I'm making it for another family this weekend. I don't really want to add veggies because kids. I tried it out this weekend and it's good, but needs more oomph. I did add more seasonings, but that's not enough. I was thinking maybe sauteeing some onions and fresh garlic maybe? A different cheese? tastesbetterfromscratch.com/chicken-noodle-casserole/

When I make a bechamel sauce (I know this isn't one), I sautee onion and garlic and then add it in to the sauce. I also add paprika and nutmeg. Nutmeg gives white sauces that oomph.
It may also need more salt

I couldn't do the cottage cheese. I would have to sub in ricotta. Add some green onions and fresh parsley. Top with some biscuits?

Did you season the chickens really well? That should help. I would also sub out the Mozzarella and use Beechers white cheddar. Beechers isn’t cheap but it is good. I buy it at Costco or Trader Joe’s. Another idea is to sprinkle the top with bread crumbs mixed with a little melted butter.

I was going to say use a sharper tasting cheese. I would maybe think about the onions as kids don't always like those as well. Garlic doesn't seem to go with chicken and noodles either. I know the recipe says low sodium chicken broth, but maybe not use that and use regular and/or dissolve a chicken bullion cube or glandular into the rue to give it a stronger flavor.

addition of onions sounds good. i make a similar hamburger casserole, and we crush up a half sleeve of ritz crackers on top. it's buttery and crispy and tastes awesome. since ritz go with chicken noodle soup, i bet they would be great with this too.

More salt, fresh sauteed onion and garlic would a good start to add more flavor. I'd skip the basil and add a TBSP of oregano, tarragon or rosemary.
As much as I love a sharp cheddar, it is a much greasier cheese to work with than mozzarella so I'd concentrate on adding flavor with herbs rather than changing the cheese.

Forget the cottage cheese, use ricotta and some cream cheese.
Use good mozzarella.
Add a bit of mustard. It works. You can use powered onion and garlic. This is what is missing because you aren’t using the cream soup. Or fine dice each.
A touch of nutmeg. Forget the other herbs, you are making a cheese sauce, nutmeg is what you use.
Use flat leaf parsley, and not to much.

My chicken spaghetti recipe (Pioneer Woman) calls for diced red and green bell pepper, plus onion. Most kids seem to like red peppers, at least. Maybe add some of those for flavor and color? They can always pick them out if they get freaked by vegetables! I was also going to suggest sharp cheddar instead of mozzarella, but bc2ca says no and I trust her cooking judgment more than I trust my own.

My dad used to make a macaroni and cheese dish and he added chopped tomatoes to it. It sounded weird to me though. Then I ate it. It was delicious and the tomatoes with all that melted cheese was the right touch. Just not too many of them.

I’d switch out the cottage cheese for a cream cheese buffalo sauce. Melt a stick of butter add 1/2 cup franks hot sauce I packet ranch dip or dressing mix and one brick of cream cheese. It’s a nice mellow kick and it’s great on pasta and chicken.

Also maybe asiago instead of parmesan? Or gueyer? Not sure if I spelled that right. I think you are on the right track. I just checked Martha Stewart and Ina Garden’s Mac and cheese recipes and they both use gruyere cheese in addition to sharp cheddar. Gruyere would bump up the flavor for sure.

A small pinch of cayenne will make the flavors pop. I agree with the bechamel and ricotta suggestions. Also, you could get real Parmigiano Reggiano or Grana Padano instead of parmesan. Gruyere or Compte are also very tasty and relatively inexpensive at Costco. Making your own chicken broth is really easy and chicken legs are inexpensive.

I guess I'm just visioning chicken and noodles, chicken and dumplings as a bit more bland/milder food while thinking of garlic going in spicier foods like Italian or Mexican. I LOVE garlic and I would put it in there for me, but thought it might be a shock flavor to those that are thinking traditional chicken and noodles. (Maybe American style lol )

I would add poultry seasoning. I make a somewhat similar recipe that calls for poultry seasoning. I would also use fresh garlic sauteed or up the garlic powder to at least 1 teaspoon.

I think you have some excellent advice here. I use Better Than Boullion base instead of chicken broth or cubes. It has less salt and more flavor. When it’s salty enough, you’ve added enough base. If you want to keep the flavors similar, add fresh basil instead of dried and a half teaspoon of turmeric. Turmeric really adds a chicken flavor without salt. Don’t overdo it, but a lot of times when a chicken recipe is lacking, I’ll add some turmeric and I’m happy.

An easier way to get a deeper more homemade chicken soup flavor is to add a sooonful of better than bouillon roasted vegetable base. It brings a richness that you may be missing.
