I’m hoping you have some suggestions for me. I’m looking for a stamp set for cards for people with terminal illnesses. I’ve seen sets that say things like kick cancer’s butt, but nothing for when we know that eventually the cancer will win. It doesn’t need to be cancer specific, but I was hoping for something more than “thinking of you”. Any ideas?

That's a tough one. I've made some cards that focus on today - "today is a new day" "hope you have a beautiful day" that kind of thing. I have one little stamp that says "sending strength" which I think is better than telling a person who is dying to be strong (ugh).
If both you and the recipient are religious it may be easier to find sentiment stamps built around "prayers" sentiments. They are often less positive thinking, you can do it! messages and a little more accepting that some things being out of our control, I think.
I think messages about always being in my thoughts (or heart, or prayers) are the easiest to find and work with. I did a quick scan of some of the cards I have made and didn't find any good options for you. But hopefully others will have some suggestions. I make cards for Card Care Connection and could definitely use some better sentiments for people whose illnesses are terminal.

I have a stamp from Rubber Cottage that is specific to cancer. This is what it says:
Cancer is so limited.... It cannot cripple Love It cannot shatter Hope It cannot corrode Faith It cannot destroy Peace It cannot kill Friendship It cannot suppress Memories It cannot silence Courage It cannot invade the Soul It cannot steal Eternal Life It cannot conquer the Spirit.
However, I think I bought the stamp at a convention as a bare rubber, no foam, no tacky back or anything. I don’t know if that is typical of their stamps.
