quick and easy cold dinner at my house tonight - I did a platter with cheddar and edam cheeses, grapes, some laughing cow wedges (Aldi version thereof), pretzel crackers and summer sausage (which only DH touched) and then sliced up some italian bread.

Hi I made fettuccini with meat sauce, broccoli, cauliflower (cooked separately because I don't want cross contamination of flavours), mushrooms with tomato stir fry and cucumber slices. I think I am officially sick of vegetables at this point. I did not eat any of the cauliflower, tomatoes or mushrooms for the record. I was told dinner was very good, though. I thought it was really good, too. Hunger did play a role in this and I am the first person to admit I eat pasta until I hurt. Pasta was created by God and meant for this human to enjoy!

cadoodlebug, good for you for joining a gym with fun classes. scrappintoee, try to remember that the meds aren't perfect. You will have days where the depression creeps in, too. On those days just remind yourself that this is just a hard day and you'll feel good very soon. You're doing so well. jeremysgirl, since Jeremy is going to work locally, can he also do some of the cooking? You work full time and can't and shouldn't do it all.

Tonight is guacamole burgers,salad and some other vegetable, jeremysgirl- no way would I expect my family to go vegan just because I wanted to. I know they would be planning and cooking their own meals. The problem is, my family wants it both ways. They want me to cook for them. They want me to shop for them. They want me to do all the work. And I'm just feeling like, I provide a healthy meal. If they don't want to eat it, that's on them. And really, is it a crisis if there's no potato chips and ice cream? I think not. Not a crisis if there isn't potato chips and ice cream - imo, both are a treat not a pantry item. But every family is different.
I think if you're planning, shopping, and cooking - then you get to choose the menu. My girls each cook once/week during the summer (11 and 18) and they plan what they want to cook and make sure all ingredients are on my weekly grocery list. I won't tell them they have to cook vegetarian or low-carb or what have you...I do require at least one vegetable though 
But the other 5 nights? I take input but for the most part, I cook what I choose to cook which at the moment is starting to trend more lacto-ovo vegetarian. Now everyone is allowed 1-2 items that they can refuse - I don't eat lima beans for instance and one of my kids gags on tuna -and I don't cook with those items generally (or cook in such a way that the item can be left out - ie I won't make tuna casserole but I might offer beets as a salad component but on the side so DH who detests beets can skip them). DD11's list of foods she likes is shorter than the list of foods she doesn't like - I don't work around a long list like that. I do try and have something on the table every night that each person will eat but sometimes that's applesauce(*unsweetened).
