My mom used to make anadama bread .
Apparently the old tale is that Anna was a fisherman’s wife who fed her beau little more than cornmeal porridge sweetened with molasses. One day, so the story goes, the fisherman came home, added some flour and yeast to the mush and tossed it in the oven to make bread – all the while muttering, “Anna, damn her!”
Anadama Bread Recipe Prep time: 40 minutesCook time: 50 minutesYield: Makes 2 loaves The dough is very sticky and is not kneadable; just spoon it into the loaf pans. It will also take some time to rise properly – sometimes 3-4 hours. Just give it time, it’ll rise. INGREDIENTS 1/2 cup cornmeal 2 cups water 1/2 cup molasses 3 Tbsp butter (at room temperature) 1 Tbsp salt 1/2 cup warm water 1 package dry yeast 4 1/2 cups bread flour
1 Place the cornmeal in a large bowl. Boil the two cups of water and pour the hot water into the cornmeal, stirring constantly to prevent lumps. Let sit for 30 minutes. 2 Add the molasses, salt and butter and stir to combine. The cornmeal water should still be warm enough to melt the room temperature butter. 3 Put 1/2 cup of warm water (slightly warmer than body temperature) into a small bowl. Sprinkle the yeast over the water and let sit for a few minutes. Then stir it to gently combine. Let sit for another 5 minutes. 4 Add the yeast and the water to the bowl with the cornmeal and everything else, and mix to combine. Add the bread flour, a cup at a time, stirring after each addition. You will end up with something of a gloopy mess. 5 Butter a couple of 5x9 loaf pans. Spoon the dough mixture into the pans as best you can; it’ll be sticky. Cover with a tea towel and let rise for several hours, until it doubles in size. 6 Heat the oven to 350°F and bake the breads for 45-50 minutes, or until a skewer or knife blade comes out clean. Let the loaves cool for a few minutes, then turn them out onto racks to continue cooling.

I used to live in Taiwan, and there was this bakery that sold some kind of rye bread, that had bacon and chunks of a mild white cheese inside.
It was the best thing I ever ate.
Has anyone ever seen a recipe or had bread like it? I am dying to make it. I will probably just experiment myself but I have always looked for a recipe for some guidance.

Love, love, love bread baking. If it wasn’t for the fact that I gain several pounds just by sniffing freshly baked goods, I’d do it more frequently. I don’t know if I got this from the Great British Bake Off or just from someone’s blog, but I have a recipe for the Estonian Kringle which is really a plaited cinnamon roll. I add nuts for texture. This is fun to bake and quite delicious. There are many recipes for this online. This pic was from 2016 (?) when I first tried it.

My aunt makes a similar bread with a starter made from instant potato flakes, yeast, and sugar. It makes the best bread. She also adds two eggs and makes dinner rolls, cinnamon rolls, and cream cheese Danish with the dough. I have the ingredients and am going to make this soon. i am now making the sweet sourdough bread with the potato flake starter. it isn't hard, but you but it kind of takes a while with the slow rise and all.

My favorite new-ish recipe (discovered it at Christmas time) is this one for Cranberry-Orange rolls. You can adapt the recipe to make it as Apple-Cinnamon rolls instead, but we prefer the Cranberry-Orange ones: Cranberry-Orange Breakfast Buns recipe. I make the dough in my Kitchen Aid, and then roll it and shape it by hand. We also like Smitten Kitchen's pizza dough recipe. I have several bread-machine recipe books, and we have several favorites that we use in the bread machine too. I'll look up our faves and post them too. Definitely going to try some of the bread recipes that have already been posted. Mmmmmm. ETA: Here is a picture of one of my Cranberry-Orange rolls - ok, well it's half-eaten, but still...

Feeding the starter and letting it grow for a few days really increases the yeastiness and adds a depth of flavor. It calls for all purpose flour, but a hard wheat higher protein AP flour works better.I have made the mistake of using White Lily soft wheat flour, and I had to add 5 lbs of flour to get the dough firm enough to work with, and the resulting bread was hard as a rock. I like to divide the recipe and make one loaf for toast and make cinnamon rolls with the rest. Smear softened butter on the rolled out dough, and sprinkle with cinnamon sugar. Or brown sugar and cinnamon and nuts. A little cardamom is also good in the cinnamon, and get the good cinnamon. Penzey's has a big bag for $8. I recently rediscovered Quatre Épices which is a French spice mix used for baked goods like Pain d'épices, which is a honey spice quick bread. For baking the mix is made of ground ginger, nutmeg, cinnamon, and cloves. For savory dishes white pepper is often used instead of nutmeg or cloves. Some recipes for the pain d'épices also adds cardamom and even star anise, like this one. I want to make breakfast rolls with these spice blends. The original Pain d'épices is a recipe from Chocolate and Zucchini blog and cookbook author Clothilde Dusoulier (it's from her Chocolate and Zucchini cookbook, so I linked the recipe from another blog.)

