We are doing a small ham. We aren't huge fans so i got one that is just small enough for one meal. cheesy twice baked potatoes, caesar salad, fruit salad, rolls and coconut cream pie!

I am going to be able to pull off all my Easter favorites. I found hot cross buns awhile ago and froze them. We have those for breakfast. My mom sent me 2 boxes but we ate those early. In Pennsylvania there is a diner favorite called ham loaf. It is like meatloaf but made with ground ham and pork. My husband has learned how to make it and my family loves it. We are having that, along with glazed carrots, either mac n cheese or scalloped potatoes, biscuits, and a tossed green salad my boss used to make that is very good! It has a sweet dressing, ramen and sliced almonds so it is closest to an Asian salad. For dessert I got an idea to make a carrot cake and ice it like a bunny cake. I haven't made one in decades but thought it would be fun for dgd. I only used jelly beans to decorate it because that is what I have on hand. I have Easter baskets for everyone with traditional favorites and I also hard boiled 6 eggs. One cracked bad but the other 5 DGD can dye them.. I wanted her to do it today but she napped all afternoon. I filled about 10 plastic eggs for her to hunt for tomorrow. I even looked up a recipe for hard boiled eggs and one still cracked. Ugh.

Well we normally get together with my parents, sister and nephew. No traditional meal as we gave that up when we stopped getting together with the extended family for some reason. But since it's just me, dh and dd this year we are going to have Ham, PW's Restaurant Style Smashed Potatoes, Green Beans, Hawaiian Rolls and a Strawberry/Cream Cheese Pie for dessert. I might also make some deviled eggs. Not sure.

Thankfully, both me and DH will have the day off tomorrow with our 3 kids, ages 23, 17 and 16. We are used to being with our large extended family, we usually either split the day with his side and my side or do Easter on Saturday with one side and then on Sunday with the other. So we will make a ham, potatoes au gratin, asparagus, rolls, and scratch made chocolate cream pie for the 5 of us.
We plan on surprising the kids with an egg hunt. They won't know but the eggs will be filled with not only candy but cash as well!! A reward from me for working long hours away from them. It will be funny to see who participates and hustles and who drags their feet. I will throw out little hints to get them to catch on if they don't seem to interested. Just something to cheer them up cause I know it's gonna be a very different holiday for us.
We will also do a house party phone call with both sides of the family as well to spend some time together.

We are having Kalua Pig (pulled pork). There are only 3-4 ingredients but it takes 20 hours to cook in the slow cooker! We are also having cheesy vegetables, lumpia, salad & sour cream cheesecake.

I'm going to put a beef roast in the crockpot. We will also have au gratin potatoes and I was going to have asparagus, but they were out on my curbside pickup. I'll probably just do peas with onions and bacon instead. Glazed carrots and I will be making a blueberry cheesecake as well. I have some rolls in the freezer, so I will thaw those and warm them up for dinner.

My family would be very happy to add lumpia to an Easter meal! It is Palm Sunday for us tomorrow, so we'll be having salmon and on the 19th DH will slow cook lamb on the rotisserie and we'll have the usual Greek sides (spanakopita, Greek Salad, lemon oregano roast potatoes, red eggs, etc.).

I ordered a ham when I did grocery pick up and they gave us a huge one! I was planning to use my Instant pot for the ham, but this thing is way too big. I will bake the ham in the oven instead. We usually do a hash brown casserole but I didn’t get the ingredients, so I think I will do some hassleback potatoes. I will also make some of the asparagus and green beans for veggies. I making an Oreo cheesecake for dessert today so it’s ready for dinner tomorrow. Are you sure that you will need an Instant pot for the ham? They are fully cooked / smoked, so the ham just needs a quick reheat in the oven, perhaps with a brown sugar glaze on it. Oreo cheesecake is yummy. Yeah I’ve done ham many times in the IP. It’s a moist heat so it’s great for reheating and not drying out. You only need a short time.

