What would you do with a pound of walnuts?
I used walnuts in my butter tarts and icebox cookies at Christmas. I have the remaining nuts waiting in the freezer.
What recipes do you use walnuts in?

We are vegetarian, so I use walnuts and lentils to make meatballs and meatloaf and ground taco filling. I use this recipe as the base for all of them and adjust the herbs as needed. The meatballs are great made with fresh sage. cookieandkate.com/lentil-and-mushroom-meatballs/

Bread, coffee cakes, salads, more cookies, freeze them if there are too cookies many to eat right away!! In waffles, pancakes, eat them just as walnuts!

I use toasted nuts on everything, salads, green beans, sweet potatoes, asparagus, etc. I have favorites for each, but if we don’t have the preferred nut we use whatever is available. Oh, and BFF has an amazing chocolate chip rosemary cookie that they’re good in.

I put walnuts and honey on my yogurt in morning.
My favorite carrot dish has walnuts: roast skinny carrots tossed in olive oil in oven for 25 minutes, then sprinkle chopped walnut over them, roast another 10 minutes, pull out of oven and sprinkle feta and chopped dill. Yummmmm. My kids love it too.
I also love walnuts on toasted Brussels sprouts and bacon. Another kid hit.
Also banana nut bread.

I agree they are good with almost any roasted vegetables. They also keep a long time in fridge or freezer. I go through a lot of nuts...

I make walnut and coffee cake. joelise do you have a tried and tested recipe that you’d be willing to share please? All the coffee cake recipes I’ve tried aren’t very ‘coffee tasting’ Of course. I’ll miss out the obvious bits of the recipe so it’s not too long! It’s an old M&S baking book recipe. Coffee & Walnut Cake Oven 180c/350f, 2 lined 8” tins 175g unsalted butter 175g light muscovado sugar 3 large eggs, beaten 3 tbs strong black coffee (I have a nespresso machine which makes a very strong expresso, I think this is the key to the coffee flavour) 175g self raising flour 1.5 tsp baking powder 115g walnut pieces walnuts to decorate Frosting 115g unsalted butter 200g icing sugar 1 tbsp strong black coffee 1/2 tsp vanilla extract Method Beat butter and sugar until creamy, slowly add eggs, beat well, add coffee. Fold in flour and baking powder, then fold in walnut pieces. Divide into tins and bake for 20-25 mins. Cool on wire rack. Beat butter, icing sugar, coffee and vanilla extract until creamy. Use half as the filling and half for the top. Decorate with the whole walnuts. Hope you enjoy it. Sorry to the US peas. I only know the metric measurements.

I put them in salads and top yogurt with them + honey. Sometimes I add them to my thicker cream-based soups for some crunch on top instead of doing a soup cracker.

I mostly bake with them. But you could throw them in salad. They’re nice in green salad or on a tomato mozzarella salad. You could sprinkle them into a baked Brie as an appetizer.

Salads, cereal (I buy plan bran flakes and add my own nuts and dried fruit), smoothies. I also prefer walnuts in cake and cookie recipes to pecans. Yet another way I was not meant to be a southerner when it comes to food.

One quick question..... and it's probably a silly one..... when you say 3 tbs coffee, is it ground coffee, or is it measured after you've added water / put it through the coffee machine? 3 tbs doesn't sound much if it's liquid.

It’s liquid, 3 tbs of an expresso coffee. I use the strongest nespresso capsules and only let the machine run for the amount I need so it stays really strong. Think an Italian shot of coffee, thick and strong!

I put walnuts and honey on my yogurt in morning. We do a variation on this as another option. Cottage cheese, blueberries, walnuts, and a honey drizzle. I always add walnuts to any charcuterie tray as well. They are a good complement to most cheeses. (Trying to offer new suggestions and not repeat things others have already mentioned.)
