We have a fridge packed w/leftovers, so I declare a fend night. They can have chicken noodle soup, creamy chicken penne, enchiladas or chicken chow mein from the other night's Chinese takeout. Oh, way too much pasta this week.

Well, it's still snowing, but not going to be quite the storm that had been predicted. I'm sad to say, no snow day for me. I did work my tail off this morning getting all my essential duties done, just in case they decide to send us home early.
And grocery shopping last night was a nightmare. I know you all know how I feel about it. Well I was trying to save money and went to Aldi first. Aldi was busy but not crazy. Then I got to the checkout and this woman behind me was so incredibly rude. I just sucked it up. Then I went over to Meijer to pick up a few things I couldn't get at Aldi. It was so busy, I stood in line to check out for a half hour. By the time I got home it was almost 7:30. I decided I wasn't going to make the minestrone soup. I put a take and bake pizza in the oven and DS and I ate that. I will make the minestrone tonight.
I have no plans for my weekend. Just going to sit and scrapbook. And do laundry, clean the bathroom, and mop my kitchen floor.

scrapmaven We can't wait to share the news. We're trying to come up with a super fun way to tell them. Leaning towards a scavenger hunt where they will find letters to figure out the saying on a poster board.. WE ARE GOING TO DISNEYLAND! I think that would be more fun than just telling them haha. Oh and we plan on recording their reaction! I'm so ready for the weekend. Especially if the sun will be sticking around. I'm planning homemade chicken nuggets, tater tots and steamed broccoli for dinner.

It took dh more than an hour to snowblow our relatively short driveway and sidewalk yesterday because the city received anywhere between 25 and 40 cm of snow in the past two days It was -29 C when I got up this morning ... dh drove dd#2 to school yesterday and today because the snow was so deep and it has been so cold ... schools don't close here for snow days ... we just suck it up I don't feel like leaving the house today which means no grocery shopping for dinner ... We'll be ordering pizza instead

Tonight for dinner we are having a reprise of the slow cooker Mongolian Beef I made a couple of weeks ago. Ths time, I have made it with beef and eggplant, as we had a wonderful chilli-soy eggplant dish at a restaurant a few years back, and this reminded me a lot of that. I also upped the amount of garlic, and added chilli, as DH suggested they would make a good addition.
Not much planned for this weekend - DH is not flying out anywhere this Sunday, so a bit more relaxed than the past couple of weekends. We will probably veg out on sport, with the Winter Olympics and then football in the evening when our team plays.

Dh took a boneless pork roast out of the freezer. I think I’ll put it in the Instant Pot with some onion and seasoning and hope for the best. I’m just not inspired! He has carrots and potatoes ready to cook. I’ll have carrots but I’ll have to check my WW point status before I decide on potatoes. I just made fried cauliflower “rice” with ground turkey in it for lunch (I added veggies too). It was delicious and now I see why it’s so popular!

I'm making what I am affectionately calling Not My Mom's Beef Stew.  My mom's beef stew is basic. Very basic. I last made it several years ago and my family was so traumatized by it's blandness I haven't served anything named "stew" since. (That's not to say I haven't made stew recipes since then. I just change the word "stew" to sauce or soup and everyone walks away happy.  )

I almost feel guilty talking about the beautiful walks DH and I have been taking in this spring-like, low 70's degree weather! I also had a phone meeting with social security this morning and next month I get to switch from spousal benefits to my own benefits which will give me almost $200 more a month.  I'm thinking chicken for dinner. Maybe roasted asparagus too since they are crazy cheap these days.

tuesdaysgone - sending good thoughts to you for your DH...hope all goes well and he's back to his sweet self quick. I think we'll have a clean the fridge meal tonight. Leftover onion, leftover asparagus, leftover broccoli, a bit of cheddar and Monterey Jack... sounds like a tasty frittata to me! With an English Muffin. And salted caramel ice cream for dessert. Ta da!

How scary, tuesdaysgone . I hope he is settled in a room and on his way to a complete recovery. leannec , a Calgary based friend spent the last month in Palm Springs and headed home yesterday. She posted a "we're going from this to this" photo showing blue skies, palm trees & the pool in one and the snowbound house in the other. Her DD sent her the house photo asking if they wanted the driveway cleared or were going to take care of it themselves when they arrived late last night. :laugh: newlywoods03 , I  the idea of a scavenger hunt and gathering letters to solve the destination puzzle! I was planning on leftovers tonight until I saw the Korean food thread and had a  moment. Remember me whining about not finding Korean spices earlier in the week? Well, I did order through Amazon and they came in yesterday, so we are having Korean tacos and watching the Opening Ceremony tonight during dinner.

tuesdaysgone, positive thoughts and warm wishes headed your way. Poor DH, hope it's a quick recovery for him. Thank goodness he recognized the symptoms. No plans for tonight. I might finally get around to making stuffed pumpkin. These baking pumpkins from last fall aren't going to last forever!

She couldn't wait to text me last week to tell me that she used a clove of garlic in a recipe! She's making progress.

tuesdaysgone prayers for your dh and for you. I worked from home today- then the owner closed the office, but no one told me or my boss, who was also working from home. I should still get the snow day pay, so they will essentially be paying me doubletime for some of my hours. Dh' s office closed at noon. We are having pizza- dh has a chiropractor appt right near our house and the pizza place is on the other corner. We aren't hungry yet, so we will just save it until we are! jeremysgirl, did the snow pick up by you? We didn't have much first thing this morning, but now we have probably gotten close to 7 or 8 inches.

My mum has NEVER used fresh garlic even though she spent her early life on a farm When a recipe calls for garlic powder I really have to make sure I can't use fresh because I love it so much

tuesdaysgone ......Wow, how scary! Prayers going up right now, and sending (( hugs ))!!!! leannec....I know what you mean! Fresh garlic is one of the best things everrrrrr!!! The only bummer for me is that my thumb arthritis is sooo painful, I can no longer use my wonderful garlic press. I've learned to chop it veryyyy finely like chefs do, but that can be difficult, too. I WISH the pre-crushed garlic they sell in jars tasted good, but to me, it really doesn't taste good at all! Since last night, I've been craving a steak and cheese sub from a specific restaurant at my favorite beach that's about 1,500 miles away !!!!! Soooo, I'm going to have to either make some or grab some from a local place that makes a yummy one, BUT....it's just NOT the same as the one I really want! ( First World Problems, I know!)

8" of snow last night, and we've reached today's high of 5 degrees F. Supposed to be below zero tonight; the good part is that then it is too cold to snow!
We've got a little bit of a lot of things, so we'll have a smorgasbord leftover dinner.

My dad wants low carb pizza so that is what we are having. DS and I will be having pizza cooked on pita shells.
Today I am frustrated. New meds make me angry at nothing and there is nothing to be angry about. This is going to be a fail.
I went to Costco and there were more people swarming in there. This woman moved her cart to be in front of me and I told her to move as there were others of us who had been waiting. Yeah I went there.
Then went to the grocery store and they were out of everything under the sun. There is no snow. There is no rain. We have nice weather again, today and yet the grocery store is sold out. Sigh. That was a waste of time.
