I've been making cookies for the entire soccer team for their ride home on away game days. Monday is their last away game and the girls took a poll and want snickerdoodle and peanut butter. I've made both several different times with different recipes. I'm looking for both cookies to be thick(not spread much) and chewy. Does anyone have a recipe they've tried and love?? TIA!!

My very favorite snickerdoodle recipe is from the Pennsylvania Grange cookbook. I can try to be an adult and remember to post it this evening. My dh LOVES peanut butter cookies. This one is his favorite when I make it.

I thought I remembered reading that shortening keeps them fluffier, but I couldn't remember for sure. I need to pick up some shortening and give that a try.

They will also spread less if the cookie sheets are allowed to cool before you put the dough on them to bake.

I'm pretty sure my snickerdoodle recipe uses only shortening. Very little spreading even with out chilling.
For PB don't use natural PB that requires stirring and refrigeration. It makes a dry crumbly cookie. I use a processed PB like Jiff or Skippy.

I like the recipe from Jiff for peanut butter cookies. It uses butter flavored crisco and doesn’t spread. It stays nice and soft.

I’m not a huge snickerdoodle fan (meaning they’re good and I’ll eat them but they wouldn’t be my first choice), but DH likes them. Last winter I found THIS RECIPE for Cinnamon Chip Snickerdoodles and made them for my family. They all got eaten, so they must have been decent. I’m sure I had a few myself, but with the overload of Christmas baking I do every year it’s hard to remember. I do like the addition of cinnamon chips but they can be sometimes harder to find. Target didn’t have them but HyVee did.

my favourite peanut butter cookie recipe was one I got years ago when we were very poor and received government surplus food - including a big tin of peanut butter. I always use half butter (or margarine back in the day) and half shortening. They are my husband's favourite cookie.
Peanut Butter Cookies, Easy
YIELD 5 dozen INGREDIENTS 2 1/2 C. flour 1/2 tsp. Baking soda 1 C. fat (margarine/butter/shortening) 1 C. peanut butter 1 C. sugar 1 C. brown sugar, packed 2 eggs INSTRUCTIONS Mix flour and baking soda. Set aside. Mix fat and peanut butter. Add both sugars, mix well. Add eggs and beat well. Stir flour mixture into peanut butter mixture. Drop dough from a teaspoon onto baking pan. Flatten with a fork. Bake at 375 for 10-15 min. or until lightly browned.

chewy means more brown sugar than white and don't overbake it.
if you don't want it to spread, chill the dough. or don't put as much butter or add a bit more flour.