I have always loved baking bread, but have gone in spurts of doing it and then taking long breaks. Right now we are baking A LOT lol. Fabulous Homemade Bread This is what I use if I want to make 6 loaves at once. I use more whole wheat flour and less white flour than what the recipe states - at least 1/2 whole wheat. Usually I make cinnamon bread with one or two of the loaves. The kids love it for breakfast and it's a healthier treat. This dough also makes good rolls. Bread Beckers whole wheat bread machine recipe I am making this most of the time right now. I got a newer bread machine after Christmas and it makes amazing bread. My kids especially love how soft the crust is. I don't have room on my counters to leave it out, so I will make 3-4 loaves over a 2 day period and put it away. We are going to try this dough for cinnamon rolls some time. Back of the Bag Oatmeal Bread - This is one I am wanting to try soon! I also got a Pullman pan after Christmas but haven't really had a chance to play with it yet. I will post pics if I can get a decent loaf.

Great recipes shared, everyone! I can't wait until I can stock up on yeast again. LOL I used to buy it by the jar, but since most of my kids are out of the house, I wasn't baking bread as often, so I just bought packets of it as I needed it. Who knew there would be a shortage.

When I lived in Detroit, my husband and I would eat at this Lebanese pita cafe that made fresh Toum to serve with the hot, fresh pita and fire grilled vegetables that they served with every meal. We’ e been making at least one loaf per day in the bread machine for the past 2 weeks. I don’t think that counts though. Of course it counts, elaine! It's homemade bread, right? I love whole grain bread, but I've never tried to make it. Thanks for sharing the recipe!

I make these rolls every week for DH. He eats them with jam for a snack and has some with each meal. This Japanese Milk Bread was really interesting to make and tastes good. And I really like these rosemary rolls. I make them with dill sometimes too. They made good turkey burger buns.
I used up one of my jars of yeast the other weekend and felt like I was using gold! lol Who would have thought that yeast would be so hard to find.

I tried brioche bread for the first time Easter weekend to have french toast, and it came out beautifully! This recipe: www.aline-made.com/brioche-recipe/The way you fold the little loaves, it comes out looking so nice, all fluffed up over the pan. It takes an overnight, so I started it Friday evening and baked Saturday by noonish, just like she recommends. I thought when I took it out in the morning, it seemed like it got too much moisture in it, I didn't think it would work. But the second rise in the pan came out nice then it just puffed up during baking too. Very tasty! I was trying to conserve eggs and needed yolks for another recipe, so I only used an egg white for the outer wash and that was just right. I thought we would use half and freeze half, but nope...we ate it all.

[/quote] Buy extra bags of cranberries in the fall and freeze them. You don't have to do anything to them, just toss them in the freezer as is. It's always nice to have them when you get the craving!

As a freshman in high school my parents moved to a remote island in Alaska. We had no stores and took a float plane to grocery shop every 4-5 months. My job was to make bread every morning. I make a good loaf, but I don't particularly enjoy doing it. Anyway, on one of the grocery trips, I was given an empty case box of Rice Krispies to fill up with all the fun cereal my brother sister and I wanted. The groceries got loaded on to the plane and off we went. We got home and mom said we could have cereal for dinner. We were so stoked, because for about a week we would have cereal with fresh milk instead of powdered. We opened the big ass box of cereal to find that a mistake had been made. We had 24 family-sized boxes of Rice Krispies. I think we all cried. In an effort to get rid of those Rice Krispies, I started adding them to cookies for an extra bit of crunch. Then I started adding them to my bread. The first day my dad's co-workers were cracking up, everyone could hear him crunching away. We all got used to our crunchy bread, but when I think back on it, I still giggle. And I'm still not mad about Rice Krispies. So, there you go, a way to be more adventurous in bread making. 😁 you always have the best stories, I swear
