I happen to have a box of scalloped potatoes and a small ham steak that I will cube up to go with it. Plus probably some scrambled eggs, and then maybe the asparagus I still have. Only thing I'm really missing is rye bread.

I am grilling steaks, making cheese potato casserole and salad. Oh, and deviled eggs.
I am also going to make some coconut cream cupcakes. This recipe, but I am going to toast the coconut then put Cadbury mini eggs on top. That is about all the cupcake decorating talent I have. LOL I may add some lime to the cupcake and the frosting.

We always have Smitten Kitchen’s Carrot cake pancakes for Easter breakfast.
For dinner....
We have a small ham in the fridge so will make that along with homemade Mac and cheese, broccoli and maybe a green salad with mandarin oranges.
DD request cheesecake for dessert so we will make that today.

I want to have something special for this Easter. Not having Holy Week services to attend has left me feeling dis-connected and drifting although DH and I have had home Tenebrae and Morning Prayer. So I am going to make Popovers for our lunch Sunday. Not only are they delicious, but such a good in home symbol of the Resurrection. What are you planning? Now I’m looking for popover recipes! Thank you! I’m having ham and a sweet potato casserole. Pineapple stuffing if I have enough pineapple. Oooh I have a little bit of bacon left from yesterday’s breakfast. I’ll crumble that and add it to peas. True story, which I just remembered - when my kids were little and hated peas, I started adding bacon bits to get them to eat them. And it worked! Now they eat them without. Popovers Here you go.

We are having lasagna, Caesar salad and garlic bread.
We don't usually do a big Easter dinner so this isn't anything new.
We will probably make an instant pot cheesecake of some type and let the kids decorate it.

What is this pineapple casserole the peas speak of? Mine is made with drained, canned pineapple chunks topped with a bit of flour, a lot of sugar, crushed Ritz crackers, shredded cheddar cheese, and melted butter. It's very rich, but a small portion makes an excellent side with ham. Kind of like cranberry with turkey. I can find recipe details if anyone wants them.

We are having ham (and salmon for the non-ham people), scalloped potatoes, Brussels sprouts with bacon and maple syrup, rolls, deviled eggs, arugula and pear salad, and lemon bars for dessert. I also ordered and picked up an assortment of Easter themed macarons from our town's cupcake shop.

Stuck at home by myself. Am really bummed; I want to play Dominoes with my mom, my aunt, and my cousin. And see my niece/nephew.
I think I will have the lamb piece in my freezer. It's big enough for two, so it depresses me that I can't have my friend over.

DH is a Pastor, so it has been a busy week pushing out content to our church members to help them reflect and celebrate this week - ending in a live-streamed Easter service from our home tomorrow. I have not had the time/energy or be able to find groceries to make our usual Easter meal, but we are having a small ham (it was either a small one or a HUGE very expensive one LOL), roasted carrots, mashed potatoes, hot cross buns and ? for dessert. Maybe the cheesecake that is in our freezer. LOL

Easter is my favorite holiday, and it is especially meaningful to me this year.
We will have ham, asparagus, mashed potatoes, deviled eggs and apple pie, which is our usual menu for Easter.
We usually celebrate Easter at our lake house and that is where we are sheltering in place, so that seems normal. Watching mass on television instead of going to church will be different, but it will be fine. We always read the Easter story from the Bible right before we eat. After we've had desert, I distribute elaborate Easter baskets filled w/ lots of little gifts. (Similar to Christmas stockings). This year I have a little bit of Easter candy for everyone. However, none of the gifts I ordered have arrived. One of them hasn't even been shipped yet. Oh well!

I ordered from a small, local catering business. I ordered their sourdough cinnamon rolls for BF and for a late lunch: pineapple ham, mashed potatoes, green beans with bacon jam, and a challah loaf. I’ll make deviled eggs after we dye them today. I think I’ll make lemon pudding for dessert.

Pineapple casserole recipe here aka pineapple stuffing starts with a loaf of white bread, cubed then you cream sugar and butter together and four eggs and stir in 20 oz can of crushed pineapple. Fold in the bread and bake until toasted on top. It's so good with ham!

