I was thinking of having Greek chicken and Greek potatoes tonight for dinner. I knew I would have a bit of marinade time on the chicken since I didn't get to run home at lunch and get it started. But it seems every recipe I happen to check says the chicken need to cook for an hour and a half. I assume it needs to cook that long so it sits in the liquid to get the creaminess inside and then another 45 minutes to get the crispy browned edges.
Is there another way to cook Greek potatoes that will be flavorful without the time?

Par boil the potatoes whole, then cut up and marinate/season, then cook them off the rest of the way.

Not if you cut the potatoes into small pieces. I use Yukon Gold or fingerling potatoes, unpeeled and cut into approximately one inch pieces.
Toss in oil, garlic, oregano, salt & pepper and roast at 400 - 425 for 15-20 minutes. Stir, add lemon juice and roast for another 15-20 minutes. Stir and cook a little longer if needed.
