I was asked on the Thanksgiving thread, so here it is:
Turnip Puff
1 turnip,cubed
1 carrot, sliced
1/2 onion, chopped
1/4 c butter
1 tbsp brown sugar
pinch grated nutmeg
Put all of this in a pot and cover with chicken stock (recipe calls for 1 & 1/2 cups, I just pour until all the veggies are covered)
Bring to a boil, then simmer 45 minutes or until veggies are tender
Transfer veggies & stock to a blender (I need to do a couple batches)
Puree until smooth
Cool to room temperature
Add:
2 beaten eggs
2 tbsp flour
1 tsp baking powder
salt & pepper to taste
Can be frozen at this point
OR
Butter 6 cup casserole dish
Bake uncovered at 350F for 30 minutes or until golden brown
I always use a blender - it gets baby food smooth. I found I couldn't get it smooth enough in the food processor or with an immersion blender.
Next to stuffing, my favourite part of Thanksgiving!!
