I'm off to an appointment in the big city. Then I'll come home and rest. Dh is having rechauff pasta and salad.
What's on your menu?
KelleeM, how are you doing? It's Dick Martin week on this thread and I pray that you're finding lots of comfort right now, knowing that so many people from around the world care about you and think so highly of your beloved husband and his sense of humor and kindness to all.

I’m doing okay. I think that I’m still in shock. The celebration of life was incredible...there were so many people!
I’m hoping to have a new sink installed soon. One of my nephews said he can cut the opening in my counter to accommodate the new sink and my stepson has a plumber lined up to handle that part. If I have a working sink I’ll cook ziti with chicken and broccoli (and lots of garlic) if not we’ll have Chinese takeout.

Good morning. I'm supposed to be making steaks with mashed potatoes and roasted zucchini. I have a facial at 6 pm today and I can't wait. But then that means I won't get home until almost 7:30 and then I'll have to make dinner which kind of stinks. If one of my roommates would make the dinner, that'd be fab, but I won't hold my breath waiting.
We have decided that our Chinese pie will be made this weekend. We have decided upon a ground beef, cheddar, mashed potatoes mixture. Everyone seems in agreement that this is the way we can enjoy our Chinese pie and honor Dick.

scrapmaven I hope that your appointment goes well. KelleeM I am glad that you were able to get through yesterday. What a beautiful testimony to your wonderful Dick! I hope that you have a working sink by tonight. jeremysgirl Enjoy your facial. Tonight I am going to teach one of the boys how to make sloppy joes using a homemade sauce recipe that I got from one of my friends.

I was out this morning to my old mini-kiga group, as one of the little girls is leaving to go to full time day care. She is a real sweetie, so I really wanted to say goodbye to her and her mum. Also, mum promised to bring lunch for us, and she is Turkish, so that was a big drawcard. I came home full of delicious pride, dolmade, cous-Cous salad and baklava. I even got to bring some baklava home for DH.
Dinner tonight here will be cottage pie.

I'm going to make a big pot of slow simmered vegetable broth today and will use some for a soup tonight. Your dinner sounds fabulous, jeremysgirl, but can't imagine getting started on it that late. Hope you get your sink installed today, KelleeM. I love that your DSs are learning to cook while you are laid up, destined2bmom. Hope the appointment goes smoothly today, scrapmaven.

It's actually chilly here today, so dinner will be soup and garlic bread. As we celebrate Dick Martin's life and the legacy he left behind, I want to share something I did 9 years ago that I just learned about yesterday. A student I had many years ago emailed me and told me what an impression I'd made on her. She remembers me recommending a book and always encouraging her to challenge herself with more difficult books. She recently wrote a paper for a Master's education class and had to write about a teacher who made a lasting impression on her and helped her become a better student: she choose me. I was tearful as I read what she had to say. I don't share this as a brag, just as a reminder that we really don't know what impact we have on others. Dick had a positive impact on many people and hope this brings KelleeM comfort in the days and weeks to come.

Today is a quilting day and exercise day. I really enjoyed the advanced Pilates class I took yesterday and have another one this afternoon. Realized that I shouldn't have held off so long on jumping back into the advanced classes (I've done reformer for 4-5 years before taking a too long break), so will continue on with those. I have no idea what dinner will be, but since I'm working on a quilt, it will need to be quick and easy. KelleeM - I am glad that the Celebration of Life for Dick went well. It is evident that his was a life well lived and that he left behind many friends. Hopefully you will have a new sink tonight. tuesdaysgone - What a wonderful tribute to receive that email from a former student. You are so correct, we never really know whose life we will have a positive impact on.

I just marinated some chicken thighs to make Coconut Chicken tonight. I haven't made it in a few years but it is really yummy and doesn't taste like coconut. (You marinate in coconut milk but the glaze has hot chili flakes!) I'll share the recipe later.
DH and I are playing golf today! It's going to be in the low 70's and that perfect golf weather for me!

I cooked dinner yesterday but was too tired to post. I’m in my second week of training in a new position at work and first week of new puppy. One or the other or both are kicking my rear! Last night we had pulled pork, coleslaw and mac & cheese. Tonight we are having sloppy joes and a couple of sides

Today is DH's birthday, but he has a meeting tonight, so his birthday favorites will wait until Saturday when we can eat them in a more relaxed time frame and not rush. So tonight we are having chicken pot pie and roasted broccoli.

Tonight I will be having dinner with Kait. She feels bad that she couldn't be here for my birthday because of midterms and such. I told her not to worry about it and that I would come in and we could get pedicures and a quick dinner before heading back to campus. I also bought two huge bags of candy to give her to pass out to her residents. I may eat some on my drive in!!
Sending you a Thursday morning hug KelleeM!
That is such a sweet story tuesdaysgone. You really just never know who's life you may touch.
Enjoy your alone time with your husband tonight scrappintoee!
I hope everyone else is having a good day!

scrappintoee, I hope that you're healing well. How do you feel? tuesdaysgone, your student's tribute to you makes absolute sense. I'm guessing that you've made a huge difference in the lives of many of your students. KelleeM, Just keep putting one foot in front of the other. I've felt like doing absolutely nothing today. But ya'll know how that works. Housework and 4 loads of laundry later, my doing nothing is done. LOL
Dinner was leftover pulled pork and I made some boxed mac and cheese. Yep, no veggie and boxed mac and cheese kind of night. We were supposed to have Chinese Pie but apparently I didn't buy ground beef when I went shopping. So that'll be on our menu for Sunday I think.

Meelleek - How awesome that so many people came to share the loss with you. Maybe it and tuesdaysgone's post will be a reminder to all of us to tell people, not just family, that they have an impact in our lives. Be gentle with yourself in the coming days. scrappintoee - I hope you get a good report from your doctor. Enjoy your date night! jeremysgirl - Thank you for asking the burning question of what the heck are Irish nachos. I want to know too! The front that moved through overnight brought us some delightfully cooler weather so we're celebrating that with chicken tortilla soup. Rotisserie chicken will make it come together in a hurry.

I think I am going to make chicken soup using just boxed stock because I didn’t get around to making stock today. We went out for Mexican food at my friend’s place last night, but I still don’t feel like cooking today! I will load up the soup with so much chicken, veggies, and noodles or wontons that we won’t even notice it isn’t homemade.
