Wheatless Gingerbread
9x9 pan Preheat 325 Stir together 1 1/4 cups rice flour 1 1/4 cornstarch 2 tsp baking soda 1 tsp cinnamon 1/4 tsp each cloves and ginger
Mix together: 1/2 cup sugar 1 cup molasses 1/2 cup soft butter 1 cup boiling water
Add and stir well: 2 well beaten eggs
Bake in a greased pan 60 to 70 minutes or until it tests done.

My first time in this part of the boards. I wish I had seen this earlier! I may have tried it for Christmas! I may still try it. I want to try and eat gluten free. I don't have celiac disease, but I notice when I eat too much foods with gluten in them, I get very achy in my joints. My arthritis flares up big time. I'm sick of being achy and sore all the time.
