I make these quite often- they are my daughter's favourite dessert.
I don't like the puff pastry that I often see recipes call for, I find the centre gets soggy and chewy. I prefer to just use pie crust pastry that I put in either muffin tins or tart shells. I usually make apple pie filling and put a bit in the bottom of the tart. Then you roll the rosettes the exact same way, and place it on top. It makes them taste a bit better.
I usually make a chai creme sauce for them, or my husband likes Bird's custard, so we kind of float the roses in a bowl of custard. They are also lovely with a bit of caramel.

I went to a baking demonstration this summer and the instructor made these using strips cut from egg roll wrappers (they were larger than typical wrappers and she bought at an Asian grocery) with apple cinnamon jelly spread on them. She made them to fit in mini muffin tins. Also in the class she demonstrated the same technique using pepperoni. Here again she did them in mini muffin tins. She brushed the egg roll wrapper strips with pizza sauce and used pepperoni that were cut in half instead of apples. They turned out CUTE!! She talked about how her sons pop them down so fast while watching football... My daughter and I decided that was too much work for a bunch of teen boys. haha

I've seen the photos all over the place and dismissed them as I figured it would be one of those projects that would take forever just to get to the end. Who knew it would be that easy???
I don't care for apricots though, but I bet the apple pie filling would be really good. On the list it goes!!

I wonder if orange marmalade would be a good substitute for the apricot jam? I watched a couple other video's and they just used melted butter. So I think there is no wrong way!
These actually look somewhat simple, considering how beautiful they look!

I made custard pie with a shortbread crust for dessert last night, and topped it with apple roses. It was pretty.
