Tonight I am having a chicken thigh with ratatouille. Chicken because the pack I bought yesterday had 2 in it, and it's just me again; ratatouille for France, in our continuing World Cup theme meals.
Australia have just gone out of the World Cup, losing to Peru in a game they needed to win. They also needed France to beat Denmark, which ended in a draw, so wouldn't have gone through anyway.

sueg - way to go on the meals you are making to honor the World Cup. It is truly inspirational - Arrows of gratitude to you for ideas for all of us to get out of our ruts! I still have sausage left from yesterday so we are having sauteed yellow squash with onions, sausage, and quinoa. A salad, too. And fresh mixed berry cobbler. Thanks for the thread. I hope acupuncture yesterday was heavenly.

So last night I was even more tired and grouchy than I anticipated so I just fridge grazed and didn't actually cook anything. So tonight will probably be the prosciutto and parmesan ravioli with the roasted veggies. And why is it only Tuesday??? This is going to be one of those slow weeks isn't it?

Sadly, the Great World Cup Menu Challenge will probably end this weekend. I will be going into hospital on Monday for my surgery, so won't be cooking most of next week, and I doubt DH will keep it up, as he will want quick and easy to fit around visits. So, we're on for tomorrow and Thursday; Friday is a 'rest day' (and we are going out for dinner any way). Not sure what I'll do this weekend.

Guess what I did yesterday? I joined a gym! I realized that over the summer it will be harder to maintain my 12,000 steps a day because of the heat so I can supplement them with trips to the gym. It's free with my Kaiser Senior Advantage and they have great classes such as Zumba Gold, Spinning and Line Dancing! In the small world department, the manager who signed me up has a son who was in DS's kindergarten class in the Bay Area!
I think Lasagna for dinner. We're going to see Jurassic World today!

I want to eat @ marianne house! PolarGreen12 I agree with you. My damn week is crawling by so sloooooow. I am slowly introducing a vegan diet. Tonight will be a salad. There will be spinach and veggies and beans with some vegan Tuscan dressing. I am thinking there will be a baked potato on the side. I am already seeing that my family is digging in their heels on this. Last night both DH and DS complained that we had no food in the house. My response was...there's plenty of fruits and vegetables...

Tonight we are going to have grilled chicken, cauliflower and spinach salad.
I made this cauliflower last night from a new cookbook. The Whole Smiths Good Food Cookbook. It was soooooo good!!!
Heat oven to 425 put parchment paper on sheet pan
Cut cauliflower into florets (put in bowl)
Melt 3 TBS or ghee or butter drizzle over cauliflower
add 1 tsp lime zest
2 tsp of lime juice
1 tsp salt
1 tsp chili powder
2 Tbs nutritional yeast (I bought a small amount from the bulk section of the grocery store)
Toss until everything is coated. Bake for 25 minutes.
It was so good, Kait and I scarfed it up!!
ETA.... I wanted to tell you about a couple of neat things that happened recently. Today I will share this...This past Saturday morning my dh, Kait, and myself were at a local restaurant for breakfast. There was this sweet older couple sitting near us. We exchanged some pleasantries and then went on with our breakfast. They finished up their meal and left. When we went to pay our bill...our waitress told us that the couple had paid for ours and that they said it was so nice to see a family enjoying each other so much. What a sweet blessing that was to us.

I’m helping my dh get organized and picked for a trip he’s taking later in the week. He’s a disabled vet and is heading off to a specialized sports camp for several days. He’s looking forward to it, but I have to admit that I’m feeling a little anxious about actually being at home alone while he’s gone. I haven’t been totally alone for any length of time in 26 years  I was pregnant with my older dd the last time I was alone(he was deployed). lol Sooo, while I’m kind of looking forward to it, I do feel slightly anxious as well. All of that to say, I don’t know what’s for dinner...lol! We have some steaks that need to be cooked, so maybe he will grill them and I’ll cook some vegetables to go with them.

I will be on my own tonight, SO's work was invited to the Brewer's game from a vendor and they get to have their box. Free food and drinks for the game!! That will be a good experience for him. I don't think he's been to the new stadium since it was built. I will enjoy the time alone.  As for dinner, most likely junk!

Oooohhhhhh......DD and I visited my uncle today. He has a beautiful Dølahest mare, Chestnut with flaxen mane and tail and a white Star and nose (she is also one of the kindest horses I've ever met), and she had a colt three days ago. OMG, the cuteness! And he looks nothing likes his dam, black as the night and not one white hair on his body. Those long foal legs that he is not in complete control of yet, the wavy coat....*sigh. Baby animals are the cutest there is.
Oh yes. Dinner. Salmon wraps again, because the kids asked for them.

I shared this fish platter with gar at the mini UK pea meet-up in bath, followed by limoncello cheesecake at lunchtime. So dinner for me was some homemade rhubarb crumble with evaporated milk that was in the fridge and needed to be used up

I'm keto so I'm making a chicken philly casserole. It's so easy - cook chicken, onions, peppers, and garlic and then mix with cheese, cream cheese and mayo and bake for 30mns. It makes me happy just thinking about it  I hate diets!

I'll continue praying for you for your upcoming surgery! desertgirl.....Oooooh, I've been craving berry cobbler lately !! marianne......Crab legs with lotsa BUTTAH sounds sooo good! I've been wanting to make many seafood dishes since the weekend, but I still haven't! leannec...I saw your post from yesterday; sorry you've been feeling depressed! I hope you're feeling better today! (( hugs )) I'm having a MILDLY difficult time the last 2 days.  I've been doing SO well lately, this is very disappointing! I'm hoping grocery shopping and making something extra yummy for dinner will help. Also, scrubbing the kitchen afterwards should be therapeutic.

For our dining pleasure this evening we will be enjoying food, hopefully cooked in some way (probably more of those 8 dozen eggs we are enjoying)........I agree this week is going slow, it seems like Thursday and it's only Tuesday.......all the games today have been cancelled because of the flooding. I am taking the 12 year old to the pediatric dentist tomorrow because her mother got called into work after the appointment was made and I am hoping I can get to that town, one of the bridges between here and there on the 30 mile westward road was closed today because water was over the bridge a foot high.......hopefully the crest will be gone and we can just drive straight through.........or we will be finding a go-around somehow.........

This week is VBS for our church. We have it in one of the buildings at the fairgrounds. Today there were 99 kids there!!! Lots of kids and lots of fun. It's only been two days and I am so tired lol. Next week Ods goes to bible camp (5th-7th) and then on the 8th we head down for a Giants game on the 9th. We all are counting down the days!! Our plan is nachos - ground beef, black beans, blue corn tortilla chips, tomato, avocado, olives, cheese, salsa, sour cream and a squeeze of lime. Yum! I could eat nachos everyday

And I'm just feeling like, I provide a healthy meal. If they don't want to eat it, that's on them. And really, is it a crisis if there's no potato chips and ice cream? I think not.
