I am doing THM (Trim Healthy Mama). It isn't considered to be low carb, but you separate fats and carbs. There are different types of meals, based on which "fuel" (fat or carb) you are using. I tend to do better with more of the low carb meals. I would be curious to know how many carbs I have been eating. I love the THM blogs and cookbooks because there are sooooo many recipes that make low carb meals easier. Last night I made a low carb banana bread and snickers candies. Yum! I bought a Dash waffle maker awhile ago but STILL haven't tried a chaffle (or the lighter THM version). Maybe I will get around to that today. I think I am worried that it will take too much time but I am sure that is ridiculous.

Xantham gum is a good thickener for soups. Chaffles are a game changer but I don't use the traditional recipe with cheese and eggs. I use egg whites, almond flour and mayo or sour cream. There is also a great recipe for naan and the dough serves as a base for all kinds of things. Gluten free/Keto Naan with yeast. I like it better than fathead dough or any of the others I've tried. And the other bread-like recipe which is on regular rotation at our house to go with soups and stews is Cheddar Bay Biscuits My husband also likes them toasted with avocado for breakfast.

I can make a batch of 8 in less than 15 minutes. I have the Dash that makes 4 mini waffles. I have been making cheese waffles for years. It was childish of me, but I was annoyed with the word 'chaffle' for the longest time. It was like someone was taking credit or ownership for something us lowcarbers have been doing for ages

I make chaffles occasionaly. I only have a single mini waffle maker and for me the cook time for each is around 4 minutes. I make a bunch at a time and then freeze them. Reheating in the toaster works very well.

I toast mine, and then top with cream cheese and Everything Bagel. I wouldn't say it's like having an actual bagel, but it satisfies the craving.

I'd love a weekly thread. I'm back on the wagon now that I am able to prepare my own food again - i had ORIF surgery on my wrist so I haven't had the full use of my hand in a few months. I do dirty keto because I NEED my diet coke in the morning and I don't drink coffee, but I do try to stay under 25g of carbs. I have Type 1 diabetes, and my blood sugar thanks me when I'm on keto. While I was off of it, my blood sugar was all over the place!
I try to prep my meals either on Sunday or Monday for the rest of the week. I keep it very simple for breakfast because I take it to work and reheat. I usually do eggs cups (ham, avocado, egg and cayenne pepper), or an egg scramble with goat cheese, mushrooms, bacon and basil. This morning I did a blueberry mug cake.
Tonight, I'm making a chicken stir fry with a keto teriyaki sauce, so that will cover the next 3 or 4 lunch and dinner meals.
I'll probably keep it simple for the 2nd half of the week and just grill pork chops with roasted brussel sprouts.
I have a few chaffles (i hate that word) in the freezer, so I might make a sandwich or two for lunch.

I think a regular waffle iron would work fine but the Dash does make them the perfect size and it's very easy to clean because it's so small and lightweight. I have two of them to speed up the process.

DH has done The Dukan Diet a few times. This was well before the Keto craze, and it's similar,but healthier. All you need is the book!!! DH has dropped 18 lbs this time in only 2 weeks and his stats are stable!! For the constipation, he has 2 tsp of pure oat bran each morning. Those are his only carbs each day for now. He can add the oat bran to eggs or make a gallette (sp?? It's a pancake) out of it. It completely helps solve the constipation issue. I highly recommend the Dukan Diet vs the Keto diet. It's not fat-laden and it's better for the long haul. It has a plan for reaching your goal and adding a little bit of healthy carbs back in on certain days. Makes sense!! Basically he has no carbs daily except for the tiny bit of oat bran. If this diet isn’t fat based, and he’s not eating carbs, what is the body using for fuel? Also, I would just like to point out that my blood work and my BP had perfect numbers when I got the results in about 6 months after starting keto last year. The BP was a big deal for me, because I’ve had highish blood pressure since my mid 20s (not high enough to warrant meds, but enough where the drs got twitchy). I am curious about how to add carbs back in once I hit my goal and go into maintenance. I haven’t read anything yet about what to do when one gets to this point. I have a long way to go though, so I have lots of time to read up on it. Sorry I didn't respond. DH has done this program before and has been able to come off of his diabetes meds, lower his cholesterol meds and his blood pressure meds. It's always amazing!!! He's not on this phase forever, but it's mostly healthy protein based. Even veggies are allowed on certain days. He can eat as much as he wants (of the right food groups). He does add back some carbs eventually (healthy carbs), but it's limited. He had no problem adding some back because it was very restricted, and he could go back to just protein if he gains any weight. His issue is having the right food in the house. It's simple: if he has his food, he does great!!

How do you all deal with others in your house that are not eating the same way you are? My DS is 18, so he fends for himself if he doesn't want what he calls my "keto crap." But SO is difficult. He'll eat what I make, but he'll bring home food for me that is not on my plan. He doesn't do it to sabotage me - he thinks he's just being nice by picking up food that he thinks I'll like, or he just doesn't think about it at all. For instance, he brought home corn dogs the other day. I mean, I LOVE corn dogs, but I don't eat them!

Yes, but a ton of cheese and not much in the way of high carb fiber can lead to wicked constipation. I have a feeling her comment may be related to that and/or the calories involved in cheese. For DH (who has type 2 diabetes and cardiovascular disease), this program helped him tremendously!! His stats improved amazingly and he came off a few of his meds. Coming off of his Metformin was incredible!!! His cardiologist was very happy when he began this program and kept at it for months.
FOR HIM, the protein (lean!) did not trigger insulin production at all, but maybe it's different with type 2 diabetes??? Not sure. If he has unhealthy carbs, that definitely triggers his insulin and his #s go crazy!!! We check daily, so he's got it all under control. We check his blood pressure, blood sugar and heart rate. He, personally, does extremely well on this program.

I am only on day 3 but I have lost 3 lbs and have upped my carbs because I wasn't eating nearly enough. Starvation mode doesn't help either. So far so good and no Leto flu but I am told to expect that tomorrow.

I think I have lost about 4.5 lbs and keto flu hit me yesterday. A friend suggested chicken broth and I enjoyed that a lot. It was very salty which did the trick. I might have some today.
How are you all doing?

How are you all doing? I'm doing well. I'm on day 15 of being on plan with THM. We can have meals with healthy carbs, but I generally have very few of those. I have been exercising as well. I have not lost as much as many people seem to do and it can get discouraging. Trying to just keep up with everything and not worry about the scale. I typically don't feel any negative effects of going low carb, but I have noticed that I am getting tired much sooner in the evenings. I don't know if that is related to what I am eating or not.

I read the book by Atkins years ago so I was familiar with low carb eating. You need to read packages for carbohydrate concentrations and try to stick to 20-30 carbs a day is what I am learning. I use the app Carb Manager and I bought a year subscription because I figure my last 20 lbs will kill me. I eat no rice, pasta, potatoes, corn, sugar nor grains of any kind. I am never hungry (so far) because I snack a lot to get my 22 carbs in a day and it's hard sometimes. Yesterday all I did was snack on (acceptable food) and only got 15 carbs. It seems like everything has carbs in it even black tea but it works for me. Low carb dieting may not work for you but it is the only diet that works for me.
