Today is a very busy day. Now I have acupuncture on Tuesdays. At least my busy day starts w/the most blissful part of the week. Then I have more appointments, one of which includes a much needed haircut. Last night I made chicken noodle soup in the IP. We have plenty for a leftover night tonight. Every time I see you post about acupuncture scrapmaven I think to myself, I really need to try that. lol Along with the 30-something other things on my to do list. I've been eating out too much for the last week because of the chaos, but I can't do it anymore. Feel so crappy. Bleck. So dammit tonight the plan is stir fry. Broccoli, water chestnuts, mushrooms, edamame, carrots, and sugar snap peas with chicken. Serving over rice with a sesame peanut sauce. Dad is supposed to go home today. Should know for sure in the next hour, once the doc comes by. They delayed it from yesterday because his BP is still so high. It's been up in the 200s. They've gotten to come down to around 170 and stay there. He's frustrated and just wants to come home.

If nothing else it will fully relax you and you could really use that right now. I pray that your dad's bp comes down to a normal rate and that he's discharged and doing better. Meanwhile, your dinner, once again sounds so yummy.

We went on a trip to Oslo today, mostly because we were craving cake. (If anyone wants to have a look at them, check out Pascal.no, but be warned; the pictures alone will probably make you gain weight). And since to cakes each weren't calorie-ish enough, we had burgers for lunch (and now I'm at home, drinking tea and eating chocolate. Thank you, mom, for good genes re. metabolism). Found a DVD and a book for DD, so she was happy as well (yes, of course she had cake as well, but I'm not sure if she truly appreciates the deliciousness of them).

I usually do Tuscan/Italian on Tuesdays, but serving a Mexican pasta dish yesterday made it difficult to come up with a dish that fit my theme and didn't include pasta. That's what I get for not having a meal plan. Anyway, I decided to make Tuscan tuna wraps and some sort of salad.

I just threw some pork chops, onion soup mix, potatoes, onion, carrots and a chicken stock/honey mustard sauce into the crockpot. Hopefully it's edible. Otherwise, we'll just have to punt.

OMG miominmio!! Those are worth the extra calories. Which one did you chose?? All look fabulous. I think it will be the chicken thighs tonight, we did leftovers last night as we watched the truck being towed to body shop. SO worked so hard for this truck, it has been his dream truck since I have known him. I feel so horrible. Hoping it won't take too long to get fixed. Hoping your dad gets to go home today PolarGreen12. Have a great relaxing time at accupuncture, scrapmaven. My dad has been showing great improvement since he started in June.

I have some pork chops to use and I have a sample packet of Penzeys "Florida seasoned pepper" to use on them. No flippin' idea how it tastes, but it says to use on pork chops (among other things). With those, I guess I will make some sort of potatoes and green veggies.

I went to the farmer's market in Grand Forks, British Columbia with some friends this morning and got some yummy raspberries and nectarines as well as lettuce, green onions and garlic ... it's just a small local market but everything is so good I'm just hanging out at the condo today to do laundry and read ... lazy vacation afternoon We're grilling bone-in pork chops tonight ... I'll make a Caesar salad as well I really want to try acupuncture too scrapmaven I hope your dad is able to go home today PolarGreen12

Happy Tuesday friends
We got a box from Omaha steaks today, so DH has a choice of hamburgers or steak. Either way, I'm roasting some broccoli for him. I'll be having a smoothie.
I tutored a couple hours today and DH finished up the last couple tests and paperwork for his new job. It's actually been fun having him home with me the last couple weeks. It looks like we'll both be back to full time work early next week.
My poor car is back in the shop. We're on the fence about getting a new car. In recent months we've put so much $$ in this one, I feel I need to drive it a year or two more.
PolarGreen12, all the best as your family faces the next challenge as your dad comes home.

scrapmaven , I am hoping that you have a wonderful day! PolarGreen12, I hope that your dad gets to go home. hop2 I am glad that your doctor is happy. DH wants DS to practice driving. So they may go to the store after work to pick up a few things. Including homemade Chinese food and Sushi. That would make it easy for me. If not, leftovers.

For our dining pleasure this evening we will be enjoying chicken gizzards.....fried and then cooked slow until tender......there probably should be some sort of vegetable and fruit but we shall see if that happens........
I tried two times to post on this thread and my post got lost and went to that "we are having troubles" screen......bummer.....

CarefreeSadie, can my DH have dinner at your house? Chicken gizzards are one of his favorites and I have never/will never make them. While he eats with you, I'll be on my way to miominmio's bakery. PolarGreen12, hope your dad gets sprung today and cooperates with his recovery plan. hop2, glad you didn't get quarantined with some rare ID and hoping you feel better. I had planned to make Korean Tacos for dinner until I realized I am the only one home tonight. I might still make the filling so it is ready for tomorrow just in case DS comes in from work starving. Or maybe I'll just not bother. It could be an apple and cheese dinner for me.

We finally snuck in grilling those Italian hotdogs between the rain. They were so good! Not quite sausage not quite hotdog but tasty.

The mango slaw was good enough on it's own. Next time I'm putting some black beans in it. It could be a side dish all on it's own. The cauliflower was good too. It was drenched in coconut milk then breaded in panko and shredded coconut. Then baked.

The boys had pizza at the football club. DD cooked dinner for us: grilled salmon, roasted cherry tomatoes, broccolini, cous cous. It seems that quite a few people on the board are having pork chops tonight. I think I might make my Vietnamese pork chops tomorrow. Thanks for the ideas girls! jeremysgirl they look delicious! My reaction to chicken gizzards is the same as yours AussieMeg! When we get a chicken we remove the gizzards and cook them for our dog. She loves them. Me? Not so much.

PolarGreen12 ---I'll bet your Dad is happy to be home! I've been praying for him, and I pray they provide him with a home health nurse!!! I say that because you mentioned it's been difficult to get that covered, which REALLY ticks me off...ugh! We had huge salads with grilled chicken breasts. I've had ummm.....a bit of a "problem" with ice cream lately. I want it every night, but I just can't do that! I lost a lot of weight in the past year and can't gain it back!
