I have two chuck roasts in my freezer that I would like to use, but my kids are not a fan of traditional pot roast.
Does anyone have a recipe that uses a chuck roast that isn’t traditional pot roast?

I would cut it up and make a beef stew! There are many recipes online ... my fav website is allrecipes.com

Mississippi roast is a little different from a regular pot roast. (Don’t have a recipe at my fingertips, but google Mississippi roast.
Or cook it all day in the crock pot with a can of Coke or root beer (not diet!), then pour off the excess liquid, shred the meat, and stir in barbecue sauce to taste. Serve on sandwich rolls.
Best of all, Italian beef. It should be on the recipe board, but if not, I can find the recipe for you. Can be served over mashed potatoes, noodles, or on sandwich rolls or buns.

I take a chuck roast and cut it into 3 or 4 big chunks, then brown them in a little oil. Once it is brown I cover the pieces with water and add a beef bullion cube for each cup of water. You don't need salt with the bullion cubes. I also add a teaspoon or so of cumin. Boil the meat for a couple of hours until it is tender, adding more water if it gets low. When it is tender and falling apart take the meat out and put it into a pan and shred it with a fork. Pour all of the left over water over the shredded beef and put it in the oven at about 350-400 degrees. Bake it until all the water is gone and the meat is brown with crunchy bits. Stir it around occasionally while in the oven so it browns all over. It is delish! I use it for roast beef sandwiches, tacos, burritos, over noodles or mashed potatoes with some gravy or sour cream for hot roast beef sandwiches etc. I do the exact same thing with a pork roast. So good. ETA: lucyg reminded me it makes great barbecue beef sandwiches.

Thank you for the great recipe ideas! I’ve added beef stew, Dr. Pepper bbq beef sandwiches, and the oven roasted beef to my list for the next few weeks!

We had Korean Beef in the slow cooker for dinner tonight using a chuck roast. Delicious!!

Burning Feather's Italian beef!
Serve on a sub roll or some type of bread/bun with sauteed peppers and onions and provolone or mozzarella cheese. Bake until cheese melted.
It has become our family's Christmas dinner tradition.

leannec suggested what I was going to! Our grocery store had a deal this week that if you bought a roast, you got mini potatoes, carrots, and broth for free; we added onions and celery. Also, if you decide to make the roast as just roast... I'm happy to help make sure it's eaten. I love roast. 😁

I don't think I have tried the Italian beef recipe I think I may have to try this. I have a couple in the freezer and as much as I love a Mississippi Pot roast I want something different so I am bookmarking this thread.

I love roast. 😁 I LOVE pot roast and would happily make it once a month, but our kids just don’t love it. They will eat it, but I know they would rather have something else. The recipe suggestions on this post all sounds so good and I think my kids will like them more than traditional pot roast. I knew the Peas would have great suggestions!
