I love making bread. For the longest time, I was scared of any recipe that contained yeast, then years ago I saw Pioneer Woman's cinnamon roll recipe and decided to just try it. Now, I love making bread. I have a Kitchen Aid that I sometimes use to make the dough, but I really prefer to do it with my hands. It is a good stress reliever for me, and people think I am nuts.
I thought we could share our favorite recipes and maybe also share something we want to try that is new. While I love to make bread, I tend to not be very adventurous. This is the recipe I make the most--I've been making it for years, and I don't even need to look at the recipe anymore. I have also made it with dill instead of the Rosemary, and that is good too. Sometimes, I add in garlic powder. I feel like it is a pretty versatile bread recipe.
I have recently been making this focaccia bread, and I love it, too.
The past couple of weeks, I have been watching The Great British Baking Show, and have seen some breads that look intriguing, and challenging, that I would like to try when yeast is abundantly available. I would hate to waste the precious yeast I have and then have something not turn out. LOL This is the first one I would love to try: Kouign Amann
Anyone else want to share their favorite bread recipes, or something challenging you have mastered?
My husbands makes bread for stress relief as well. I'm going to see if he will make that!

I love it when the house smells like bread! I have mostly made my mom's white bread recipe. It has eggs and butter in it and it is to die for! I'll find the recipe in the morning. Please do share your recipe. I too [img src=" "] the smell of baking bread. It's one of my favorite things about making it. LOL Mom's White Bread I make four loaves at a time, but you might not want that much, so I'll give ingredients for 1 loaf. 1 3/4 cups warm water 1 pkt yeast 2 T sugar 1/4 c. dry milk powder 1 large egg, room temperature 3 T butter, room temperature 1 1/4 tsp salt 4-5 cups flour or more, depending on humidity Dissolve yeast in water with sugar. Let sit until bubbly or foamy. If you are using instant yeast, you don't need to do this, just add the yeast with the flour. Add milk powder, eggs, butter and salt and 2-3 cups of flour to the yeast and water in a stand mixer (or mix by hand). Stir until well combined. Add another cup of flour and knead using dough hook. Continue adding flour in small amounts until the dough comes away from the sides of the bowl. Let this knead for about 5 minutes. If doing by hand you'll need to knead for 8-10 minutes. The dough should be smooth and elastic. Prepare a bowl with some oil, and shape your dough into a ball. Put it in the bowl and push it around to coat the sides of the bowl, then flip it over. Cover with plastic wrap and let rise in a warm place for about an hour or until double. Punch down the dough gently and shape it into a loaf. Place it in a greased loaf pan and cover with plastic wrap. I spray the top of the dough with Pam so the plastic won't stick. Let rise until it puffs above the rim of the baking pan and is generally double in size. Preheat your oven to 400F while it's rising. Remove the plastic wrap and place in the oven on one of the lower racks for 30-35 minutes. An instant read thermometer should read 195F when done. Enjoy! Edited to add the dry milk powder I forgot to put in the ingredients!

my go to recipe is a variation of the artisan bread in 5 minutes a day. i started using "first clear" flour and bread flour, mixing it with rye or spelt, or whole wheat, or a little bit of each. in my experience, the bread just doesn't taste good anymore after a day if i only use regular all purpose flour. in addition, i add Brotgewürz, a mix of equal parts of the following four spices: anis, fennel, coriander and caraway seeds. it is a mix of spices that is widely used in the region of germany that i come from. and it is soooooooo good!
i have experimented with sourdough and making my own sourdough starter, but have never been really successful. also, i don't mind using yeast (i usually just buy active dry yeast, as opposed to fresh yeast, which is ridiculously expensive here), and i get great results with it.
thanks for all the great recipes. now i want to bake!

I just made my first loaf of sourdough and it was delish! I think I want to try this next. I'm worried though because I also have a hard time finding flour, and right now, I have less than a full bag. I think my sourdough recipe called for 3 cups. Check out breadtopia.com

I am going to start some sourdough starter tonight anyway because now, I am intrigued by it. I'll let you all know how it turns out.

If you want to start a sourdough starter and are worried about using too much flour, there is a recipe for a small starter. You would just need to feed it multiple times in the 24 hours prior to using it if your recipe calls for more than a cup of starter.

My family loves this recipe for Amish White Bread - Allrecipes It’s pretty foolproof for beginners as long as you have the water the right temperature to get the yeast going. It tastes very similar to Kings Hawaiian Rolls.

I make a kouign amann with a short cut recipe I got off Pinterest using frozen puff pastry that is delicious. Very easy and doesn’t take days. Tastes very close to the original.

I have a loaf of Buckwheat Sourdough going in the bread machine right now. I’ve never used buckwheat in bread yet. I also got in my high gluten King Arthur flour today, so am happy to be trying that rather than adding gluten to my breads.

SCORE!!! I found a 20 lb bag of AP KA Flour at Costco today. I was halfway through my last 5-lb bag. Using my bread machine has been the highlight of this entire ordeal. I'm so glad I didn't give it away when I was cleaning out the basement in January.
LOL, I hit the lottery today at Costco, because I also got a 5-pack of Clorox wipes.

I made pita bread for the first time yesterday. Most of them turned out with that lovely pocket, but for some reason, 2 of the 8 stayed flat. They all tasted good, though. And we made gyros out of them, so we just folded the bread like tacos.
They turned out soooo good. I've never made gyros but I will be again. I didn't use lamb...couldn't find it. I just sliced some steaks really thin, marinated them in a mixture of garlic, olive oil, lemon and salt and cooked them in my iron skillet. I accidentally made way too much tzatziki, so I need to find something else to do with it. I have ground turkey that I will probably make some burgers out of, and it will be good on that.
Oh, I started some sourdough starter a few days ago, and so far, it is looking good. I can't wait to make sourdough bread. In the meantime, I've been saving the discard, and I am going to use it to make waffles tomorrow.
Anyone else baked anything this weekend?

If you have a TJ’s, you can buy Gyro meat from them. Your pitas sound great! I made a heavenly loaf of pumpernickel in the bread machine last night.

I’m super excited - a shop in the next town over has a gal in every so often to teach a class. And on her site she sells a dehydrated sourdough starter. She also has a full kit with all the fun gadgets, but is sold out of everything but the starter.
So I ordered the starter from her that comes with recipes and instructions to get it going, and then hit Amazon and ordered a set of the proofing baskets and a lame for cutting the tops all pretty.
Can’t wait!

I made another loaf of sourdough today. Will use the last of last week's loaf for french toast tomorrow morning, and then we'll have this loaf for the week.
Ever since I figured out (thanks, Google) the ACTUAL temperature of "lukewarm" water, my sourdough starter has really kicked into gear! I'll probably make another loaf tomorrow to drop off at my parents'.

I've been making a variation of Jim Lahey's no knead bread recently. It's so easy and so good. The recipe only calls for 1/4 tsp. of yeast because of the long, slow rise. My house is always chilly so I mix the dough one day and bake (in my cast iron dutch oven) the next. I just made a loaf of bread in the bread machine using chickpea flour and condensed goat milk - it also had a touch of cinnamon. It is delicious!
