cadoodlebug and bc2ca , how is Costco salmon? I never cook seafood, because dh isn't a huge fan, but he does enjoy salmon. I prefer to broil/grill salmon with the skin on. Costco's is skinless. I just discovered Sam's has both so I bought a nice whole filet and cut it into 3 chunks and froze 2 of them. It was tasty. My method is easy: I brush both sides with olive oil then sprinkle liberally with salt, pepper and garlic powder. I broil for less than 15 minutes, watching carefully so as to not overcook. Nothing worse than overcooked salmon! Sometimes when it's almost finished, I brush with a little melted butter. We like it very moist but not sushi-like.

fix-itandforget-it.com/blog/2013/03/11/welsh-rarebit/trying a new recipe - welsh rarebit in the slow cooker - I'll serve over english muffins with a side of tomatoes Can I just say that cooking without a stove/oven is getting really old....our circuit breaker (for the stove/oven) needs replacing and DH is taking his own sweet time to get that done. It's been over two months now. Welsh rarebit was one of the National food days I celebrated last year, and it really reinforced how much I’ve enjoyed doing these stupid food holidays because I’d never had Welsh rarebit before and it is sooooo good!!! A perfect homey, comfy little bit of loveliness.

I went to see Evita with my sister and a couple of her friends lasr night. Show started at 7:30, so we decided to meet at the theatre at 6, then grab a bite at one of the cafes there. We ended up getting a salad at a snack bar, as both of the ‘proper’ cafes were totally full. The show itself was absolutely brilliant. Unfortunately, as I was leaving the car park, I bumped into the back of another car. I just can’t believe it - home a week, driving a borrowed car, only going 5kmh. I almost just left the car to get a taxi home, but knew I would probably never drive again if I did that.

scrapmaven my kids forbid me to buy Costco salmon because it’s farm raised and not with sustainable practices. Speaking of salmon I had a cooking class today with my bffs and it was 1 pan dinners. The salmon one was delicious. Ginger-soy roasted salmon with bok choy & shiitake mushrooms MARINADE: 3” piece of ginger peeled & minced 3 garlic cloves minced 1 tsp red pepper flakes 1/4C honey 1/2C soy sauce 2T rice wine vinegar 2T vegetable oil 1/2 tsp ground black pepper 1tsp sea salt 4 (4oz) salmon fillets skin on 6oz shiitake mushrooms sliced 1lb bok choy sliced 1 red pepper cut into strips Green onion thinly sliced Preheat oven to 425 Whisk all marinade ingredients Place salmon skin side down on baking sheet with half the marinade poured on Pour remaining marinade on veggies-toss to coat Layer around the salmon Roast until salmon is cooked & veggies tender with crisp edges. About 20 mins Stir halfway through to baste with pan juices

Last night we went to this bbq place that people at dh’s golf club rave about. Walk in and it smells like a butcher shop. So foul. Lost my appetite. We both ordered brisket. Tasted fine. Could not eat it though because of the smell. Went home with that smell all over us. Made us shower. Dh put his shirt on our bed. Well then the bed smelled like it. So I stripped and washed all that. No idea what got into me last night. KelleeM hugs it must be hard to wait jeremysgirl I hope your ds is improving. I missed yesterday’s thread. I’m at my dad’s. I haven’t seen him for 6 weeks-shameful I know. He’s declined so much. He’s incontinent of urine all the time. House smells like urine. He has a caregiver most of the day. Then one of my siblings in the evening He has so much phlegm. I just want to suction him. He won’t cough it out. His swallowing is terrible. 3 swallow studies say nothing is wrong. But something is.

jeremysgirl Kroger owns home chef. If you have Kroger grocery stores they sell the meals apparently. I thought those were the ones you get delivered.

Hang on, sisters, hang on to your hopes and dreams. ❤️ I needed that. I feel like I’m hanging on by the thinnest thread. This is month 32 of what was supposed to be 36 months of my daughter and granddaughter living with us. I need my daughter to live somewhere else in a very bad way but want my granddaughter to have the safety and security of living with us forever. Man this is so difficult. Sing it, sister. I have soooo been there. It is very hard but so worthwhile. ETA I don’t know why there was an emoji attachment, but I got rid of it. sueg, so sorry about the parking lot mishap. It happens to all of us occasionally. teddyw, I’m so sorry your dad is failing. Everyone gets a hug!!

I buy salmon at Costco only when they have wild whole filets (always with skin on).  Ours only had farm fish today, so I didn't get any, but they do usually have both. DH and friends fish off northern BC enough to spoil us for the taste wild salmon. Both your recipes look fabulous. I also like to marinate salmon with olive oil, lemon juice and dill. I cover the top of the fish with lemon slices before broiling or grilling. Another family favorite is to cover the fish with a mix Greek yogurt, garlic, dill and lemon juice (essentially tzatziki sauce minus the cucumbers). scrapmaven , Trader Joe's has been getting in nice wild salmon recently. Their portion sizes are better for cooking for one or two servings.
