Tonight we are having sausage potato spinach soup (that I also add cauliflower to, to up the health content) with Texas toast. I have fresh spinach that needs to be used up before it goes bad so this will do the trick.
I have been exercising every day for my health and “me” time. I’m doing fine so far. It’s been sunny here lately which has helped a lot. Dh and I even went out for a run together yesterday and kept our social distance easily. ETA: I forgot to add that I ate like an asshole after lunch and finished the box of Tagalongs in the freezer. There were quite a few left . Whoops.

My dd cooked beef with Asian seasoning and some soy sauce. We had it over rice with corn and carrots.
Our state is closing down tomorrow but my company is considered essential. I’ve never wanted to be unimportant more in my life.

Tomorrow is my hubby's b-day so tonight I am making chicken drumsticks with a rub on it. One of his favs! And I made some veggie soup the other day so we will have the left over along with the chicken! I've been eating/snacking like an asshole for about 6 months now! LOL! Explains easily the 40 lbs I've gained back too! I love cookies, ice cream, and anything with peanut butter! Combine them, and well, I'm in heaven! It's not good I tell ya, not good at all!

I think ddil is making pasta fagioli soup. Works for me! Oh, I lied last night... we had creamed chipped beef, mashed potatoes, and peas instead of pesto pasta.
Oh, my assholian snack... part of my bedtime ritual every night is Cheetos puffs and my book/kindle...

We are having filet that ds had in his freezer up at school (dont worry, it is Meijer filet- my college kid isnt buying Omaha Steaks!) that we couldnt fit in our freezer. Inwas going to make potatoes, but then I saw mac and cheese in the freezer and, well, apparently I am going to eat like and asshole again! Also have a salad mix that expired yeaterday, so wr are having that.

I have been cooking more. Tonight I have having a Caesar salad with some left over chicken from the other day. I am sooooo bored but glad to have threads like this to pass the time. I read every day but don't post often.

desertgirl, is your guy an engineer? The spreadsheet behavior sounds familiar, she said, thinking of her two engineer relatives. I'm snacking at work now -- Cretors cheese and caramel popcorn. Popcorn of any stripe is my go-to snack. Tonight, we'll have Sunday's beef stroganoff, take two. It's kind of pink -- apparently, he marinated the beef in red wine, and then incorporated the marinade! He's a pretty good cook, but says he does NOT "eat with his eyes first." Take that, Food Network!

PolarGreen12 .....Ohh, I'm so sorry! (( hugs )) He then reorganized the freezer, came upstairs, and made a spreadsheet of all of our items. Pigs were now multiplying so fast I stopped counting them desertgirl ....Thanks for making me giggle! We're grabbing Chinese from a local place that we love.

Well, I took the old people to Trader Joe’s this morning. TJ’s was way better than last week. They had plenty of everything. I didn’t check on paper goods, though. I bought Brussels sprouts, and I think I’ll do a sheet pan with the Brussels and red potatoes and maybe some other veggies. There’s part of a Costco chicken, so I’ll heat that up, too. PolarGreen12, I’m so sorry to hear your bad news. Just sucks. I hope the coming days will be easy for you, not too stressful. desertgirl, OMG, hilarious hubby story. He IS an engineer, isn’t he? My BIL is an engineer and I recognize the symptoms, too.

dh's CEO is encouraging employees to post photos and videos of their families and pets. If your child or pet comes to your workspace then you're supposed to introduce them to everyone. I've seen some really sweet stuff. The CEO hosts an online update every now and then and he includes his children. Last week they made spaghetti together. Though I've always liked dh's company culture, this just proves it's an awesome place to work. When this first started the CEO reminded everyone that families and pets won't be used to employees wfh, so don't worry about professionalism. Put family first and work 2nd. He's a cool guy. Yes, he sounds AWESOME !! I wish EVERYONE had such a great boss!

I made Marion Grasby's Chinese Pork & Ginger Stir Fry, and DSO made fried rice to go with it. (He does a bloody good fried rice!) This dish is delicious. If you like pork and ginger, you really should try it. The pork is ridiculously tender, and the sauce is sooooo tasty. I love ginger so I usually put double the amount in. on your 5th anniversary with the firm they give you $1500 towards your next vacation. Nice perk. Wow, that's generous! Last year I got a $350 gift voucher for my 20th anniversary. Better than a kick up the bum I guess. PolarGreen12 oh no, I'm sorry you've been laid off. Will you be ok?

PolarGreen12, I am so sorry. Though it was a possibility this just sucks. No one could blame you if you choose to eat like an asshole. I would even recommend a big umbrella drink, as well. If you need resume help or cover letters you-know-who has plenty of time to help you. cadoodlebug, that's such a cool thing for the neighbors to do. WTG. scrappintoee, I just love the bully in that meme. Did I tell you that a mini bull dog has moved into the neighborhood? He is a mischievous and feisty little dude w/the best personality. He's my new friend, but I can't go near him for a few weeks. Sniffle.

When my sister had her breast cancer diagnosis 3 weeks ago I was giving her lines to tell people when they said stupid stuff, like "It could be worse". I think my fave was. "Yes it could be worse. I could have cancer and a wedgie." Thankfully , she has neither.

I have a Chuck roast with potatoes, carrots, onion and celery in the oven. I'll warm up some Hawaiian rolls to go with it. For dessert we have a couple slices of custard put from the Amish store with some homemade caramel sauce.

It's been unusually warm here so I've been in the yard every day right up until time to make dinner. Needless to say, I've been late getting online or didn't make it at all. I laughed out loud at your story, desertgirl. I could almost see mine making the spreadsheet (accounting degree) as he has spreadsheets for the "business" of a family but he only reluctantly gets involved in meal planning even when invited. I hope it all works out in a good way. And it's interesting to hear all of your experiences working from home or with family members who are doing that. Hugs to you, PolarGreen12. I'd wallow too if I were in your shoes but I hope you find just what you are looking for. The entire world is really wonky right now. Dinner tonight was rechauffe pineapple pork fried rice with a twist. DH ran up to the little Chinese restaurant right outside our neighborhood and got egg rolls to go. And I've declared a new house rule for the duration of all this wonkyness: There will be dessert following meals made with leftovers. Tonight's offering with be strawberry shortcake. Take the good where you can find it these days.

I made a sous vide leg of lamb last week, so Mom and I had lamb tacos tonight since I dnd’t have any pita. I made homemade taziki sauce and we used some salad mix to provide crunch.
Per his request, DH had pasta with 3Tbs canned sauce and salad.
DD came over this weekend and we did a Clicklist order together. She offered to prep all my veggies if I would chop onions for her. You bet I took her up on that offer!
My fridge is all stacked with neat bowls of prepped veggies, all waiting for their turn in the kitchen. I Have the week’s meals planned out and I should have quite a bit to put in the freezer for future meals.
My junk snack is Fritos and French Onion dip. For sweets, I love my homemade sourdough brownies. So rich and gooey!

I'm making a hamburger stroganoff in the instant pot. I haven't had it out for awhile and I have lots of hamburger in the freezer so it was a fairly easy call. Would you please share your recipe? I just got an instant pot and I LOVE stroganoff. We had carne asada with rice and toppings.
