Dh is bringing home Chipotle. He wants a burrito and he works right near Chipotle. I'm going to the store so that I can make some dinners for dh, this weekend. He's so easy to cook for and cooking for one isn't nearly as difficult as I thought. Dh finds recipes that interest him and I make them.

DH and I are going for wood fired pizza tonight at our local brewery - followed by dessert with the girls at the annual "Cake Shake". It's the kickoff to this weekend's Mardi Gras festivities - people in the community donate cakes and and they invite everyone to come sample the cakes for free at our local historic theater - they've hired a jazz band too, so it should be a ton of fun. I'm finishing up a Nutella Torte this afternoon to take to the Shake. Happy Friday everybody!

Happy Friday All
Dh is making beef stew which I love and even better that I don't have to cook it. Hopefully there will be leftovers so I don't have to cook tomorrow too.
The weather is finally reasonable for this time of year (about-5C) and not stupid cold so I hope to get out and chop the ice off my driveway so you don't take your life in your hands every time you walk on it.

There is a Costco run planned this morning. DS's passport needs to be renewed so I'm making him come along to take photos.
Depending on what looks good, dinner could be anything from salmon to rotisserie chicken.
Hope all is well with everyone heading into the weekend.

We are on our way to Sarasota and will hope to eat my aunt’s delicious supper.
Fog and driving rain and big trucks and horrible slowdowns. We’ll be salivating the last few hungry miles.

View AttachmentHorseradish Meatloaf sounds like something we would like... do you have a recipe? • Horseradish Meatloaf • 2 pounds ground beef (I use Costco’s lean.) • 2 eggs, lightly beaten • 1/2 C. dry bread crumbs • 1/2 C. ketchup • 1 T. horseradish • 2 t. Worcestershire sauce • 2 t. salt • 1 t. onion powder • 1/2 t. black pepper • 1/2 t. mustard powder • 1 clove garlic, minced • 1-2 T. chopped fresh parsley • Sauce: • 1/2 C. ketchup • 3 T. brown sugar • 1 T. horseradish • 2 t. spicy brown mustard • 1/2 t. mustard powder • 1. Preheat oven to 375 degrees. • 2. In a large bowl, mix all meatloaf ingredients together well (Although messy, it’s easiest to do this with your hands). Press meat mixture into a 9 x 5 inch loaf pan or form into a freestanding loaf in the center of a baking sheet. (I put a piece of foil in the bottom of a pan then put foil over a rack on top of the pan ~ punching small holes in the foil to let the fat drain. Then I make a freeform loaf about 9 x 5 or so with a flat top.) • 3. In a separate bowl, whisk together the sauce ingredients. Spoon half of the sauce mixture on top of the meatloaf. Place meatloaf in a preheated 375 degree oven and bake for 50 minutes. • 4. After 50 minutes, remove meatloaf from oven, spoon remaining sauce over the top and return to the oven for 10 minutes. Remove from oven and let cool for an additional 10 minutes before slicing.

We always take our passport photos at home against a white/light colored wall. We started doing this after a local place that takes passport photos totally screwed them up. Just read the requirements, take the pictures, crop to the required size and you're good to go!

I want that cake! schizo319 Today seems off to a good start. I'm on my lunch break right now. It has been busy at work. I plan to hit the grocery store after work. I told Jeremy he was responsible for dinners this weekend. So we'll see what he chooses to cook. It's just an ordinary chocolate cake with Nutella Mousse (1 part Nutella and 2 parts heavy cream whipped and folded together) as frosting. The decorations make it "fancy" (and kinda expensive to make), but it's super easy. Enjoy your cooking-free weekend!

Hang on, sisters, hang on to your hopes and dreams. ❤️ I needed that. I feel like I’m hanging on by the thinnest thread. This is month 32 of what was supposed to be 36 months of my daughter and granddaughter living with us. I need my daughter to live somewhere else in a very bad way but want my granddaughter to have the safety and security of living with us forever. Man this is so difficult. I went to Panera for lunch with my sister and brought home half of a sandwich. I may eat that or I may cook some pasta. Whatever I eat it will be easy.

DH was out all last night, home at 10 am and was pulling out of the garage at 1:45 as I drove back in. Cars passing in the afternoon. Asked when he'd be home and I got a shrug. Bored with leftovers, and yesterday's mention of gyros has me craving them. Think I will order a take away order of gyro from the neighborhood pizza place that also makes a mean gyro. Hoping we are back to a regular routine next week. Hope that everyone has a great weekend that is as productive, or as relaxing, as you want. jeremysgirl - Glad the day is going well so far. Whatever your DH makes for dinner will taste twice as good because you didn't have to do the work! KelleeM - I understand the struggle you are going through as I watched my mom do the same with my oldest niece. Trust me though, that little girl will appreciate when she is grown and you will mean the world to her. Hugs to you. paget - What time should I be there for dinner? Not sure what I am having..something simple as I am headed on a plane tomorrow to Ft. Myers for 10 days. Going to hang out with my parents...my niece and great nephew will be coming from the other coast to spend a couple days. Cannot wait!!

Way back on Valentines I got DH an expensive steak from a local butcher. Since that time, he's never felt well enough to eat it, so I stuck it in the freezer. He's feeling better now and he'll have that tonight. I'll do a baked potato side. Not sure what I'll be eating. I need to start cutting way back on my evening meals. I tend to graze too much and those calories add up.
Today I got my library ready for my Reading celebration week (starting Monday). The biggest event is Monday and Tuesday. I've made sheet forts all over the library and all the classes will come thru those two days to spend 30 mins reading in the forts. Almost the entire library is covered up. I use like 15 king size sheets. The kids love it.

KelleeM , Your dgd is indeed safe w/you and you are so important to her. I hope that your dd is on her feet and able to stand out on her own very soon. cadoodlebug and bc2ca , how is Costco salmon? I never cook seafood, because dh isn't a huge fan, but he does enjoy salmon.
tuesdaysgone, you're such a creative librarian. Your students are going to have a blast reading in their forts. Who doesn't love a fort?

It's been over two months now.

So we will be staying home except for my ODS who is doing a national math championship at the school. Although the teacher in charge sent out an email tonight saying that if the roads are not clear; then they can all do it from home until the roads clear up.
