Welcome to the new week. Though it's no different from last week we are here to tell the tale and must find reasons to smile while enjoying the little moments that life gives us. What are you doing to enjoy those moments? If you cannot, then what can we do to help?
I have a video call w/a friend this afternoon. I haven't seen her in a few years and it should be nice to catch up.
Dinner is buttermilk fried chicken and shoe string potatoes. A veggie will make an appearance, but I'm not sure which one will appear.
What's on your menu?

Since we're in the current predicament and I noticed a bunch of buds on my new lemon tree I thought of this quesiton: When life gives you lemons what do you make w/them? I make lemon bars , lemon raspberry bread and I also use lemon in marinades. It's a very diverse ingredient. What do you do w/lemons?

Morning ladies!!
It's beautiful here today - supposed to be upwards of 60 degrees. That in itself puts me in a great mood!
We've developed a good routine here with the kids/schoolwork so that's nice.
I've really enjoyed the downtime with the kids. We've played games and are working our way through all the seasons of Everybody Loves Raymond. We're going out for walks when the weather allows and working outside on some landscaping projects. We wouldn't normally have time for all of those things if it weren't for the lockdown.
When life gives me lemons, I make lemonade!!
Dinner tonight is going to be fajitas. We have a large propane flattop so dh is going to cook all the meat and onions and peppers at once. So all I'm responsible for is prepping the meat and veggies.

Good morning. Nice, sunny day today. Trying to talk DH into taking a 45 minute drive to a small town meat processing place to pick up some chicken, burger and possible steak. I heard they have great jalapeno pimento cheese and that sounds great. I hit Kroger for Senior shopping this morning and feel like we are in a good place now, food wise.
Today, and many days this week, we will have instant pot pork butt in various ways. Today will be pulled pork sandwiches, cole slaw and oven fried pickles with BBQ ranch dipping sauce. Maybe baked beans as well. I hope everyone has a great day. Be safe and stay well!

We are having chicken sandwiches using Tyson Air Fried Chicken. Ds is going to make a copycat Popeyea spicy mayo recipe and we have lettuce and pickles for those who are so inclined. I'll make fries and maybe asparagus or broccoli for sides. We need to use up a bunch if stuff from the fridge and freezer. My mom.ordered Easter dinner for 10- there are only 4 of us!

Tonight dinner is Spanish bean and chorizo casserole. I am trying to mix up our menu a bit, by trying out at least one new recipe each week.
I love the flavour of lemon - if I had a sudden windfall, I’d make lemon curd, Greek marinades and a few would be in my gin and tonic pre-dinner drink.

Lemons? If we're talking literal lemons, I'll make a lemon pound cake. Since life is now giving me metaphorical lemons, I'm getting long overdue projects done in the yard.
Saturday afternoon we took a walk and DH had his credit card in the pocket of his shorts. Fast forward to Monday morning and he can't find his credit card. You'd think that would be a quick call to a 1-800 number. NO! I spent almost an hour on the phone trying to get that card cancelled and a new one issued. GRR! I did log into our account and can see there haven't been any charges on it, so that's good news. Wanna bet he finds it in the next day or two?!
I'll be outside soon working in the yard. There is raking to be done.
Dinner will be Chicken and Dumplings.
Try to live happy this week. I'm fighting a bad moon this morning, but determined to adjust my attitude.

Great question! Lemons are a staple in my kitchen. One reason I love dd’s fiancé is his love of lemony things. I make lemon Bundt cake, lemon cream pie, lemon scones, and lemon sauce for fish and scallops. I also use it in fruit pies.
We are still having rechauffe bc I have unrealistic ideas about deep cleaning the refrigerator and attached freezer. THERE WILL BE NO SPREADSHEET! But there will be laziness.

I think we will have rechauffe tacos from yesterday and the rest of the rosemary chicken.
SO has been talking about tearing down the walls in all three bedrooms to update the insulation. We were going to start that a bit later. But he got a wild hair up his butt to start on Saturday. So we had to move the office stuff to basement so daughter could move into the office and then we started on her room. Got everything moved and ripped down by 7:30 that night! Yesterday we relaxed since we did not have proper masks to deal with the insulation in the ceiling. So this week will be a bit different then the past couple.
If I had fresh lemons, I would make lemon meringue pie. I have not had that since my mom passed away. She made the best!

