probably but it would depend. One of my grocery stores carries really large chicken breasts, like 1 breast=2 cups. The other has more normal sized ones.

cook shred and the weigh it you would be looking for 16 oz

I would think that 2 large chicken breasts would be the equivalent of 3+ cups. So you should be safe with extra to spare!
