I bought myself this cookbook for Christmas. It's hilarious and the recipes I've made so far are delicious. (No, we're not vegan, just trying to incorporate more plant-based meals into our diet.) Thug Kitchen: Fast as F*ck
UPDATE: I made another recipe, which also happens to be available on their blog. DH and picky youngest child are sucking it down enthusiastically. Very tasty! (If you don't care for chard or can't find it, I'm sure a few handfuls of baby spinach would work just fine.) Swiss Chard and Tomato Linguine with Balsamic ChickpeasI reduced the olive oil significantly but honestly probably could have skipped it and not missed it.

We are also trying to make healthier choices and BFF, a vegan, recommended the original. We haven’t tried too many, but unfortunately, haven’t found any we love yet. Any recommendations? Haven’t gotten rid of it yet because it is a fun read

What has been your favorite recipe so far? I made the curry soup with soba noodles (great flavor, but we found out we don't like tempeh, so I'll probably sub chickpeas for that next time). But our favorite was tonight - I made the maple-roasted sweet potatoes and served it over the coconut-lime rice and added a can of low-sodium black beans. Topped with a little cilantro. Delicious!

Don’t give up on tempeh, IIRC BFF had to work with it a lot to find a way to cook it where her family liked the flavor and texture. She has always been an amazing cook and said learning to cook vegan (well) has been like learning to cook all over again.

I got one of her cookbooks once from the library and I think I remember it didn't have pictures for every recipe and it was in black and white. I don't read stories on recipe blogs, I skip straight to the recipe. Thug kitchen has not been one I've followed.

I have one of his cookbooks- LOVE his enchiladas. There is another website/facebook page that is about eating whole foods/plant based and cursing. 'Cause they do go together: Clean Food Dirty Girl While she does have a batch cooking menu plan you pay to subscribe to, her facebook group is great fun--