It is cold and wet here so I am making stock right now that will become vegetable soup for dinner. Russet potato, carrots, leeks, green beans, garlic, onion will be in the soup.
Also fixing muffins.

We have a small lemon tree that that weirdly supplies a manageable amount most of the year. When I have too many to use, I zest and juice them. The juice is frozen in a perfect 1 TBSP puck by using a silicon mini muffin pan and they pop out so easily. Even though we have our own tree, DH never says no when someone brings a box from their tree to the office. Last week he came home with enough Meyer lemons to make 90 TBSP/pucks for the freezer. We use a lot for soup, Greek marinades and vinaigrettes. I also made Meyer lemon roast broccolini and a lemon artichoke pasta last week. Starting Monday with canceling a credit card is not fun, tuesdaysgone . I think dinner is going to be fend for yourself tonight. I've decided to pull the kids back into meal planning and have them do at least one meal a week. They can work together or take turns. In the midst of all this madness, DS got the news he is going to be a banana slug!

tuesdaysgone if your DH is anything like my DS, you will find the old card before the new one arrives (yes, DS has lost his debit card at least five times during the past two years). Lemons? My favourite in life. If I had to choose between chocolate and lemon, I would choose lemon any day if the week. Unfortunately, my dentist made the choice for me (apparently, citric acid isn’t good for your teeth, gahhh!). But every now and again, I buy one, peel it and enjoy it. Dinner? Pasta with smoked salmon and zucchini.

I have a bag of lemons on my deck because I like them in water. I was buying one at a time but my dad said it was ridiculous and buy a big bag at Costco. He was right.

We are having bbq chicken legs tonight with some rice and broccoli.
I have a lemon raspberry bar recipe I love. Also a tasty lemon blueberry muffin recipe. I should make some muffins. Yum!

The rain finally stopped so DH and I got out for our first walk since Friday. We are having pot roast with potatoes, carrots, onions and a green salad for me.
DS had fun Saturday with a virtual game night party with 6 of his friends ~ they played Pictionary and a few other games from 7 - 11 PM.
I don't cook with lemons very often as I don't bake. I used to make killer Lemon Bars to take to events. I did use lemon juice in my hair when I lived in Hawaii as a teen. Does that count? <snort>
I think I've shared this meme before but it makes me laugh every time I see. Spelling matters!!!!

Delta Dawn, I couldn't like your post. Hopefully your GP will have a med that will work and work quickly. I know exactly how you feel. cadoodlebug I love the meme about the wrong hubby. LOL! It's a Monday. My day has been slow today. I'm going to try a recipe for an apple rosemary chicken tonight. I can't decide what to serve with it. I have one sad potato. I do have a bag of rice. What if I layer the rice on the bottom of the pan and layer the chicken on top and bake? How does that sound to you guys? I got my dining room clean and two loads of laundry. I'm beginning to think my yarn will never show up.

Hi Everyone! With everyone talking about lemons; I am really missing my lemon tree back in California. I love lemons in water, making lemon bars and lemon cake. I also use it in marinades. Today is an absolutely gorgeous day here. It is supposed to pour for the rest of the week. Tonight is rechauffe with cole slaw. cadoodlebug I love the memes.

Tonight I am making chicken fried steak and mashed potatoes. I have asparagus and broccoli, I will chose between the two later.
I made lucyg fried rice on Friday and it was the bomb!! You are right, the sesame oil makes all the difference!!

We are having a cold veggie pizza (the kind with the crescent roll crust and cream cheese "sauce" with raw veggies on top) and some zucchini "fries". I think I'm going to use up some pears and make a pear/apple/cranberry crumble.

It is raining cats and dogs here. WOW. My stock is all made and cooking on the counter. I got a little over 7 cups which is perfect as I normally use 8 cups when making soup.

Yummm...lemons! I had a tree for a while before cold temperatures and scale did it in. And what a virtual bonanza of flavor they are. Lemon curd on lemon cheesecake and lemon-blueberry bread are favorites on the sweet side, lemon-mushroom chicken and barley with roasted vegetables (with a heap of lemon juice) for the savory side.
Dinner tonight will be taco salad. A grocery run yesterday provided plenty of fresh produce so I want to take advantage of it plus it comes together pretty quick. Be safe and be well, ladies.
