I love making bread. For the longest time, I was scared of any recipe that contained yeast, then years ago I saw Pioneer Woman's cinnamon roll recipe and decided to just try it. Now, I love making bread. I have a Kitchen Aid that I sometimes use to make the dough, but I really prefer to do it with my hands. It is a good stress reliever for me, and people think I am nuts.
I thought we could share our favorite recipes and maybe also share something we want to try that is new. While I love to make bread, I tend to not be very adventurous. This is the recipe I make the most--I've been making it for years, and I don't even need to look at the recipe anymore. I have also made it with dill instead of the Rosemary, and that is good too. Sometimes, I add in garlic powder. I feel like it is a pretty versatile bread recipe.
I have recently been making this focaccia bread, and I love it, too.
The past couple of weeks, I have been watching The Great British Baking Show, and have seen some breads that look intriguing, and challenging, that I would like to try when yeast is abundantly available. I would hate to waste the precious yeast I have and then have something not turn out. LOL This is the first one I would love to try: Kouign Amann
Anyone else want to share their favorite bread recipes, or something challenging you have mastered?

Well when I made bread, I made dozens of loaves at the same time.
Do you think I can do that now!?!
I have a ladder out and can get into the box that I store those recipes in if somebody wants it.

I bake whole grain sandwich bread every week, but I had been wanting to learn how to make a good French bread loaf without taking all day. I started using this recipe Mel's French bread a couple of months ago and we love it! There is only the two of us at home now, so I usually make a batch and cut the loaf in half and freeze half. In addition to gobbling it down with soup, it makes really good French toast and garlic bread.

This morning I was watching an episode of the British Baking Show, and it was bread week. The first day, they had to make 2 kinds of flatbreads, one with yeast and one without, and one of the contestants was baking one of his on a bed of river rocks. Not on a pan, the breads were just laying on the rocks in the oven. I am intrigued by that.

As a freshman in high school my parents moved to a remote island in Alaska. We had no stores and took a float plane to grocery shop every 4-5 months.
My job was to make bread every morning. I make a good loaf, but I don't particularly enjoy doing it.
Anyway, on one of the grocery trips, I was given an empty case box of Rice Krispies to fill up with all the fun cereal my brother sister and I wanted. The groceries got loaded on to the plane and off we went. We got home and mom said we could have cereal for dinner. We were so stoked, because for about a week we would have cereal with fresh milk instead of powdered. We opened the big ass box of cereal to find that a mistake had been made. We had 24 family-sized boxes of Rice Krispies. I think we all cried.
In an effort to get rid of those Rice Krispies, I started adding them to cookies for an extra bit of crunch. Then I started adding them to my bread. The first day my dad's co-workers were cracking up, everyone could hear him crunching away. We all got used to our crunchy bread, but when I think back on it, I still giggle. And I'm still not mad about Rice Krispies.
So, there you go, a way to be more adventurous in bread making. 😁

I can just about produce a satisfactory white bread...but it’s dull and not particularly wonderful to taste. I’ll be looking to see what I can do in a simple, foolproof way to improve my results 😊

my dad has lots of allergies to food, and in the 1950's and 60's, you couldn't get the good bread you can buy today. so I grew up watching my mom make bread once a week? or so... and I don't remember eating much bread at all.. every baked good had to be made at home and I started doing all the desserts every day at age 9. (we had one every night).. so though I didn't make the bread I watched, and have found it easy to make yeast rolls, bread, etc. it is a lot of work to make every meal at home and to make everything!!!! we never got to go to potlucks or dinners out.
mom had strong arms!!!

Maritime Brown Bread
1-1/2 cups warm water 1/4 cup skim milk powder 1-1/2 tsp salt 1/4 cup packed brown sugar 2 Tbsp molasses 2 Tbsp shortening 2-1/2 cups whole wheat flour 1-1/2 cups bread flour 1-1/4 tsp yeast
(You can also use real milk instead of powder, just substitute some water with milk)
In bread machine: add water, milk, salt, sugar, shortening and molasses. Then add flours and yeast. Select dough cycle. Put in pan and let rise for 1/2 hour. Bake at 350 for 30 minutes.
You can also make it without the bread machine. I make the dough in my Kitchenaid mixer.

