Pickled eggs
If I were you I'd cut up the ham and cook it in the scalloped potatoes. And homemade scalloped potatoes aren't that hard- just a lot of slicing with a mandoline slicer.
I don't need a chunk of meat with my holiday meal but I know there are a lot of people that insist on it.
I'm going to roast some kind of vegetable. I know roasting vegetables is more of a fall/winter thing but I like them better and it is so easy.

Buy a spiral sliced ham and their premade au gratin potatoes. Add a salad or veg, plus rolls and call it good.
I love Costco's spiral slices ham, but I never use the glaze. I think it's too sweet,.

Love it that you say overcooked and dry ham.... thats exactly what we are also having at my mother in laws... plus no seasonings because dfil has heart issues... so no salt means no nothing!!

I prefer Easter dinner to be more picnic-ish.
Ham sandwiches (made on yeast rolls), potato salad, deviled eggs, baked beans. Kids prefer wavy potato chips and onion dip, LOL.
We also have some type of jello salad and dessert is cake (carrot or coconut) and sugar cookies (NOT those nasty store bought iced abominations).

We are going to Maggiano's om Saturday and will have plenty of leftovers for Easter.
But, if I were having Easter dinner it would be: -Ham spiral sliced, which is meant to be served room temperature and therefore wouldnt be dry. -Cheesy Potatoes (I make mine from scratch) or Macaroni and Cheese or my mom's scalloped potatoes. I really need to learn to make her recipe as she doesnt make them any more. -Pineapple Casserole -Green Bean Casserole for dh -Corn or Steamed Broccoli -Rolls -Relish Tray of pickles and olives -Deviled Eggs, either traditional or Bleu Cheese -Pie for dessert from an awesome local pie shop.

Our Easter lunch is traditionally roast leg of lamb with standard roast vegetables, something green and gravy. Nothing fancy, because roast Sunday lunch doesn’t have to be fancy to be good.

Glazed ham, homemade Mac n cheese, brisket for the boys that don’t want the ham, deviled eggs, homemade crescent roll, corn on the cob, and a charcuterie board for snacking which will cover breakfast, lunch etc until dinner which will include the deviled eggs, cheese, crackers, bread sticks, cheesy palmiers and sweet palmiers, mini blueberry muffins, mini banana muffins, chips, dips, etc.

My kids hate the traditional Slovak foods for Easter. I don’t love them but they’re nostalgic.
I’ll probably get a small ham and then dh &I can eat it later in the week.
Roasted asparagus and baked beans. Twice baked potatoes Deviled eggs made by sil
My friends and I are decorating sugar cookies Thursday night.
Either carrot cake or coconut cake.
That’s all I have so far but I wouldn’t be opposed to a brunch menu.

Our Easter dinner menu hasn't changed much over the years. It's all pretty standard but still enjoyable. We're having baked ham, scalloped potatoes, deviled eggs, roasted asparagus, baked beans, orange fluff, dinner rolls, carrot cake, and for the chocolate lovers, Earthquake cake. I sometimes add a fresh fruit tray with strawberries, melons, pineapple and grapes but I may not do that this year.

Most hams are precooked, so I would think that if one's ham is dry, that they are over cooking it. We are going non-traditional with Chinese. But if we were doing taditional we would definitley have carrot and or coconut cake for dessert. Sides would be scalloped or au gratin potatoes, broccoli salad, corn and homemade dilly dinner rolls. Dilly RollsRecipe: Broccoli Salad Servings: 8 – 12 From: 2 Cup Frozen Peas 2 Cup Fresh Chopped Broccoli 2 Cup Roasted Sunflower Seeds 2 Cup Raisins/Craisins 1 Cup Chopped Red Onion 15-20 Slices Bacon, Cooked and Crumbled Mix together just before serving. 2 Cup Miracle Whip 4 Tbsp Vinegar 1 Cup Sugar (or Sugar Substitute based on the conversion for product being used) Add Dressing and Mix Well. For Smaller Salad, Cut All Ingredients in Half.

I dread Easter dinners. It's such a farce to me. My mom was a holiday church goer at best and often only went to keep the peace with her parents. Dad got to skip and kids were dragged along. I don't even believe. Add in the fact that the food was mediocre. The only thing I liked was the deviled eggs.
SIL is making chicken piccata. Decent enough dish but I never had hers so we'll see.
What qualifies as Easter food? Peeps and deviled eggs?

Honey baked ham served at room temperature (not warmed in oven), Mashed potatoes, Deviled eggs, green bean bundles, marinated vegetables, pineapple casserole, broccoli casserole, Sandra’s corn (recipe from sister-in-law, Sandra), strawberries with fruit dip, coconut cake,
Here is the recipe I use for pineapple casserole (different from Neisey’s) oops it was Littlemama that shared her pineapple casserole recipe. Pineapple Casserole Preheat oven to 350 2 15 oz cans pineapple chunks 1 cup shredded sharp cheddar cheese 1/2 cup sugar 3 tablespoons all purpose flour 28 Ritz crackers, crushed 1/4 cup melted butter Drain pineapple and place in 2 quart casserole dish Mix cheese, sugar, and flour and sprinkle over pineapple. Top with crackers. Drizzle with melted butter. Bake 20 minutes at 350 degrees
Sandra’s Corn Preheat oven to 350 2 cans shoe peg corn, drained 1/2 pint whipping cream 2 Tablespoons flour Mix whipping cream and flour together and pour over corn. Dot with butter. Cover and bake 20 minutes at 350.
Green Bean Bundles Preheat oven to 350 3 15 oz cans whole green beans 1 pound bacon 1 cup brown sugar 1/2 cup apple cider vinegar Salt and pepper to taste Put 8 to 10 beans together in a bundle and wrap with 1/2 strip of bacon. Secure with a toothpick. Place bundles in casserole dish. Mix brown sugar, vinegar and seasonings together. Pour over beans and bake about 50 minutes at 350 degrees.
Marinated Vegetables 3/4 cup white vinegar 1/2 cup cooking oil 1 cup sugar 1 teaspoon salt 1 teaspoon black pepper 1 TBS water 1 16 oz can green peas 1 16 oz can cut green beans 1 16 oz can whole kernel corn (I use a can of mixed yellow and white corn) 1 cup finely chopped green bell pepper 1 cup chopped onion 1 cup chopped celery 1 jar (4 oz) chopped pimentos Bring to a boil the vinegar, oil, sugar, salt and pepper, and water. Remove from heat and allow to cool. Drain peas, beans and corn. Add to green pepper, Onion, celery and pimentos and mix well. Pour cooled mixture over the vegetables and stir. Marinate in refrigerator at least 4 hours but preferably overnight. Use slotted spoon to serve.

We are having steak, garlic shrimp, twice baked potatoes, sauteed mushrooms and garlic green bean. Carrot cake and strawberry rhubarb pie. Not traditional but dd is coming home and that was her request. Family likes it better than ham or lamb so we just go with it.
