haha! CarefreeSadie...the race is on here...Jeremy is a huge fan. I am doing my usual...crocheting and peaing with my earbuds in.

So if you remember a few weeks ago my dogs ate my loveseat. Well we bought new chairs and they came on Friday. We've been chasing Amelia off the chairs. But then Bree came up and decided to sit in the chair. Here's Amelia giving her the evil eye.

hop2 Bree rules all the animals. She's the queen in this house and she let's all the other animals know it.

I know that I haven’t participated in a while. It was because of the infection that I had on my face. So from the middle of March until last week, I really haven’t felt like cooking. My family ended up eating a lot of processed foods and we ordered food in. 

But tonight we are having pork baby back ribs, corn on the cob, mashed potatoes and spinach salad.

I'm going to make the Greek burgers and Greek salad I'd planned for last night because everyone abandoned me. 

DH ended up going to a university fundraising dinner/auction at the last minute subbing in for someone else, DS ended up out with friends and DD was working. I love my alone time but kind of felt dumped last night and was in bed before everyone else starting coming home. DD works at a trampoline park usually hosting parties. She made $350 in tips yesterday, half of which was for one party! Seriously, she was tipped $175 for a 7 year old's 2 hour birthday party!!   

The pancake talk has me wondering why no one makes them here anymore. I love the Joy of Cooking basic recipe and make them thin & small, with whatever fruit is handy (apples, banana, blueberries, etc.). The best way to eat them is cold with peanut butter and strawberry jam.