On one of the other seasons, one of the technical challenges actually has the contestants go outside and cook flatbread on stones and an open fire. They were down to maybe 5-6 contestants by that week, so it wasn’t too many people out on the lawn. I would have failed miserably!

malibou, that was the best story of the week. I can just imagine the anticipation of opening the cereal box expecting to find 24 boxes of sugary goodness, only to be confronted with 24 boxes of Rice Krispies. You certainly made lemonade out of lemons, or crunchy bread out of Krispies.

I bake whole grain sandwich bread every week Could you share your recipe for this? My fam hates my "wheaty" bread. Sure. This is adapted for my bread machine (I don't bake it in the machine, just mix it), but you could make it in the KitchenAid or by hand, I think.
Whole Grain Bread
12 oz water (approx.) 1 3/4 tsp salt 2 tbsp oil (I prefer olive oil) 2 tbsp sugar 2 tbsp dry milk 4 c whole grain flour (we like about equal parts oat flour, whole wheat flour and rye flour) 4 tbsp vital wheat gluten 1 tbsp, slightly heaping yeast (both active dry and instant yeast work well)
I add the ingredients in this order to my bread machine. To avoid the bread being too dry, put the vital wheat gluten into the measuring cup before measuring the first cup of flour. Because of the high whole grain content, this takes a while to knead and a while to rise. The dough should be slightly sticky when it's mixed. I let the first rise go in the machine. Then, I form the loaf or loaves (we prefer slightly smaller loaves so I usually make two 8 inch loaves with this recipe.) The second rise takes quite a while in my cool house, so I sometimes preheat the oven to 350 for two minutes, then turn the oven back off. I put the loaves in to rise. When they're nearly fully risen, I carefully take them out of the oven and then preheat it again to 350. When it's hot, I put them back in for 20-25 minutes.
I hope this works for you! In my experience, whole grain bread needs that extra vital wheat gluten in order to rise enough that it's not like a brick. lol. Making sure there is enough liquid helps, too.

We’ e been making at least one loaf per day in the bread machine for the past 2 weeks. I don’t think that counts though.
Ds has a loaf of French bread baking in it right now.

Panera Bread has a pastry called Brittany that is Kouign Amann. You can get a box of 4, two have sweetened sour cherries, and the other two have a dollop of cheesecake filling on top. They are so good, but they don't have them all the time. I mix the cheesecake and cherries together. The toppings are generous, so they're enough to top all 4. My husband and I split them. I have been wanting to try them at home. I have baked a little ramekin of cheesecake filling in a baine marie and topped toasted croissants with a schmear of cheesecake and some sweetened sour cherries made from Oregon tinned sour cherries.

Love this thread and love the Rice Krispies story! I owned a bread machine about 20 years ago and only used it once or twice. Bread is inexpensive enough that I just couldn't get into making my own. Now that I have a little more time on my hands, I thought I'd give it a try again, but I admit that I am still struggling with the idea of putting in the effort vs. running to the Safeway bakery less than 5 minutes away to buy a loaf! LOL I was recently inspired by a woman I follow on IG. She baked Bolilos, and they looked so good! She also made it look so easy. I am going to try making those and also Hokkaido Milk Bread!
Questions for all of you:
1) What do you enjoy about baking your own bread? 2) Do you always use bread flour?

My aunt makes a similar bread with a starter made from instant potato flakes, yeast, and sugar. It makes the best bread. She also adds two eggs and makes dinner rolls, cinnamon rolls, and cream cheese Danish with the dough. I have the ingredients and am going to make this soon.

When I lived in Detroit, my husband and I would eat at this Lebanese pita cafe that made fresh Toum to serve with the hot, fresh pita and fire grilled vegetables that they served with every meal. Sooo good.

My mom had a bread machine for many years. I bought one in early April and finally got yeast and bread flour. So far, I have made 2 loaves- the first one, I used oil. The second one, I used butter. We liked the butter better.