For the last 13 years it’s just been the 3 of us for holiday meals so we’ll have a tiny turkey, it’s already in the brine in the fridge. My grocery order came in last week and I’m glad I thought to add a turkey and was happy they had some decent small ones available. I’ll make dressing (stuffing) and whatever frozen veg I have. Oh yah and we have some nice dinner rolls and maybe I’ll make mashed potatoes and gravy and then we’ll eat all that for 4 days I’m sure! Lol.

We are making a banana Cheesecake for dessert, and grilling out ribeye steaks and sweet potatoes and carrots.
We’re excited to try something new.

What is this pineapple casserole the peas speak of? Mine is made with drained, canned pineapple chunks topped with a bit of flour, a lot of sugar, crushed Ritz crackers, shredded cheddar cheese, and melted butter. It's very rich, but a small portion makes an excellent side with ham. Kind of like cranberry with turkey. I can find recipe details if anyone wants them. I would love the recipe. I wish I had a can of pineapple

I made a cheesy grits casserole tonight because I dropped & lightly cracked a few eggs while trying put them in the pan to boil and had to use them quick with what I had on hand. So grits, cinnamon buns and sausage links for breakfast. Keeping it kind of light here for Easter dinner...Ham biscuits, pasta salad, deviled eggs, veggies and dip (or maybe just celery with pb or cheese), pickles, cheese ball & crackers. Now I'm craving a pineapple casserole and I have all the ingredients on hand so I might go for it in the morning.

I’m not eating ham. I’m going on strike! 😂 The local Mexican Restaurant has a special for 4 and I ordered it today. Will pick it up tomorrow. It’s enough food to keep us busy for a bit and we will make our own desserts.

We've never had a traditional Easter lunch, but I've made a Simnel cake and I managed to get some chocolate eggs yesterday when I went out for the first time after self-isolation.
I need to find out why ham is a "traditional" Easter food. I've heard of lamb, but never ham.

I have a Honeysuckle White turkey thawed and ready to roast this afternoon. I bought it at Thanksgiving with the intention of doing a dinner between Christmas and New Year's when my family was together, but that never happened. I was soooooo sick between Thanksgiving and early January with a respiratory infection (double ear infection, bronchitis, sinus infection, and pink eye--three rounds of antibiotics and steroids, and I still needed to use an inhaler for most of January!). So the turkey stayed in the freezer, and with all of the butter I had purchased for holiday baking. The flour and sugar is still in the pantry, and I am grateful for all the baking supplies during this quarantine.
I bought sweet potatoes the last time I shopped, and I have what I need to make green bean casserole. I am trying the "one-hour dinner rolls" recipe that I have saved from Facebook. Friends who tried them said they were pretty good, so we will see.
I finally get to try out my new electric roaster I bought during all the Thanksgiving shopping deals!

I wish I had a can of pineapple Pineapple Casserole 2 lg cans chunk pineapple, drained 1/3 c. sugar 5 teaspoons flour 1 1/2 c. shredded cheddar 1 sleeve of Ritz crackers, crushed 1 stick butter, melted Place pineapple in an oven safe casserole dish, about 12"x8". Mix together sugar and flour, sprinkle over pineapple. Sprinkle cheese over then the cracker crumbs. Pour melted butter over all. Bake at 350 for 30-40 min. Serves 6-8.

I'm doing boxed stuffing a d canned cranberries.
We have a turkey breast , mashed potatoes , gravy and will do some roasted carrots and a mix of frozen peas, corn and green beans.
I can't wait.

DH works further away today, so I decided we will have 5 minute lasagna that way it will be hot and ready for him to eat.
We will do rack of lamb and all the fixins either tomorrow or Tuesday depending on if they lamb is thawed yet.

Sweet and Spicy Glazed Chicken Thighs, mashed potatoes, cabbage and onions, deviled eggs, and chocolate cake for dessert. Not a typical Easter menu, but I’m using what I have on hand.
