Granted, I have an ick factor when it comes to meat, but my MIL wanted to buy a pot roast yesterday (Monday) to cook on Friday. I told her no. I won’t eat beef that’s been in the fridge that long. She was kind of put out. I will buy beef and eat it the next day, but not after it’s been in the fridge for more than that.
So, how long will you keep beef in your fridge and then eat it?

I go by the Sell By Date on the package.

Roasts can be kept safely in the fridge for 3-5 days. I personally do not go past 3 days. I saran wrap it well and keep it in a freezer bag.

I will go a couple of days after the sell by date. You could easily go to the store on Friday and buy a roast that is already on the shelf today, just depending on when the delivery was made to the store. Why would it matter if it sits on the shelf at the store or in your mom's fridge?

I only shop once a week, so having meat in the fridge no more than 24 hours is unrealistic. Generally you can go 2-3 days past the sell by date for whole cuts like roasts, unless it looks or smells weird. Ground meat is more iffy - I won’t use it past the sell by date.
If you’re worried, you could pop the roast in the freezer until Friday.
Keep in mind that if the sell by date is Friday or later, it will just sit in their refrigerator case until you buy it for Friday. Yours or theirs - still sitting in the fridge. They don’t magically put out fresher roasts in the intervening time.

We typically buy our beef half a side at a time, so all of our stuff is frozen solid. It takes two full days just to thaw out in my fridge! If I bought beef at the store I would go by the sell date. As others have noted, whether it sits in their fridge or mine it’s the same beef.

We generally go by the sell by date, but our grocery store is iffy so we only buy from them right before we're going to cook (and we try to buy from local farmers as much as possible because of this). If it's from the grocery store, we try to cook within 1-2 days, and we want a sell by date that's at least 5 days away to give us a little bit of cushion. If not, we freeze it. So it depends on your experience.
Always do a smell test, no matter what the date is, because you never know how the meat was handled before coming to you.
Not sure how old your MIL is, but mine and her aunts/cousins are pretty loosey goosey and old-fashioned with food safety, so I never trust them and I'm OK with that.

Sell-by date if it's not being frozen. But if I know I'm not going to use it within 2 or 3 days, I'll freeze it.
And I always make sure meat looks OK, smells OK and feels OK before cooking, whenever I buy it.

The sell-by date is when the store should sell the product by. It can safely be used for several days after that.
As previous posters have said, it's going to sit in the store fridge or in your fridge either way, so what's the difference?

When I bring fresh beef/ poultry/pork home from the store I will only keep it in my fridge for a maximum of three days ... I'm nervous any longer than that

I suppose the sell by date is the way to go and I could probably get behind that (maybe). DH grocery shops at least every other day so it’s not something that I have to think about, thankfully. In this case, however, it would sit in MIL’S fridge and I wouldn’t have an opportunity to either see it or smell it before she started cooking it. So no, that ain’t happening.