Honestly I have no idea. My family usually has a huge gathering for Greek Orthodox Easter. Obviously we won’t be doing that this year. I will make a carrot cake because carrots are the only thing I’ve been hoarding. Seriously. I need carrots the way most people need coffee.

Doing a brunch of French toast and bacon . And later we will have Either manicotti or lasagna stuffed shells, French bread and salad. Not our usual Easter dinner but we will enjoy.only us four this year due to the current circumstances.

It's just me here, and because I love brunch on Easter I was just planning on making a breakfast casserole. However, my sister-in-law texted that they're going to drop off a ham dinner to me. I just finished baking pumpkin bread to give them when they drop off dinner. I'll probably still make the breakfast casserole to eat throughout the week.

Prime rib. I hadn't really planned anything, then a neighbor mentioned that a rancher was dropping off prime rib for their family and I jumped on the delivery. We don't usually do a big Easter dinner, but figured why not this year. It's way too big, so we'll be having lots of steak sandwiches for lunch next week!

My extended family usually gets together today (the day before Easter) for an egg hunt for the kids and potluck dinner. Only me here, so I just ate Panera Mac and cheese (from the grocery store) with diced ham added. I also had a small Ghirardelli chocolate bunny as an appetizer 😁.

A local restaurant was taking orders for an Easter dinner. You could order a dinner for two or six. There are three of us, so we are getting the dinner for six. We will eat well for a couple days and extend the time before we need to get groceries.

I’m doing contactless pickup tonight of chilled seafood pasta, gumbo, green salad, and sweet potato creme brûlée that just need to be reheated tomorrow’s Oh - and a 6 pack of Michelob Ultra! It’s not our normal Easter fare, but it’s a meal we’ll enjoy a lot tomorrow. We’ve been cooking so much that we were ready for someone else to do the cooking!
I also managed to get some goodies for baskets last week, so the bunny won’t be worried about visiting us tonight.

Sadly it will just be me and DH. We will facetime with grandkids/kids. DD, SIL and DGS just moved backed within 2 hours last summer. Sad that we won't be able to be with them for the holiday. We are making most of the traditional Easter meal - Peppered ham, cheesy potatoes, Brussels sprouts with balsamic glaze, DH's favorite no sugar added cherry coke salad, deviled eggs and no sugar added dirt dessert (I use Oreo thins for the crust). I usually make a cauliflower pea salad and pineapple dressing, but will pass on those this year, and also no rolls . We will have leftovers for the week, so a break in cooking next week and I'm looking forward to it. I ordered some nice chocolates from Macy's for our "Easter basket treat." Everyone have a safe and happy Easter as best you can.

We are having ham (I'm actually thankful for the leftovers it will provide... my husband is working from home and I have three kids, and I feel like I am constantly cooking and everyone is constantly eating... so these ham leftovers will make some good lunches!), potatoes au gratin, asparagus and glazed carrots. And I'm going to make a homemade bread with my one remaining packet of yeast. Chocolate cake for dessert!

I am doing this two sheet pan dinner, except I didn't want to do a grocery run for asparagus, so will sub cauliflower that I already have. It just two of us, so will cut back on amounts. DH peeled and sliced the potatoes for me already, I prepped the veggies. We made a small carrot cake, and cream cheese frosting. Have a bottle of rose chilling. I ordered a ham when I did grocery pick up and they gave us a huge one! I was planning to use my Instant pot for the ham, but this thing is way too big. I will bake the ham in the oven instead. We usually do a hash brown casserole but I didn’t get the ingredients, so I think I will do some hassleback potatoes. I will also make some of the asparagus and green beans for veggies. I making an Oreo cheesecake for dessert today so it’s ready for dinner tomorrow. Are you sure that you will need an Instant pot for the ham? They are fully cooked / smoked, so the ham just needs a quick reheat in the oven, perhaps with a brown sugar glaze on it. Oreo cheesecake is yummy.
