Happy fourth. I. Don't have time to read the thread, but I'll catch up over the weekend. Mil is moved and that was a very busy day. Today we'll take her to buy a recliner then take her out to dinner.
What's on your menu?
Monday I am having surgery. Can someone please start the dinner thread on Mon/Tues?

Happy Independence Day! We’re eating more grilled pork with macaroni salad and corn on the cob. There’s fresh ground beef for burgers as well and plenty of goodies from the box I bought from Lovebug2867 for desert!

Happy 4th of July to our American peas! scrapmaven I am praying that your surgery goes well! cadoodlebug I will be your back up. Today I am making hamburgers, hotdogs, potato salad, macaroni salad, green salad and an Apple pie. We are setting off fireworks tonight in our yard.

scrapmaven - I hope all goes well next week. For dinner tonight I am making satay chicken. The chicken is currently marinating and DH can cook it on the grill once he's home. I am going to cook some rice to serve with it, and maybe make a salad.

DH is watching the hot dog eating contest...I.just.can't!! Yuck! I love the participant introductions, but I leave the room once the hot dogs come out.
We usually do a family/friends cook out on the 4th, but with FIL sick this year is not too festive. We will cook out hamburgers tonight (tomato sandwich for me) with watermelon, potato salad and chips.
We are just staying close to home today and relaxing.

Good luck with your surgery scrapmavenWe are still out of town at a baseball tournament, The boys don't want subs or pizza or fast food and we don't have time for a sit done dinner as they play at 6 so I am taking a bunch of them to the grocery store and they are going to get something from either the salad bar or hot bar. I will have whatever catches my eye.

Grilling burgers, potato salad, green salad, corn on the cob cooked in the instant pot, watermelon. Pretty classic 4th foods.

I think we're doing burgers and weinies on the new gas grill but the skies have been darkening and thundering so who knows. Whatever happens, we're just having a quiet 4th here. Hope everyone has a happy and safe holiday weekend!

Happy 4th of July! We had a line of thunderstorms come through in the wee hours, but they have moved out and the weather has cleared up. DH will be cranking up the Big Green Egg later this afternoon. Today's menu includes a cowboy steak (bone-in rib eye) for him, marinated shrimp & veggies for DD and I. There are also a couple of lobster tails to grill (great sale yesterday!). I'm doing a dish of baked beans as a side. Dessert is in process as I type: a Key Lime Pie and homemade Vanilla ice cream from the Cuisinart maker. Should be plenty left to have leftovers for a day or two.

Sigh! I went to get a letter from my doctor yesterday and found out that he has left the city  No warning ... they are sending out letters to patients right now ... geez, just what I need ... so I obviously was not able to get a letter because the doctor I saw does not know me If it is not one thing it is another We didn't eat the pork souvlaki last night so that is going to be dinner tonight with pita and tzatziki and Caesar salad

We're home from bible camp! It was tons of fun and such a blessing to all. Our boys loved it (and the other 14 kids that came with us!)
We are going to have a very lazy day at home this afternoon/evening. Homemade pizza is the plan for dinner!

Good luck with the tournament, psiluvu! Is it a regional or provincial competition? I'm glad your surgery is scheduled for the beginning of the week, scrapmaven. Hope your MIL finds a recliner she likes and is settling in to her new home. I walked at the beach this morning and it is packed! On the news yesterday they were anticipating people coming down as early as 4AM to claim a spot and I believe it, because it was slim pickings for those arriving around 9AM. We did a lot of fancy grilling last weekend so I'm going low key today. I've made a Caprese pasta salad and a spiralized zucchini version. The plan is to grill a mix of beef and chicken sausages later.

For our dining pleasure this evening we will be enjoying skinless brats that include mushroom and cheese and potato.........I have no idea what we are going to enjoy with those but there will be at least eight of us out at the ranch for food and watching the fireworks............ scrapmaven I am sending healing thoughts your way so by Monday you should have enough of them to heal as you walk out of the hospital.......... leannec I wish something would go the way you want it the first time just once.......hugs! I made a tuna sandwich. 🙄 Usually we BBQ at my sister and BIL’s house, but they didn’t have their party this year. I’m going to watch the 4th of July concerts later on and finish off the crab from yesterday. I need to to learn how to make key lime pie. **GypsyGirl**, do you have a recipe you love? scrapmaven, go easy on yourself this weekend so you’ll feel your best on Monday!

I need to to learn how to make key lime pie. **GypsyGirl**, do you have a recipe you love? Sure thing! It's a super easy recipe I've used for more years than I can remember. Always a hit around here. Key Lime Pie 1 can sweetened condensed milk 4 egg yolks 4 oz. key lime juice (I use Nellie & Joe's ) 1 graham cracker pie shell *Add egg yolks to condensed milk and mix well. Slowly add juice, mix until well blended. Pour into graham cracker pie shell. *Bake at 350ºF for 12-15 min. Refrigerate until ready to serve. Some people will make a meringue from the egg whites, or just serve with whipped cream or Cool Whip. You can also go all fancy and make your pie crust from scratch if you want. I'm usually too lazy! If you want to be a real purist, then you can squeeze a bunch of tiny key limes to get fresh juice. I did that once, never again!

Tonight's fare was Healthy Sausage and Roasted Vegetable Sheet Pan. I know, I also find it entertaining that anyone can put "healthy" and "sausage" in the same sentence but the amount of vegetables far exceeds the sausage so it is relatively healthy. And it's a terrific way to use up the stray ends of vegetables lurking in the corner of the crisper. Easy and delicious.
Hope your Fourth finishes with a bang!

Had dinner at my sister's house she made chicken teriyaki skewers with potato onion packet, coleslaw, macaroni salad, baked beans, deviled eggs and I made cupcakes for dessert we didn't stay for the fireworks. We both have to work tomorrow and I wanted to get home to my dogs

Big block party at dd’s fiancé’s parents’ house. Ribs, pulled pork, so many different salads, hot sides, fresh fruit salad, desserts. Kiddos parading in red, white, and blue with adults doing some parading, too. Lots of fun competitions between the children and several emergency vehicles with sirens blasting, including a hook and ladder truck. Fireworks at dark. FUN! Great day! Thanks for the thread. We have lots of family in from out of town for an anniversary party on Saturday, so we went to MILs house to visit with some of the out of towners. MIL made cole slaw and sauteed onions and peppers, her sister made potato salad and cut up the peppers, onions, lettuce and tomato. I made baked beans and DS grilled burgers, hot dogs, and Italian sausages.

bc2ca Thanks for the well wishes it is the provincial championships. Winner goes to Nova Scotia for Canadians. They won 5-2 against their toughest competition, Windsor yesterday. I think they will meet again in the finals and it will be tight.
